Coconut Milk French Toast

Today’s breakfast was so good… in theory.

My hopes for this meal were high.

I made English muffin French toast using coconut milk in the egg batter mixture instead of regular milk. I was so excited about this idea and figured the French toast would have a delicious hint of coconut flavor.

Not so.

The coconut flavor was completely lost. Such a bummer! At least the French toast was still delicious. Maybe adding a drop or two of coconut extract would help?

The good news? Sub-par French toast is better than no French toast!

  • Banana Almond Stuffed French Toast

Workout

Today’s workout began with 20 minutes on the treadmill that looked like this:

I completed slightly more than two miles and worked up a nice sweat.

Then it was time for this upper-body workout that included three sets of 15 – 20 repetitions of the following exercises:

  • Superset One: Chest press + Bicep curls
  • Superset Two: Upright rows + Tricep dips
  • Superset Three: Ryan’s awesome shoulder move + Incline bicep curls
  • Superset Four: Tricep pull downs + Side shoulder raises
  • Push-ups
  • One minute plank hold

I really liked this combination of exercises. The incline bicep curls may be popping up in a lot of my future upper-body workouts because they really made my biceps burn!

Off to revamp some of the pages on the blog that desperately need attention… like basically every single one of my recipe pages.

    I am rushing this Thursday and was wondering if you have any tips? I am actually a second year. I’m not a typical sorority person (i.e. don’t spend a ton of money on clothes and wear minimal makeup) but it seems like a great way to meet more people and have social events on weekends. I’m actually involved with a lot of clubs on campus as well, but want to meet more people my age so when they graduate I’ll still be able to meet with people. I guess I’m a little nervous since I’m not much of a fashion person, I am outdoorsy but still enjoy clothes just not my priority. 🙂 I rather spend my money on a good jar of pb :]

    BEST french toast ever…use croissants sliced in half and dip in egg mixed with milk and cinnamon. Cook in pan like you would any other french toast. Saute apples with a little brown sugar and cinnamon and a teaspoon of butter until soft. Place sauteed apples on bottom 1/2 of croissant and top with other 1/2. Sprinkle with pecans, powdered sugar and maple syrup! Thank me later!!

    Bummer about the french toast not turning out as you had hoped, but at least it still tasted good! That’s the most important part! And all of your other french toast recipes sound delish! I’m going to have to look into those!

    Have you tried Olivio butter…? It’s coconut ‘butter’……soooooo good! Well at least it was in my vegan puppy chow(muddy buddies…)
    Perhaps if you used that instead of butter you’ll get the coconut flavor you’re looking for….

    I love seeing all of your creative breakfasts in the morning! Being at home last week was so wonderful because I had time to make pancakes. Hopefully someday I can always do that! 🙂

    I feel like this would be such a great PANCAKE recipe! Maybe with coconut milk and coconut flakes in the batter, and then cooked in coconut oil. Mmm!

    mmmm….this reminds me of coconut syrup I had on vacation. It was tasty delicious and had a lighter flavor than regular syrup.
    Sorry the coconut milk didn’t work out. How about coconut extract maybe? Do they even sell that?

    I use coconut oil instead of canola or butter for my French toast – imparts a nice coconut-y flavor!

    I heart coconut. I agree that sometimes coconut milk loses its flavor when added to other ingredients. I used it in my oatmeal hoping for the coconut goodness, but it was lost as well. However, it did make the oatmeal extra rich and creamy!

    That workout looks killer!
