Check out some of the fruits of my labor…
Let’s just say a lot of cookie dough was consumed today.
When Ryan arrived home from work, I put away some of my kitchen projects and we hit up the grocery store to grab some food for the week.
Dinner
Once we were back from the grocery store, it was dinnertime!
Tonight’s dinner came together in a flash.
First I picked a protein in the form of al fresco all natural sun dried tomato chicken sausage.
Then a veggie in the form of roasted cauliflower.
And finally a carb + fat in the form of sweet potato fries!
The sweet potato fries stole the show. I baked them using a package of Alexia frozen sweet potato fries that I nabbed from my parents’ freezer yesterday.
Put ‘em all together and you get a colorful chicken sausage veggie bowl. Easy but effective and delicious!
Off to watch The Bachelorette!
Growing Pains Update
I know some of you were seeing PBF posts from Friday today and others weren’t seeing the photos at all. Hopefully the issues are 100 percent resolved! The blog was officially moved to a more powerful server which should make your experience on PBF much more enjoyable and seamless. All good things! (For those of you who have asked, I switched from Bluehost to Site5. I’m already much happier.) I’m hoping all of PBF’s growing pains are over!

I love chicken sausage, especially since I don’t eat red meat but do love the flavors and spice of sausage. Plus, the pre-cooked kind are so easy to make into a meal.

That chicken sausage flavor sounds wonderful. I eat vegetarian meals about 95% of the time, but when I do eat, I love the different flavors of chicken sausage from Trader Joe’s – they have some tasty ones!

Hey Julie! I may have missed something about what your PB project is, but I left a comment on your FB page about making no-bake cookies with PB. I have to share this recipe, because its the best cookie ever made and its so easy (and the warm batter is good enough to eat on its own – trust me, you’ll steal many spoonfuls before they make it to cookie-form).
No-bakes/oatmeal fudge cookies/haystacks (whatever you want to call them)
1 stick margarine
1/2 cup milk
2 cups sugar
4 tablespoons coco powder
1 teaspoon vanilla
1/2 cup PB (I always use Jif)
2 cups instand oats
directions:
-melt butter in pan over med heat
-in the meantime, mix the coco powder and sugar to avoid coco lumps
-add the milk to melted butter
-stir in the sugar/coco mixture
-let this mixture come to a boil – once it startsboiling, set your timer for 2 mintues. stir/boil for exactly 2 mintues (this is key)
-after your timer goes off, turn off the heat
-add vanilla (it bubbles and its fun to watch!)
-add PB (I never measure this..I just use a heaping spoonful which probably ends up being aboud 3/4 c)
-add oatmeal (I usually add 1/4 c extra) i suggest stirring in the 2-2 1/4 cups and then letting it sit in the pan for about 1 minute, then see how thick it is. add the extra oatmeal (beyond the 1/4 extra) if you need it. the amount of PB you use will determine how thick the mixture is..you get the idea.
-spoon the cookies on to wax paper (put newspaper under it or you’ll get wax on the table) and let cool. you do not have to refrigerate. you’ll get the hang of how much oatmeal or pb you need to make it the correct thickness.

That sausage looks so delicious! I think chicken sausage is my favorite by far. With Sun dried tomatoes? Yes, please! Do you order yours off the internet? I’m going to look for it at the store tonight. It seems like the perfect go-to no time meal.
Also, forgive me if you have already, but have you done a tutorial on roasting veggies? I keep accidentally burning mine… I suppose the solution to that would be to take them out earlier! hah! If you haven’t done a tutorial on it, would you mind when you have time?
