Since my mom was planning to be at our house around 9 a.m., after publishing my morning blog post, I headed into the kitchen to pack a lunch to bring with me in a cooler since my mom and I were planning to drive through lunchtime.
I packed chicken salad, a cup of strawberry banana Greek yogurt and an apple the size of my face into the cooler. I also packed a baggie of blue corn chips for dipping into the chicken salad.
I made my chicken salad by combining the following:
- 1 large chicken breast, shredded
- 2 tablespoons Smart Balance Omega Plus Light Mayonnaise Dressing (The company sent me this to try and I hate mayonnaise, but really like it! It reminds me of Miracle Whip which I actually do like!)
- 2 tablespoons mustard
- 2 tablespoons relish
Easy!
It reminded me a lot of my BBQ chicken salad or curried chicken salad, but with less ingredients. Not too shabby for lunch out of a cooler!
And now for a nutty giveaway…
Nuts.com Giveaway
A few weeks ago, I received an email from an account executive with Nuts.com.
Knowing that I’m a peanut butter and nut-lover, he reached out to me asking if I would like to sample some of their nuts.
Of course!
I selected a pound of butter toffee pecans and have enjoyed snacking on them daily.
Pecans are my all-time favorite nut and the butter toffee flavor adds the perfect punch of sweetness.
I’ve loved eating them by the handful or stirring them into Greek yogurt, oatmeal or even pancake batter!
And now you have a chance to win a pound of Nuts.com butter toffee pecans.
To enter this giveaway, please comment below, telling me your favorite way to enjoy nuts.
(Keep it PG, please. )
I will randomly select a winner tomorrow.
Good luck!
I put them in salads. I’m not a big fan of them plain, but they really step salads up to the next level!
I love nuts in granola, all kinds!!! Pecans and pistacios are my faves. 🙂

Honestly, I like them plain the best!
AH! I love nuts every way! I especially like them in yogurt. 🙂
I enjoy them as a snack at my desk almost every day! I also enjoy sending nuts to my deployed husband since it’s a perfect snack to keep him fueled. We’re a big nut family ; )
My favorite way of eating nuts is stirred into greek yogurt!!
I love plain old cashew right of the jar or sitting in my grandparent’s backyard cracking pecans and eating them on the spot. Yum!
I love nuts in pancakes…..or just dipped in peanut butter 🙂
I love eating nuts just on their own or mixed in to trail mix or granola!
I love to roast pecans with a little bit of brown sugar and cinnamon on top!

I love nuts atop a good spinach salad or with my baked sweet potatoes…yummm
I like to keep a ziploc of almonds in my purse. It is a great snack for in between meals
I like nuts along with some fruit. The protein makes the snack more satisfying. Of course I love nut butters of all types too 🙂
I like lightly salted nuts, particularly Brazil nuts the best. A close second is candied walnuts or pecans on a spinach salad. Yummers!
I love them in oatmeal, desserts, salads…but right out of the bag is preferable! Pecans are great too–especially the cinnamon sugar ones (which aren’t exactly great for you, but they taste great)
in trail mix, or on top of oatmeal!
I love adding nuts to big batches of granola that I bake up–they provide such a great variety of crunchiness! 🙂
Yogurt, oatmeal, salads, trailmix.. NUT BUTTER! I love nuts 🙂
I love nuts in my cereal to give it some extra crunch – and some extra substance in the calorie/protein department!
Great afternoon snack at work!
i love just snacking on nuts, or I really, really love eating some silvered almonds, pecans or cashews in salads with fresh or dried fruit.

I love nuts in salads and Greek yogurt!
I love adding nuts to seven-layer bars!

The one thing I hate? Almond slivers. EEK… it’s definitely something about the texture!
I love, love, love roasted almonds in my oatmeal (with peanut butter, of course!) or just as a snack!
I’ve ordered from nuts.com before. They have some really great stuff. I buy raw nuts and roast them myself. I love cinnamon roasted almonds.
Love nuts in greek yogurt with berries! Or just plain by themselves!
Giant handfuls of raw almonds with raisins might be the world’s perfect snack!

Currently my favorite is In Greek yogurt. Currently my favorite combo is Chobani Apple Cinnamon with Pecan pieces. Delicious!
I absolutely love trail mixes/nuts! I usually take a small bag of them with me to munch on in between classes! This usually works best because if I bring the whole bag with me while sitting on the coch watching tv, before I know it half the bag is gone 🙂
