This morning’s breakfast tasted like it was straight out of a diner!
I think it was the breakfast potatoes. I’ve made hash browns before, but I used a package of shredded, frozen potatoes. This was my first attempt at real breakfast potatoes and they were pretty darn easy to make.
I used some of the peeled, chopped potatoes that I had leftover from last week’s shepherd pie and sautéed them with diced onion in a bit of olive oil, seasoned with garlic salt.
Two fried eggs and a honey wheat English muffin rounded out the meal.
Workout
Today’s breakfast was the perfect post-workout fuel.
I worked up quite an appetite at the gym. Once again I set out to conquer 100 squats in a row and powered through until I finished the very last rep.
I loaded up a 45-pound bar with 30 pounds of weight and was nice and sweaty by the end.
I like having mini strength-training goals to work towards. I am not really a big-time goal setter in the gym (I blame it on my lack of competitive drive), but it is a great feeling to reach mini milestones. For some reason I have it in the back of my head that I’d like to be able to do 100 squats in a row at 100 pounds. I know that will take a lot of time and work to build up to that weight, but it’s something to strive for in the future.
Today’s leg workout included the following exercises:
- 100 squats
- Deadlifts
- Lunges
- Step ups
- Hamstring curls
- One-legged leg press
- Split squat with exercise ball
The Return of Blog Talk Tuesdays
I took two weeks off from Blog Talk Tuesdays but plan to post one tomorrow. To be honest, I’ve been putting off some of the later topics because I feel like they’re more intense and involved and I want them to be very thorough, so if you have any questions you’d like to see addressed, please feel free to ask away.
Here are the remaining topics I have on my list to cover:
- Blog readership
- Blogging organization
- Blogging and money
- Freelancing
If I’m leaving out a topic that you’d like to see featured, just let me know!
Bee Goes Bananas says
That looks delicious! I love homefries, but I’ve never tried making them at home. Perhaps that’s another breakfast addition I should try soon!
Angela @ Eat Spin Run Repeat says
Looks yummy! PS I did your 100 squat challenge last week and the burn was amazing!!!! I used 65 lbs and now I’ve got my sights set on adding 5 lbs each week. Thanks for inspiring the challenge Julie! 🙂
peanutbutterfingers says
woo! that’s where i started, too! this week was 75 and i think i’m going to try 85 next week… but i have a feeling i’ll be breaking it up a bit! 85 lbs is intense!
Khushboo says

Gen says
Congrats on the 100 squats! 😀 Your breakfast looks delicious!
Mallory @ It's Only Life, After All says
delicious looking breakfast. diner hash browns are one of the best things you can get from diners! i noticed you added onion to them- thats definitely key! i had eggs myself, with spinach and onion, and i tried morning stars veggie bacon for the first time. as much as its appearance makes me laugh (due to how “fake” it looks), it actually hit the spot!
Katie @ Peace Love and Oats says
I love breakfast potatoes and I never think to make them for myself… but so easy! Haha. And blog readership is definitely a topic I’d want to hear about. Also, maybe the move to your own domain? I think I’m ready to make the switch (especially since on blogger I can’t respond to comments, and connecting with people is the whole reason I started my blog!) but I’m really nervous about the technical stuff – not my forte.
peanutbutterfingers says
hey katie! i talk about making the switch in this post: https://www.pbfingers.com/2011/07/26/blog-talk-tuesdays/
there’s a link to a blog post by michelle of crazyrunninglegs.com with a whole tutorial!
Katie @ Peace Love and Oats says
awesome! thank you!!
peanutbutterfingers says
no prob! 🙂
Tiffany @ texan on the run says
Hey julie, I just wanted to share with you what I learned in my med school class, as I’m a first year med student.
One egg yolk has 250mg of cholesterol, and the daily recommended intake is about 300mg
Though they are the good cholesterol and also have a ton of protein and other good stuff packed in, its probably good to limit egg yolk intake to one…
Just watching out for your health, thats all 🙂
peanutbutterfingers says
thank you for the info, tiffany!
Amber K says
Are your classes also talking about the studies that keep coming out about how dietary cholesterol has very little to do with the amount of cholesterol in our bodies? I’m truly curious, because more and more keep coming out and I wonder how often medical classes and books are updated.
Lauren @ What Lauren Likes says
Yum! I haven’t had homefries in forever 🙂
Hillary says
I’m the same way in the gym: some days, I just go in and do whatever, but I get my best workouts when I set a goal and push myself. I need to remind myself to do that more often!
Lindsay@ In Sweetness and In Health says
Oh that breakfast looks so tasty! Looking forward to the return of your blog-talk tuesdays! I think your remaining topics look fantastic! Also, nice job on the 100 squats!
Annette @ EnjoyYourHealthyLife says
NICE job on the squats! That rocks. It does feel good to set mini goals, go for ’em, and reach ’em!
Ashley @ My Food 'N' Fitness Diaries says
I love breakfast potatoes – especially with LOTS of ketchup! 🙂
Lindsay @ biking before bed says
Diner breakfasts are the best:) I think I’m going to try making breakfast sweet potatoes. That is an awesome squat challenge. I really want to test my limits this week. I feel like I’m in a weight lifting rut
Tina @ Faith Fitness Fun says
I wanted to do the 100 squats thing in my leg workout this morning but I forgot until the very end. Ain’t no way I was tacking on 100 squats then. LOL
And can’t wait to hear your thoughts and take on the next blogging topics. Will be interesting to see how similar your thoughts are to what I covered in my recent ones. Great minds think alike! 😉
Dee says
What a yummy looking breakfast!
Cait's Plate says
Diner breakfasts are AWESOME. And that really does look straight out of a diner. I love it.
Gina @ Running to the Kitchen says
That’s an intense leg workout! Do you find step-ups to be insanely boring or is it just me? I dread those when I get to them. Glad to hear Blog talk tuesdays are coming back this week. I missed them recently!
peanutbutterfingers says
i hate them. bleeeeh… but they work!
Brittany (A Healthy Slice of Life) says
I have to skim over the workout sections until I’m cleared to workout again in a couple weeks- it’s just too tempting right now to want to jump back in 🙂
And hooray for the return of Blog Talk Tuesday!
Sarah K. @ The Pajama Chef says
yum! that breakfast looks fantastic.
Hope says
Homefries are my absolute favorite! I’ve never tried making them at home but I just bought a huge bag of poatoes at the store yesterday cause they were on sale. I think I’m going to have to recreate your breakfast! It looks fantastic! 🙂
Ruthie Hart says
okay I seriously thought the title was DINNER breakfast so I was wondering why I didn’t see a big ole’ steak on your breakfast plate..lol I am dumb!
Alison says
Hi Julie! Can you try to explain the “split squat with exercise ball”? I just bought an exercise ball and i was trying to find some lower body exercises to do!
peanutbutterfingers says
yes! check out carissa’s blog post about it! http://fit2flex.blogspot.com/2011/08/i-want-thinner-thighs.html
Carissa says
Its basically like a “stationary lunge squat” Push your back into the ball against the wall and make sure your front knee doesn’t go over your toes. You can also do a regular squat leaning against the ball. Do them to a slow count and I feel the burn!
Cat @Breakfast to Bed says
at BodyPump the new instructor has us doing jump ups. They make me want to commit gymteachercide. For real.
peanutbutterfingers says
what!?!?! i’ve never heard of jump ups!
Cat @Breakfast to Bed says
yeah, it’s a brand new gym, so we have platforms. It’s a real “love/hate” thing. He used to be a marine, so he’s intense. we’ve had pukers.
chelsea says
I’m really excited to read the one about blogging & money :)!
Julie H. of Spinach and Sprinkles says
I did 50 squats in a row with my 3rd graders this morning—there was an educational value, I promise. We should talk about muscle fatigue or something smart like that!
HA! They are tired and in music right now!
Shannon says
There is nothing in this world better that a greasy diner breakfast!
*droooool*
Sylvia @ Frolic Through Life says

Elizabeth says

I really am gonna try and step up the weight training now that i’m all signed up for a fancy gym again, i cant wait. also looking forward to your next Blog Talk Tuesday post! 🙂
Erica @ For the Sake of Cake says
Mmm the breakfast looks delish! I’ll definitely have to try my hand at making the breakfast potatoes!
Shaun @ snackasaurusrex says
I love homefries, but every time I try to make them, either I don’t cook them long enough and they’re still raw or I cook them too fast and they’re a little burned 🙁 I guess I just don’t have the touch or the patience.
As a new blogger and new reader, I’m really looking forward to your Blog Talk Tuesday!
Amy @ ElephantEats says
Man, your workouts always sound so intense and effective! I need to start doing them. I got engaged yesterday so it’s time to seriously get my butt in gear before my wedding 🙂
Joelle (On A Pink Typewriter) says
Mmm, I love homemade breakfast potatoes! Sometimes on Friday nights growing up, my mom would make sauteed potatoes and scrambled eggs, sometimes with peppers. Delish! Also, can’t wait for the freelancing blog talk!
RunEatRepeat says
I’ve totally been craving a legit diner breakfast! My homemade attempts never come out that good.
Casey @ Pocket Full of Sunshine says
Can’t wait to read the rest of Blog Talk Tuesdays Julie. The series has been great so far!
Rosa - Fitness, Food, Fulfilled says
I’m totally going to start incorporating the 100 squats into my routine tomorrow. I really need to build up more leg strength for my marathon training so I can kill the time.
Looking forward to the freelance portion the most. It’s something that has always interested me, so it would be nice to hear (or read 🙂 ) what you have to say.
Erin @ Girl Gone Veggie says
I’m so excited you’re bringing blog talk Tuesdays back! I love them!
I don’t know if these have already been covered, but as a new blogger, I was wondering:
-How/where are the best places to promote your blog.
-How to get ads set up on a blog. I have a google adsense account but am not sure what to do with it, how to find advertisers, and where to place them on my blog.
And that breakfast looks amazing! I love breakfast potatoes.
kathleen @ the daily crumb says
i started incorporating squats, but am not anywhere close to 100… yet! for some reason, squats hit me in day-after soreness more than any other exercise. i swear i could do 400 bicep curls (ok probably not) and 20 squats would leave me in more pain!
love the restaurant-style at home breakfast 🙂
Cindy @ The Flipping Couple says
I love your squat challenge!! Are you doing back squats or front squats?
Olivia @ PeanutButterNerd says
Those homefries look awesome – that’s I always used to make them, but we would add minced green pepper and onion to emulate one of our favourite diners.
Hilliary @ Happily Ever Healthy says
Breakfast looks amazing, I love breakfast potatoes!
Liz @ Tip Top Shape says
100 squats?! Sounds like so many!
Kimberly says
Eeek I did one of your arm workouts today and it felt great, but I can already tell that I won’t be lifting my arms too easily in a few hours!
I am definitely with you on the idea of focusing on one body part, arms or legs, and I am making a workout schedule right now based on it! thanks for the inspiration (and the workouts!) I am gonna try and conquer the 100 squats tomorrow…When I was playing soccer in college, I was able to max out at 212 lb squats! I never wanna go back to that, but I know I have the strength to do 100 at least! I’ll let you know when I can NOT walk on Wednesday!
Lauren @ Sassy Molassy says
One thing I’d love you to address is how to START getting freelance work. They always want sample work and even as a journalism major, I never had anything really published per say so it’s tough to start somewhere. Would just like a variety of ideas. I know that I can write a sample story, but are there other options/suggestions you have? Thanks!
Tichina says
Hey Julie! I was noticing how you’ve replaced your body pump classes by focusing on one body part at a time. If you’re anything like me, not having an instructor help move you along and the company of fellow class members can make workouts a bit blaahh day after day. So, I thought I’d share some recent info I found out from a personal trainer (I too am making the switch to split workouts). Although body pump is a good class for people to learn the basic exercises it’s more of an endurance/cardio workout than an actual conditioning workout. I was told you will get better results, leaning out and toning, when you concentrate on the individual body parts…. who knew?! I can’t speak on experience yet, but I’m giving it a shot!
Enjoy your day 🙂
Nicole says
I am focused on stretching this week, especially my hips. Do you have a stretching routine?
Could you (or maybe you have) talk about the conferences and conventions you have attended or been invited to.
Thanks!

Meg says
I love making breakfast potatoes! WIth lots and lots of ketchup!
Heather says
Julie, I am drooooooling looking at those potatoes. May I please have some? (;
I also want to thank you from the bottom of my heart for doing these Blog Talk Tuesdays. Being a student and just starting up my blog, this is SUCH an asset for me, as I really do want to make something of a living off blogging and freelance writing once I graduate. You inspire me to believe it is possible.
Stay lovely,
Heather
Yolie @ Practising Wellness says
What an awesome workout, Julie! 😀 And sooo many squats! You’re a beast, lol! 😛 xyx
