Description
This hot and creamy dish was a great alternative to basic oatmeal and the punch of coconut flavor was fantastic!
Ingredients
- 1 (13.5 ounce) can light coconut milk
- 3/4 cup quinoa
- 1 thoroughly mashed banana
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup unsweetened shredded coconut
- A few small drops of coconut extract (optional for more coconut flavor)
Instructions
- Combine coconut milk and quinoa in a saucepan and bring to a boil.
- Add mashed banana, cinnamon and nutmeg. Cover and reduce heat, allowing the quinoa to simmer for approximately 15 minutes, or until the coconut milk is absorbed by the quinoa.
- Stir in shredded coconut and coconut extract. Pour quinoa into bowls, topping it with nuts or fresh berries if desired.
I think that the banana in this dish gives it the perfect amount of natural sweetness, but if you hate bananas (Ryan cannot stand warm bananas), you can leave the quinoa unsweetened or add a sprinkle of brown sugar.
If you choose to make this ahead of time, you may need to add more milk to the quinoa in the morning to fluff it up a bit.
Yum!
P.S. My fellow Bachelor fans: Did you know that Sean’s sister Shay has a blog!? I remember stumbling across her food blog last time when Sean was on The Bachelorette, but she has a separate blog where she answers questions from readers about her time on The Bachelor. Since I know a bunch of you are Bachelor fans, I just wanted to share! I got sucked into reading her recaps and Q&A posts last night! Her blog: Mix and Match Family.
P.P.S. Who do you want to end up with Sean this season? I loved Lesley, so I was sad to see her go last week!
Ali @ Peaches and Football says
This IS right up my alley! I make a big batch of steel cut oats every Saturday morning so I have a good breakfast before heading to the gym. I love the idea of mixing it up and using quinoa – and I have all the ingredients. I had never thought I would love toppings or nuts on oatmeal because growing up we only did milk and brown sugar but I’ve been missing out. Nuts in oats is the best thing ever and I think it would give this quinoa a great texture too!
Amy @ Writing While Running says
This looks amazing!
Avery @ Southern Belle Living Well says
A bachelor blog??!!! Ahhh! Must read!
Christi @ ByeByeYoYo says
I wouldn’t have thought of eating quinoa for breakfast, but that looks sooo good, and I love coconut. I bet it would be great to put toasted coconut on top too (or instead of mixing it all in).
Sarah @PickyRunner says
I just tried quinoa the other night and it wasn’t half bad! Mine was of the mac and cheese variety, though. So cool that one of the girls on the show has a blog!
Lauren @ Berry Sweet Lauren says
I will definitely be making this on Saturday morning!
Laura says
omg I want to end up with Sean 😉 he seems pretty awesome. I like Ashley a lot (I’m kind of behind so she could have gone home already, idk), but she seems so sweet and genuine. I also love Desiree! She seems really fun.
Angela says
I LOVED Lesley. I kind of want to be her best friend. I was really sad to see her go, but they were just so awkward on their date. I like Desiree, but I feel like there’s something “off” about her, and I can’t quite figure out what. I really like Catherine, too!
Molly Antos says
i have been WANTING to make some breakfast quinoa ever since i saw a slideshow about it on SHAPE magazine. this looks like a great place to start – thanks for the recipe!
Julie @ There and Back Again says
Sean’s sister’s blog is hilarious! I love her story about what she was wearing when she visited St. Croix. I’ve really liked Catherine from the beginning – she seems so sweet, low-maintenance, and genuine – and I was worried for a while because she was kinda rollin’ in the background, but she seems to be matching the other girls now! 🙂
Laua says
For the first time ever, I actually like all the final four bachelorettes. But, I think Des is the best fit for Sean. Not sure about all that drama with her family next week though!
Sonja @ The {Happy} Travel Bug says
I’ve never tried quinoa. What would you say it is most similar too?
Erica says
How cool that she has a blog! I was sad to see Lesley go, too. My favorites now are Catherine & Lindsay.
Catie says
I think I’m pulling for Catherine (and not just because we share the same name!). I really liked Lesley too though 🙁 I’m also a big fan of Des, and I can’t wait to see the drama next week with her brother!
Ashley O. @ The Vegetable Life says
I am going to have to try breakfast quinoa!
I really like lesley but I am also liking Des and Lindsay!
Paige @ Your Trainer Paige says
Yummm I think I have those ingredients, too! Well, I have regular coconut milk instead of light, but I’m guessing that will work just fine?
I’m rooting for Ashlee 🙂 I really like Kathryn, too, though.
Carly @ Snack Therapy says
I’ve seen quinoa in breakfast dishes, but this one looks especially amazing.
And I both love and hate that you’ve given me more ways to be obsessed with The Bachelor. I can tell that website is going to be a definite time suck.
Melanie @ Beautifully Nutty says
This breakfast has my name written all over it! Num! I also really liked Lesly but all of the girls left are very sweet too. Next up, home towns!! Let the drama unfold.
Alissa says
I love Des but after watching the previews it looks like her brother ruins her chances but who knows the producers always want you to think something else!
Hope @ With A Side Of Hope says
This sounds like the perfect breakfast to me! I love coconut and quinoa so why not put them together?! Yum! Definitely want to try this 🙂
Anne @ eatcleaneatreal says
This sounds awesome…and you can probably make it in the crock pot too 😉 I might try it with oats in the crock pot….YUMMMMM!
Kim @ Cooking in the City says
I was definitely rooting for DC Girl (aka- Lesley). I like Des a lot, but I’m not sure if that’s going to happen- seems like we will find out more next week! I think that, right now, I see Lindsay making it to the end 🙂
Katie @ Peace Love & Oats says
Oooo that is a lot of coconut! And I LOVE the Bachelor so I’ll have to check out that blog. And I hope AshLee ends up with Sean, she’s just so sweet. I was so afraid he’d get mad at her for telling him about Tierra. So glad she’s gone…
Heather says
I will be reading that blog for sure! I think Des has a chance but I’m kinda worried to see what’s going to go down with her home visit!
Kristi @ lifesprinkles says
I love quinoa for breakfast – this looks delicious!
Laura @ RunningJunkie123 says
I made something similar to that for breakfast today. It was coconut and banana steel cut oats in the crock pot. SO yummy.

I put a dollop of Sun Butter and a bit of toasted coconut on mine but I bet macadamia nuts would be awesome.
Linz @ Itz Linz says
I love sweet quinoa bowls!!
joelle @ on a pink typewriter says
Loving this breakfast, and I can’t wait to check out Shay’s blog! I love AshLee, but I’m afraid she’s going to get cut next…..I’m dying to know if Sean is still with the girl he ended up picking!
Megan says
Agreed, Lesley was my favorite! I am sad to see her go. This breakfast looks pretty fantastical!
Tiff (@LoveSweatBeers) says
Coconut isn’t for me, but I like the idea of breakfast quinoa. Love that stuff.
missy says
no way he would pick Lesley. if you do a little research she is a democratic consultant in DC. Sean is a pretty conservative republican…no way he picks her…
Allison says
Omg thank you for sharing her blog! Looking it up right now. I wanted Lesley as well 🙁 I think I’m rooting for Lindsay now.
Christina says
I absolutely LOVE Mix and Match Mama’s blogs!!! I’ve made a bunch of her recipes (she has quite a few crock pot recipes!) And her Bachelor recaps are awesome. I really love Des, but I think he’ll end up with Ashley (well, she’s my favorite, so I hope so!)
Elizabeth @ myneonrunningshoes says
Looks great! I will definitely have to try this soon 🙂
Maureen says
I am LOVING coconut milk lately! I’ve been using it in almost all of my recipes on http://www.sheismoments.com mmmmmmm
Claire @ Flake and Cake says
That looks delicious Julie, esp with the almonds on top!
Darrecia says
Sean should end up with me… just saying.
I like Catherine and AshLee. Now that ABC finally allowed him to drop cry-baby drama child, Tearra, I’m okay with whomever he chooses.
Melissa @ Freeing Imperfections says
Looks good! Something different than the usual oatmeal. That’s neat that she has a blog!
Justine says
This looks absolutely delicious! Coconut is one of my favorite flavors. I often make granola bars with coconut and I wonder if I could start making the bars with quinoa instead.
alyssa - life a la wife says
I love how versatile quinoa is!!
I’m thinking Catherine – At first she was a wallflower but I see them really connecting now.
Laurie @ Love, Laugh, Laurie says
I loved Lesley too, I want her to be my friend 🙂 I am rooting for Catherine though, she is adorable!!
Whitney says
Sean will propose to Catherine. the end.
and then I will be depressed when it ends. I am loving this season!!

Annette@FitnessPerks says
Oh my gosh, this looks SOOO good. I love quinoa & I adore coconut. You’re a genius Julie!!
Nicole says
I wish I’d known there was a Bachelor spoiler in the post!
Haven’t caught up with this week’s show.
Ali @ WHOLEistically Fit says
Great recipe! Thanks for sharing. Oh, and I didn’t know Sean’s sis has a blog. I’m definitely going to check it out. I think I mentioned over here before that I like to read all the spoilers for The Bachelor / Bachelorette, so it’s hard to be unbiased in picking a fave. Aside from Tiera (and a couple of others), though, I think Sean had/has an AMAZING group of girls – like the best group of women ever. They all seem so interesting, funny, friendly, and just down-right sweet.
sara @ fitcupcaker says
I love the bachelor, so I will def look at her blog 🙂 I love quinoa for breakfast lunch or dinner and this recipe looks great!
Molly @ Just Your Average Athlete says
I’ve never thought of using quinoa to make a breakfast food! Seems silly I haven’t already thought – sounds comparable to the oatmeal bowls I make 🙂
I’ve NEVER watched The Bachelor before! I’m really missing out, aren’t I? haha
Katie @ Talk Less, Say More says
That looks great! I’ll have to give it a try some day this week. And I too was bummed Leslie left. I thought she seemed so sweet and sincere. While I think Catherine is a nice girl, I don’t see her and Sean lasting very long. I guess out of who is left, I’m rooting for Ashlee.
Amanda says
That looks amazing! I’ve honestly only had quinoa cold in a salad. I must try this soon. I adore your blog. I love logging into my computer every day and readings your posts! You inspire me to be better healthy me. It would mean SO much to me if you could take a look at my blog–> http://forevernuts.org!
