Two-ingredient crock pot chicken is so versatile. With a big bowl full of moist, shredded chicken ready to go after cooking in the crock pot all day, the uses for the meat are endless.
Two of my favorite ways to use the chicken are in buffalo chicken and BBQ pulled chicken sandwiches. Though I typically default to stand by recipes when it comes to the two-ingredient pulled chicken, tonight I decided to try something a little different.
I made the salad by combining the following:
- Two pulled chicken breasts
- Light Miracle Whip (Mayo will also work)
- Sweet Relish
- Chopped carrot
- Chopped celery
- Ginger
- Curry powder
I served the curried chicken salad in a red pepper and dug in!
This was a totally random experiment that fortunately turned out really well. I gobbled it up!
After dinner I was craving something sweet, so I baked up a batch of pumpkin chocolate cookies, following the same recipe that I use when I make pumpkin spice cookies, except I subbed chocolate cake mix for the spice cake mix and added two tablespoons of cocoa powder.
I ate two of the cookies (and lots of dough) and adequately satisfied my sweet tooth!
I’m off to mess with Sadie… She’s in an extra chipper mood tonight!
I think I would have eaten the cookies for dinner! hehe!!

Mmm. That looks good. I’m going to try a veggie version of that, substituting mashed chick peas for the chicken. And funny coincidence, I had almost the same dessert tonight, pumpkin chocolate chip cookies in my case.
