In my morning post, I briefly mentioned that we had lasagna for dinner last night. One good thing about making lasagna for only two people?
Leftovers!
I was pumped to dig into our leftover lasagna around lunchtime today.
It doesn’t look like typical lasagna does it?
Well, that’s because there was a little less marinara sauce and a lot more butternut squash!
(And yes, it basically fell apart as I was trying to plate it. Leftovers will do that to ya!)
I made the lasagna last night by following a recipe for winter squash lasagna that I tore out of Woman’s Day magazine at the gym last week.
I followed the recipe almost exactly, only I used whole wheat lasagna noodles and substituted frozen spinach for fresh spinach.
(I made sure to drain the water out of the frozen spinach before adding it to the ricotta and mozzarella mixture because Ryan and I have neglected to do so in the past and were left with super watery lasagna.)
One thing I loved about this lasagna? The cheese to noodle ratio! Sure the noodles were good, but I love how there was so much ricotta cheese in the recipe that you could barely see the noodles underneath all the cheesy glory. That’s my kind of lasagna!
Both Ryan and I said we’d gladly make it again and it was ready in less than 45 minutes which is pretty great for homemade lasagna!

I’m glad you found a new recipe you like but I find it very rude that you tore it out of a magazine from the gym. Plenty of other people read that magazine and are probably disappointed when they find there’s a page missing.

i can see what you’re saying if the magazines were owned by the gym and subscribed to by the gym, but they are simply magazines gym members take and leave from their own subscriptions that they have at home… so the magazines are not actually gym property, as they have a “take one, leave one” policy posted. i leave magazines that i bring in myself from home all the time! nearly every magazine at my gym has pages missing, folded over… even covers are missing! i used to work out at a gym where the magazines were gym property and wouldn’t tear out pages in that case.

No link up since they are my Grandma’s recipe and she hasn’t quite hit the world wide web yet….but you can never go wrong with a Grandma recipe! 😉
But, they are called Buckeyes (like from Ohio):
In a bowl, mix 1# confectioners sugar, 1# peanut butter, and 1 stick butter. Roll the dough into little balls and chill in the fridge for a bit.
Later, on a double boiler, melt 1 cup chocolate chips with a 1/4-ish stick of paraffin wax. Dip the peanut butter balls into the chocolate (while it’s on the double boiler) and then let sit on wax paper until they dry.
They look just like real life buckeyes and they are ALWAYS a hit! I made them for a cookie party yesterday and just posted some pics on my blog. LOVE THEM!

Only lately have I realized that my family’s traditional Christmas “cookies” aren’t what other people make!! We don’t really make any cookies, just bars and squares – only at Christmas – and they are all fantastic (not biased, of course). OREO BALLS! I get requests for these every year from my husband’s coworkers… they are super easy and fun to make… and obviously delicious 🙂
1 pkg. cream cheese, room temp.
1 pkg. oreos (try it with the peppermint oreos!)
chocolate or white chocolate almond bark
crushed peppermints or candycanes
1- Place oreos in food processer and process until fine and crushed.
2- Mix oreos and cream cheese until thoroughly combined.
3- Roll mixture into balls using desired amt. for size (I’d say about a tablespoon for each) and place on baking sheet. Place in fridge for 30 minutes.
4- Melt almond bark according to directions. Use a skewer to dip balls into chocolate; sprinkle with crushed peppermints, festive sprinkles, or extra crushed oreos!

for me I usually make spritz cookies (I inherited my grandma’s cookie press so I keep her tradition of making oodles of them…) and rum balls…. If oreos are a hit then I have an easy one for you. Crush up about 15 oreos (double stuff) and mix it into melted white chocolate (bag of chips or candy melts – melted at 30 second intervals in the microwave) and then drop by spoonful into mini muffin foil papers. EASY!

Chocolate Almond Bark
Make little Ritz PB sandwiches and dip in melted almond bark. Place on wax paper until dry. We like to add sprinkles and drizzle white chocolate over them to make them a little prettier.
And the BEST ones. . .
Haystacks a.k.a Chow Mein Noodle Cookies
1 bag chocolate chips
1 bag of butterscotch chips
1 1/2 cups of PB
Melt that all together over low heat. When melted, remove from heat and add
1 jar of dry roasted peanuts
1 bag of marshmellows
1 bag of chow mein noodles
Scoop “haystacks” onto wax paper and let dry.
