Description
There’s something about the flavor of cilantro that simply screams fresh. I adore the herb and the punch of flavor that it provides to dishes. This salad came together quickly and hit the spot!
Ingredients

- 1 avocado, sliced
- 1/2 tomato, chopped
- 1 ear of corn, kernels removed from cob (raw)
- 1/4 cup chopped scallions
- 1/2 tablespoon lime juice
- 1/2 teaspoon olive oil
- 1/8 teaspoon salt
- 1/4 cup chopped cilantro
- 1 cup (6 ounces) shrimp, chilled, peeled and deveined
Instructions
- Combine avocado through cilantro
- Add shrimp to avocado mixture and stir until shrimp is lightly coated
