Easy ‘n’ Healthy Chicken Fingers

Apparently I am on a three-ingredient kick.

First, it was my three ingredient pumpkin cheesecake mousse yesterday and now it’s three ingredient chicken fingers!

What can I say? I like things simple!

To begin, grab some raw chicken tenders.

You can usually find these alongside the chicken breast meat… and it’s typically cheaper! Win!

Then, grab two bowls. Crack a couple of eggs in one of the bowl and whisk away until you have bowl of yellowy egg goop (that’s what it’s called in the cooking world 😉 ).

Fill the other bowl about a quarter of the way full with Italian breadcrumbs.

First dredge each chicken finger in the egg mixture before immediately rolling it in the Italian breadcrumbs. Completely coat the chicken tenders in the breadcrumbs before placing on a cookie sheet sprayed with cooking spray.

pumpkin cheesecake mousse 042pumpkin cheesecake mousse 043 Bake the chicken tenders at 350 degrees for 15 to 20 minutes, or until the chicken is fully cooked.

Serve the chicken fingers with your favorite dipping sauce (ketchup, BBQ sauce, honey mustard, etc.).

pumpkin cheesecake mousse 076 Ryan, Sadie and I split these chicken tenders between the three of us. We all give them two enthusiastic thumbs up. Well, Sadie doesn’t, but that’s only because she doesn’t have thumbs. 😉

    do you have cooling racks for baked goods? put them on top of a cookie sheet and bake your chicken tenders on those. that way the bottoms get crispy too.

      Not to be a comment creeper, but I came here last night to review the recipe before making these for dinner. I used Tracy’s tip with the cooling rack, and it worked like a charm! Perfectly crispy on both sides. 🙂

    mmm chicken fingers are my fave!! sometimes instead of breadcrumbs, i dip them in a bowl of parmesan cheese with dried basil or oregano. It is SOOO good and smells delish while they’re baking 🙂

    I do the same and love them – but add a good deal of parmesan to the Italian bread crumb mixture. It’s the base for our chicken parmesan dinner.

    You can also do this with corn flakes that you’ve crushed in a food processor. I coat my chicken tenders in dijon mustard instead of egg. It’s really good!

    I do this a lot only I use milk to dredge instead of egg. The chicken turns out so tender! Like Bonnie, I use it in chicken parmesan.
