I am all for recipes that make dinner as easy as possible. This recipe may be the simplest chicken recipe I’ll ever share on the blog! It includes a tasty marinade that can be used for everything from chicken and pork to shrimp and grouper. It’s easy to throw together in the morning and requires ingredients you likely already have at home!
Easy Baked Chicken
PrintEasy Baked Chicken
- Yield: 6 servings 1x
Description
This recipe for Easy Baked Chicken is incredibly simple and perfect for busy weeknight dinners. It is also a great recipe to prep ahead on Sunday evenings and tastes fantastic as leftovers! Make a big batch of this chicken early in the week so you can enjoy it on top of salads, in wraps or sandwiches all week long!
Ingredients
- 6 chicken breasts
- 1/4 cup reduced sodium soy sauce
- 1/2 cup oil (we used canola oil)
- Juice of one lemon
- 1 tablespoon oregano
- 1 teaspoon garlic salt
Instructions
- Place chicken into a one gallon-size freezer ziploc bag.
- Add all ingredients to the bag, seal tightly and shake and squeeze the bag so all of the ingredients mix together and chicken is coated in the marinade.
- Place bag in the refrigerator until you are ready to bake the chicken (ideally letting it sit for no less than four hours).
- Preheat oven to 350 degrees. Remove the chicken from the bag, placing it into a baking dish coated with cooking spray. Discard remaining marinade.
- Bake for 45 minutes and serve with your favorite sides!
The recipe is easily adaptable. You can add more soy sauce if you want and play around with the measurements. And think it would be great to change around the spices, using rosemary in place of the oregano or something similar.
The chicken was incredibly flavorful and very moist — no dry chicken breasts here! If you decide to give it a go, I hope you enjoy this recipe as much as we do in our house!
And here’s a quick recipe video so you can see for yourself just how easy this recipe is to make:
YUMMMM this sounds INCREDIBLE! And I have everything to make it! Tonight’s dinner!!!
Looks delish! I used soy sauce on some white fish the other night and it was so good!!
Love! Easy chicken recipes! Perfect quick dinners!
This looks awesome. I am getting the stuff to make this marinade this weekend and putting it on the menu for next week!!
Woohoo!! Enjoy!
Mmm! This looks delicious, and super easy. I’m all about easy meals.
If you decide to give it a go, I hope you like it!!
Every time you mention Jazzercise on here, I think of watching Mousercise as a kid. Did you ever watch it?! The funny thing is, I always watched it early in the morning, sitting on my couch and wearing pajamas! I should watch it now as an adult and actually DO the workouts with Mickey and his crew…
This is such an easy looking recipe! Can’t wait to try it!
I’m always looking for good marinades I can make out of what I already have on hand, which is ALL of the above! Yay! Thanks!
This looks great and so easy! Enjoy Jazzercise and the rest of your time with Mom! <3
P.S. Seeing that green Fresh Market logo on the chicken reminded me how much I MISS that place! I’m a huge fan of their pumpkin coffee and every fall my Mom sends me a package. Currently enjoying a cup of it right now. 😉
I LOVE that flavor, too!! Have you tried their peppermint crème coffee? That is my all-time favorite. 🙂
Nice! My favorite easy way to cook chicken is in the crockpot. All you do is put it in the bottom (either breasts, or thighs, or an entire chicken even!), cover with chicken broth, season and set to low for 8 hours!
Love this idea! We do this a lot with turkey breast, but no marinade. Although then we are eating it for like 3 days and we start to run out of ideas about how to jazz it up! Getting enough protein for me is always a struggle….
Thanks for the quick recipe! Chicken is my favorite meat, but it gets repetitive after awhile and I’m always looking for new ways to make it. I also love making a lot of it to use throughout the week. Have a good Jazzercise class!
This does look super easy!
I have not done a soy sauce marinade in a while. I will be putting this idea to use for our meal planning next week. Hope you have a blast working out with your mom!
looks delish! thank you!
I have been using coconut aminos in place of soy sauce. I picked it up at Whole Foods recently and I love it. Thanks for sharig your recipe!
Sounds great! Will def. try! I’m thinking sweet potato as a side with this! thanks for sharing 😉
I love easy, go-to recipes like this. Thanks for sharing!
I love easy and quick recipes! I wish my oven was working UGH
Hope it gets fixed soon!
Chicken has always been our go-to for easy meals! I’m a fan of chicken based casseroles to munch on throughout the week, but that’s a terrible southern thing 😉
Awesome, I love these fast and easy recipes. Especially these are perfect for packs of Costco chicken.
Yum! Can’t go wrong with a chicken dish. Have fun with your momma!
This recipe looks easy and delicious – just the kind of recipes I like!! 🙂
Wonderful idea! You’re right – this would be perfect to make on a Sunday to use throughout the week.
Yum! Putting this on the menu for next week!
Yummo! Baking is a great option which I wish I would have remembered the other day when I went out to the patio only to find the gas in the grill was out.
This sounds awesome! Thanks for sharing! And have fun at Jazzercise!
Simple meals are usually the most delicious. Not to mention, that after a hectic day at work, I’m all for anything that is quick and easy to put together. One pot wonders for the win!
i AM having a great day so far because it’s my birthday ! 🙂
I really appreciate this recipe because I always have a really tough time cooking chicken. I usually overdo the outside and then the inside still isn’t done. I’ve never understood the whole “cook on the stove and the finish in the oven” thing but I really do love chicken. At least now it’s crockpot season and it’s really tough to mess up crockpot chicken haha
Heck yessss! LOVE the crock pot! 🙂
This looks like a great recipe! I am.going to.have to try this on a sunday so i can have it for lunches or dinners throughout the week. Thanks
Baking chicken is so handy! Try sticking some veggies underneath and searing the chicken first (ideally skin on) in butter for a crisp layer and bit colour!
That sounds fabulous! Great recommendation. Thanks, Michelle!
YUUMM!! Can’t wait to try this! Love dishes that are easily prepared early in the day! Life gets busy quickly!
YUM! I am so making this for dinner soon!
Always looking for new chicken recipes. Thanks for sharing.
I never think to use soy sauce on baked chicken! I wonder if this would work in the crockpot?
Nothing beats a simple and delicious meal.
Omg, this is so perfect for a college student like me! Thank you for this recipe!!! 🙂
I have been avoiding chicken lately! This recipe looks incredibly simple and delicious! Thank you for the idea of making ahead and using during the week for lunches!
this sounds so yummy! I am really into making meals in advance and then freezing them to cook later. Do you think this would be a good freezer meal?
Looks good!! Dry chicken is the worst.
oooh love this- looks so easy! My bf and I usually do bbq or buffalo sauce on our baked chicken, but this sounds like a good switchup! thanks Julie!!
This looks so easy!!! I am always looking for new ways to cook chicken.
Delicious! Made this for tonight in the crockpot. Just added a little chicken broth!
I made this for dinner last night. The chicken was perfectly cooked and absolutely delicious! Thank you so much for sharing. My whole family enjoyed this recipe, husband and kids!!!
Hi Julie,
I have used this recipe several times now and I can’t thank you enough! It is so delicious and so easy to make. And my favorite part about this recipe is that the ingredients are items I keep in my kitchen on a regular basis!
