Today’s mid-day meal included a big ol’ salad, composed of:
- Butter lettuce
- Celery
- Tomatoes
- Carrots
- Leftover sausage
- Balsamic vinaigrette dressing
A cup of plain Greek yogurt with a scoop of grape jelly rounded out my meal.

I am actually a college student and eat hot oats most mornings, but am really interested/ excited to try cold overnight oats this summer when the weather gets nicer….the addition of chia seeds to my overnight oats would be amazing, also I liked your suggestion to put them in salads, add a little crunch and some extra health benefits to lunch or dinner could also be extremely beneficial to my diet!

You have some great marketing skills :)Needless to say, I saw them when I made a recent trip to whole foods and I decided to snag a bag. I’m in love! I actually only tried chia seeds for the first time about a month ago, but like you, I’m now hooked! Although they’re great in overnight oats or as chia pudding, I’d say my favorite way to enjoy their ‘crunch’ is sprinkled on some chewy bread with nut butter, banana, and granola!
