Since my mom was planning to be at our house around 9 a.m., after publishing my morning blog post, I headed into the kitchen to pack a lunch to bring with me in a cooler since my mom and I were planning to drive through lunchtime.
I packed chicken salad, a cup of strawberry banana Greek yogurt and an apple the size of my face into the cooler. I also packed a baggie of blue corn chips for dipping into the chicken salad.
I made my chicken salad by combining the following:
- 1 large chicken breast, shredded
- 2 tablespoons Smart Balance Omega Plus Light Mayonnaise Dressing (The company sent me this to try and I hate mayonnaise, but really like it! It reminds me of Miracle Whip which I actually do like!)
- 2 tablespoons mustard
- 2 tablespoons relish
Easy!
It reminded me a lot of my BBQ chicken salad or curried chicken salad, but with less ingredients. Not too shabby for lunch out of a cooler!

I can’t be trusted around a container of nuts – I got to town on them! I try to keep it under control by adding a handful to salads or mixing them into granola to put on yogurt. The best way to enjoy them (let’s be honest here!) is toasted and stirred into cookie dough 😉

BUT.. big BUT here.. You should defenitely try real Belgian mayonaise.. Really, there is such a big difference..

Ever since I stopped eating meat 10 years ago, I started eating nuts every day to up my protein intake. I like them straight up. I LOVE to enjoy cinnamon sugar nuts around the holidays (though rarely any other time, they’re addictive!) Other nuts are great as a snack, or some toasted walnuts with feta cheese in a salad! I SWEAR it tastes like white cheddar popcorn!
