Hey, hey!
This morning I brought back an old favorite for breakfast.
In the past I’ve made chocolate chia seed pudding, but last night I wanted to try my hand at honey almond chia seed pudding and made a batch with chia seeds, almond milk, honey and a pinch or two of oats to give it a little bit of that overnight oats flare.
I didn’t measure everything, but I hope to next time because I have a feeling that those of you who adore chia seeds and chewy textures as much as I do would love this dish.
I topped my chia seed pudding with a sliced banana and fresh strawberries and raspberries.
Chia seed pudding on its own isn’t much to look at, but fresh berries sure do amp up its visual appeal.
Workout
Today’s workout was another LiveFit workout that focused on my back and biceps.
I think that working out my back is so darn boring. I feel like time basically stops whenever I do back workouts. They seem to take forever. I don’t hate working out my back or anything, but back workouts like the one in the LiveFit program that I did today are simply dull.
I prefer back workouts like the back track in BodyPump classes – nice and fast-paced and energetic. Doing several sets of 12 repetitions of back exercises is mind-numbing for this girl.
I’m keeping things short around here this morning because I’m meeting up with a friend for coffee in 15 minutes and gotta jet!
See ya for lunch!
P.S. I have the opportunity to interview Ellie Krieger today, so if you have any questions you’d like me to ask her, please let me know!
christina says
Whenever I hear Chia I always think of the chia pet commercial. 🙂 That looks delicious!
Laurel says
back workouts=boring…but very important…I’m the first commenter! Have a great day JEBFPBF!
Laurel says
bust…not the first.
Caroline @ After Dinner Dance says
I’ve always just done chocolate chia pudding too – that sounds delicious though! I may have to play with measurements and try it myself 🙂
Stephanie @ Legally Blinde says
Ooh, I’d love to have your recipe for the chia seed pudding! I’ve been in a breakfast rut lately and totally forgot about chia seed pudding. Sounds like a great alternative to my daily bowl of fruit + yogurt lately. Enjoy coffee with your friend!
Katie @ Katie Moves says
Chia seeds make the think of chia pets 🙂 but I need to try them soon to see what the hype is! I agree, I love body pump lifting too cause it keeps me
Interested! Boring sets and reps make it seem to take forever!!
Hope @ With A Side Of Hope says
I’ve never had chia seeds before. Are they really noticeable when eating? I don’t know if I would like the texture.
Millie Snyder says
I’ve never had chia seeds before either. In fact, I’ve never even heard of them! I am wondering if the texture of chia would be similar to that of steel cut oats? I love trying out new grains and textures for breakfast. I would like to try this infused with vanilla and cinnamon.
Shar says
Question for Ellie: how does she feel about the Primal or low-carb diets?
Tessa says
I have wondering if I am getting enough protein in my diet. I don’t eat meat that often. I think a good question for Ellie would be, “How much protein should the average woman intake on a weekly basis” or something along those lines!
Angela @ Eat Spin Run Repeat says
Oooh very exciting about the interview! I love Ellie and her recipes are fantastic. Can you ask her what products she uses in her skincare regime? I know that celebrities have a lot of makeup on when they’re on camera, but I’m pretty sure she has great skin without. I’d love to know what she uses – or if she attributes her glowing skin to a healthy diet!
Angela says
Ditto to this question! Ellie is beautiful and her skin just seems to glow. I’d love to know what her favorite “beauty foods” are. What an exciting opportunity! She seems like a great person. I can’t wait to read about it.
peanutbutterfingers says
she DOES have amazing skin!
Claire @ Live and Love to Eat says
Have fun chatting with Ellie – I love interviews with real nutrition professionals rather than Dr. Oz’s latest “guru”.
Khushboo says
Funny enough, my back is one of my favorite parts to work…biceps on the other hand are another story!!
Alex @ Healthy Life Happy Wife says
That looks delicious! I love fresh fruit in the morning!!
Michelle S. says
Question for Ellie: What are her go-to meals for hot summer days? Any grilling tips? Thanks, what a fun opportunity!
LeAnne says
Oh yes, please ask Ellie about her skincare regimen..she always looks glowing! And also, maybe you could ask her what her current workout regimen is like or if it has changed since spring/summer has begun. Thank you!
Debbie says
What a great opportunity! Have a great interview 🙂
Faith @ For the Health of It says
Chia pudding is awesome – but the texture definitely needs something to disguise some of the gloopiness!
Katie @ Peace Love & Oats says
Yes, I would love to hear the ratios you used for the pudding! And whether it was filling! I always have a problem with trying out new breakfasts that aren’t oats, and having them not being filling enough. Have fun at coffee and enjoy the interview!
joelle (on a pink typewriter) says
How fun re. the interview!
I still haven’t tried chia seeds.. the idea creeps me out a little bit. I just keep thinking of my friend’s chia pet when we were kids.
Abby @ Change of Pace says
Fresh berries do make everything look tasty!
Exciting interview! Good luck.
Lisa says
This morning I made a smoothie using the ingredients you used for your lunch smoothie yesterday. It was soo thick and creamy! I added a little granola to it and it was the perfect breakfast!!
On a different food note, I alwasy try to eat apples or carrots or nuts for my mini snack in between lunch and dinner but sometimes it’s easier to grab a bar or something when I’m on the go. What kinds of snack bars (like Kashi or Special K, etc.) do you eat or recommend to tide you over until your next meal?
peanutbutterfingers says
hi lisa! my favorite bars are luna bars. (the white chocolate macadamia nut is amaaaazing!)
Bethany says
I love Ellie!!! Please ask her if she will be taping any new shows??? I watch reruns all the time, but haven’t seen any new ones.
The chia seed pudding looks great! Please post recipe I would love to try it!
I would love to see more chia seed recipes!! Love your blog!
Yellow Haired Girl says
I feel the same way about back workouts. Borrrrrrrring.
Katie @ Talk Less, Say More says
Chia seed pudding sounds amazing! Good thing I just bought a bag of chia seeds and can try this out! 🙂
Dani @ Run Daniella Run says
I think I’ve stuck with running because I don’t get bored when I am running, if I am not in a group class I get waaay bored and totally just quit LOL. Good job sticking with it! Excited to hear about your interview! Should be good stuff 🙂
Ellie says
I LOVE ELLIE! How exciting (well I am also Ellie and I also will soon be an RD). Do you mind asking her about how she gets her message “out there”? Like what tips she has on promoting a healthy lifestyle? I don’t know if that really is a good question but I would like to know more about how she became “Ellie Krieger”
Michelle (Better with Berries) says
So cool that you’re interviewing Ellie today – I love her!
Kerry @ Totes My Oats says
As a future dietitian, I would love to know where Ellie Krieger completed her dietetic internship!
Sheila says
That looks so yummy! BTW why did you link to your old PBF post when talking about the LiveFit workout? I was hoping see the original source when you got the workout
peanutbutterfingers says
i link to my post about it b/c inevitably i get questions about whether or not i’m following it exactly, etc. and the initial post just gets it all out there as to why i’m doing the livefit workouts. i always link to the workout i did on the livefit website that day though… in the above post, my link to “back and biceps” takes you directly to the livefit site for the exact workout, so you can see the original source there.
Sheila says
Thanks! I guess I was just confused that the “Livefit” hyperlink led to your old post and the “back and biceps” one led to the actual workout. A little misleading lol
Geneva says
I would ask her what a typical day looks like, as in meals and workouts.
Liz @ IHeartVegetables says
Yummm!! I just talked my co-worker into buying chia seeds haha, and now she’s like “Well what else can I do with them?!” So I’ll have to send her this!!
Erica @ For the Sake of Cake says
The back track during BodyPump is one of my favorites!
Angie @hairbyangie says
I have never tried chia pudding before, but keep hearing about it…. I must give this a go. I agree about back workouts… I like for them to go very fast paced! How cool that you get to interview her… awesome!
Alysha @Shesontherun says
How exciting to interview Ellie! I’d love to get her tips for eating out at restaurants. I’ve been eating out a ton lately and want to make the healthiest choices possible.
Sarah @ RunningChickago.com says
I agree! I never know what to get! Once I got grilled fish tacos at Cheesecake Factory because I thought they would be a healthier option…but found out after they’re super fatty. Fail.
Lauren says
I love Ellie Krieger! She has some of the best recipes!
Laurie @ Love, Laugh, Laurie says
Love Ellie!! Enjoy!
Sarah @ RunningChickago.com says
Looks like a delicious breakfast! Gotta love fresh berries 🙂 I had some raspberries with my waffle sandwich today, and it’s definitely a great way to start the day 🙂
Joanna @ Midwestern Bite says
This was a nice reminder of things I can do with my chia seeds. A few too many may have poured out of the bulk bins when I was at the grocery….
Ellie@Fit for the Soul says
ooOOo I love Ellie Krieger! AND we have the same name~ 😉 Hmmm perhaps you can ask her if she aims to live an all-around healthy lifestyle? Like, besides eating healthfully, does she stay very active as well? (that might be an obvious Q, not sure.) And I haven’t actually made chia pudding although I eat loads of it everyday!
Beks says
I keep meaning to make chia pudding before bed so I have breakfast, but I always forget. Hopefully I can get it done tonight. It takes all of, what? Two seconds? 🙂
Kelsey says
I really like using greek yogurt as a base instead of chia pudding. I like all the protein!
Sarah says
Echoing a previous commenter–the back track during body pump is my favorite! I currently can’t do clean-and-presses because of a leg injury and it’s pretty heartbreaking.
Emily @ I'd Rather Walk says
I don’t mind back exercises, but I find it hard to isolate the muscles and really feel it where I SHOULD be feeling it. A work in progress, I guess.
Nathan says
Very solid on getting the interview. Nice work
Mary B. says
Julie– where do you buy your chia seeds? I normally shop at Safeway and I havent seen them there. I know we have different stores on the other coast but maybe if I knew what part of the store? I want to try them!
peanutbutterfingers says
do you have a whole foods near you? they sell them in the bulk bins! you can also buy them online through amazon.com for a decent price.
Kati Mora, MS, RD, Kellogg's FiberPlus(R) Wellness Advocate says
Love it! Strawberries and bananas are two of my favorite fiber-licious fruits – love to see them incorporated into dishes such as this.
Erin says
did you ever remake this? it looks delicious and i’d give it a try if i had some measurements 🙂
Caitlyn @ City and the Cubicle says
hey! did you ever happen to do the measurements for this? no worries if not! just thought i would check 🙂 i’m pretty novice so i need measurements haha.
