I’ve been a fan of coconut ever since I was little.
When I would go trick-or-treating, I would freak out over a fun-size Almond Joy like other kids would freak out over any king size candy bar.
And let’s not forget the night I ate coconut cake for dinner…
In all my years of loving coconut, I’ve made numerous desserts with coconut and even breakfast protein smoothies featuring coconut, but I’ve never attempted a traditional coconut macaroon until tonight! I had a big tub of unsweetened coconut shavings on hand and after seeing Gina make some delicious-looking macaroons on her blog I knew exactly what I wanted to do with ‘em. I Googled macaroon recipes and found that they are extremely simple to make.
Score!
I followed an easy recipe from AllRecipes.com and within 20 minutes had a cookie sheet full of delicious coconut macaroons!
Dinner was a small plateful of these bad boys.
I had a grilled cheese and leftover roasted asparagus as well, but these lil’ macaroons definitely stole the show!
If you’re a coconut lover, I promise these will make your mouth happy!

Thanks so much for sharing the recipe. I need some coconut pronto. I totally relate to your Halloween story, so I know these ‘roons will be a huge hit.

I’m cuckoo for Coconuts 🙂 I’m glad you finally made macaroons and that the recipe was a success.
You should try adding chocolate to your macaroons next time. It’s a great combination. But classic macaroons are delicious on their own too

Those look amazing. I never understand people that don’t like coconut. It is heavenly.
Ashley says
You should try making them by combining 1 avocado, sugar, and the coconut. I just eyeball the amount of the sugar and coconut. They are so delicious and a bit healthier. Plus they turn out green! St. Patty’s Day treat maybe?
peanutbutterfingers says
so creative!
Lea @ Healthy Coconut says
Hi Julie,
I was interested in trying out Ashley’s suggestion. Is there a way you can ask her for the direction/recipe for that healthier macaroon recipe?
Thanks,
~ Lea

Hmm…still not getting e-mails for your new site. I got one that listed three of your blogs…two I had already read and a new one. Then I decided to type the address in just now and there is this new one!
So do I get just one e-mail a day now instead of one for each blog post? Why does change have to be so hard? =P lol

You shouldn’t have posted the recipe. 🙁 lol
Also? I can’t view your site (as in, images) while I’m at work anymore. I guess that means more commenting coming from me – since I save the BEST blogs for the evening when I can comment away. Lucky you! hehee
