Since my mom was planning to be at our house around 9 a.m., after publishing my morning blog post, I headed into the kitchen to pack a lunch to bring with me in a cooler since my mom and I were planning to drive through lunchtime.
I packed chicken salad, a cup of strawberry banana Greek yogurt and an apple the size of my face into the cooler. I also packed a baggie of blue corn chips for dipping into the chicken salad.
I made my chicken salad by combining the following:
- 1 large chicken breast, shredded
- 2 tablespoons Smart Balance Omega Plus Light Mayonnaise Dressing (The company sent me this to try and I hate mayonnaise, but really like it! It reminds me of Miracle Whip which I actually do like!)
- 2 tablespoons mustard
- 2 tablespoons relish
Easy!
It reminded me a lot of my BBQ chicken salad or curried chicken salad, but with less ingredients. Not too shabby for lunch out of a cooler!

My new favorite breakfast combo is light and fit vanilla yogurt with frozen berries and a handful of almonds and walnuts – that is currently my favorite way to enjoy nuts!

My favorite way to enjoy nuts is either in a healthy trail mix (with craisins – they add such a fun punch of color and flavor!) or as an add-in to cookies (walnuts and macademias are my two favorites for this)!
My favorite way to eat nuts is simple, plain and by the handful (in moderation of course) I also enjoy them with yogurt, on salads, and recent favorite frozen banana dipped in greek yogurt sprinkled with chopped nuts!! Yummy!!
I have been binge eating boy scout popcorn with toffee cashews…I dont want to win…I just had to confess.
Well I like em plain if they have a yummy flavor to them! But I throw them in greek yogurt, stir frys, and couscous salads all the time. Delish!
Love any sort of nut butter (peanut butter being my fav), but I love having a handful of almonds as an afternoon snack or chopping them up over oatmeal with dried fruit. Those butter toffee pecans looks ah-maz-ing though!
I usually eat a handful of almonds almost everyday, plain…sometimes roasted!

Pecans are my favorite nuts too! I love to just snack on them whenever I feel a hunger pang and its not time for a meal. Perfect snack!
I like to put them on salads, especially walnuts. I usually eat almonds and pistachios plain, but I should probably try to incorporate them into oatmeal or yogurt. Go nuts!
I have been using them to make some creamy vegan pasta sauces…DELISH! You would never know there was no cheese.

I USED TO MAKE HOMEMADE PEANUT BRITTLE BUT IT IS WAY TO FATTENING AND TOO DANGEROUS TO HAVE AROUND AND TEMPT ME.
