It’s comforting.
It’s like home in a bowl.
It makes the whole house smell fantastic.
Clearly I’m on Team Soup!
Ryan, on the other hand, finds soup to be less than thrilling. To him, soup is an appetizer and leaves much to be desired. He thinks it needs more stuff.
When autumn arrives, I inevitably go on a soup kick. Though I’d love to curl up with a hot bowl of soup by the fire, eating a bowl of soup in Florida in the 80-degree fall weather means sweating at the dinner table.
But I cannot help myself.
It’s October and it’s hot outside, but this year’s soup-makin’ kick is in full swing!
And guess who gave my most recent soup recipe a thumbs up? Ryan the Soup Hater.
Last night I set out to make a chicken soup that we both would love. I added lots of vegetables (for me), lots of chicken (for Ryan) and minimal broth so it was extra chunky and more substantial.

That soup looks so good! I’m a sucker for any soup. I can’t get enough of it in the colder months!
Lauren @The Homeostatic Mindset says
I feel like Ryan too…I need lots of protein for soup to fill me up. This looks yummy!
Natalie @ Free Range Human says
I live with a soup-hater too! Perhaps this is just the thing to convert him 🙂
Hope @ With A Side Of Hope says
I love soup! My husband is actually on board with soup for dinner most of the time as long as it has substantial ingredients in it. This soup looks delicious! Definitely going to have to make it one night for dinner 🙂
Amanda @ Romancing the Unusual says
I LOVE soup! I have been craving it for a couple of weeks now. The weather just took a turn for the cold here so maybe it’ll be a soup kind of weekend!
Kim @ Raising The Barre says
Yum yum! I too love soup- just made a delicious soup last night in fact! And my bf also hates soup…what is it with guys and hating soup? Apparently “hot liquids” aren’t his thing. (He’s still drinking iced coffee and we live in the midwest!)
Ashley @ My Food N Fitness Diaries says
Yum! My husband is the same way with soups, but he gets them regularly during the cold months whether he likes it or not. 😉 I’m sure he’d be a fan of this one though since he says that if he does have to eat soup, he likes it “chunky”.
Jenica says
This sounds good! I really dislike broth for some reason, so I always make my “soups” extremely chunky and with very little broth.
Brandy says
I love homemade Soup! Jacob also doesn’t eat much soup, but he WILL eat this healthy tortilla soup recipe that my friend gave me. Might be a good one to try with Ryan?
– 4 boneless, skinless chicken breasts
– 2 15oz cans of Great Northern beans (white beans) OR black beans
– 2 16oz jars of salsa – I use the Herdez medium
– 2 t. cumin
– 4oz grated cheese – I use the 2% Mexican blend
– 1 can of corn (or fresh or frozen)
Cook chicken breasts in boiling water until cooked through. Remove from water, reserve stock. Once chicken has cooled, shred chicken with a fork. In a pot, combine beans, salsa, cumin and cheese. Add chicken, some of the chicken stock water, and simmer for 1 – 2 hours. This will be very thick. Use reserved stock(you can use chicken stock from the store) to thin to desired consistency. Serve with grated cheese, sour cream, chives, green onions, tortilla chips…

this sounds amazing!!! jotting it down now!

My grocery store recently had bread bowls as the item of the week. I picked two up in hopes I could get an easy soup dinner out of it … I think I did a good job of tricking my bf into having soup for dinner as he enjoyed carving out the “bowl” part and picking apart the bowl as he ate. He was actually stuffed after. Soup success!
Ellie says
He doesn’t like soup?! Haha its one of my faves n I eat it even when its like 90 deg. Weather 😛 yours looks delicious 7
Erika says
I think I could eat this. I’m with Ryan on the soup thing though I am slowly starting to like it more, but it has to be thick.
Beks says
I’m on a soup kick myself lately. It’s just so dang cold in Iowa! But I do believe there is a time and a place for soup. And while I’ve had cold soup before (Asparagus Soup on the Carnival Fascination!), it’s not my favorite. Soup is a fall/winter treat.
That said, might have to give this a whirl sometime soon. It’s DEFINITELY soup weather (or Stoup, as Rachael Ray would say, because that could be soup OR stew!)
Michelle @ Eat Move Balance says
Strangely enough, I’ve never made a simple chicken soup. But just last night, I told my husband that it’s something I’d like to do within the next few weeks! So, perfect timing! Especially, because I do like soup to be on the heartier side (which is why I usually do chili). Thanks!
Sabrina says
I love soup! How can anyone be against such goodness?
Since Hurricane Sandy is blowing everything around on the East Coast, I have opted to stay home and make a pot of Smoked Gouda Chicken Bisque. Hopefully I can perfect it and get a recipe posted soon.
Amanda @ Eat More Rabbit Food says
Soup is so great for fall! My hubby will eat soup as long as it is a side item and not the entire meal.
Ellen @ Wannabe Health Nut says
Yum that looks so hearty and fresh, too! I love hot, easy meals in the fall and winter.
Jess @ JessieBear What Will You Wear says
“ryan the soup hater” is probably my favorite thing ever.
Kaykay says
wheres all the spices?! seems a bite boring without them!
julie @ peanut butter fingers says
you can definitely add more spices if you’re craving more flavor, but i honestly found it flavorful enough from all of the veggies, broth and pepper. what spices would you add? i’d love to experiment with more spices in the future!
Sarah. says
I’d first start with SALT!
The recipe is more like boiled chicken breasts with veggies, with no salt or seasonings!
peanutbutterfingers says
the chicken broth i use already has a lot of salt, so i really didn’t think it was necessary. adding more salt would’ve been too much for me, but definitely season to your own taste!
Stellina @ My Yogurt Addiction says
Love the last sentance! I loveeee soup, but I agree that chicken soup should have a lot of chicken, otherwise it might as well be vegetable soup! Haha
Khushboo says
I’m with you! Soup is the ultimate comfort meal in winter!
Amanda says
I LOVE soup! My fiance and I started a tradition of “Sunday soups” last fall/winter where we take turns picking out a soup recipe, make it on Sunday, and enjoy it while watching football and cozying up! We love to get a crusty loaf of multigrain bread for dipping, too!
Annette@FitnessPerks says
My husband’s the EXACT same way as Ryan. He’s always like “this is not a meal. It doesn’t fill me up.”
Gotta try this one out on him!
Amber @ Busy, Bold, Blessed says
I’m a picky soup eater… but this looks like it’s speaking my language! I love chunky soup.
aj says
Interesting, I’ll have to try it sometime. I’m not much of a cook (at all) but this looks simple and doable.
So you can put the raw chicken breasts in the broth for 25 minutes and it cooks up? I didn’t know that, ha. I’ve always been a griller or stovetop.
How many servings? I assume 2?
julie @ peanut butter fingers says
yes! they’ll cook right in the broth and you can shred them with a fork before tossing them back into the soup. and yes, two servings!
Tara says
Looks REALLY good, but I’m on Ryan’s side!!! Soup just…doesn’t do it for me? haha Hope you enjoyed yours 🙂
Taylor says
This is so weird. I literally made the exact same soup last night… Crazy!
Christina says
This may be a dumb question, but you cook the raw chicken in the broth? and then shred it and put everything else back in the broth to cook?? Just double checking, because I’m definitely making this!! And just don’t want to get us sick!! Thanks for the recipe!
julie @ peanut butter fingers says
yes!!
Liz @ Southern Charm says
I’m for the chunky soups too. Something about chewing makes me think I’m eating more?! Haha. Whatever works 🙂
Hannah @ CleanEatingVeggieGirl says
This looks great. I think I will attempt to make a vegetarian version of this using Better Than Bouillon “No Chicken” soup base and chickpeas instead of chicken…has my mouth watering just thinking about it!
Elizabeth says
We have the same issue in Arizona! I want to get on the fall bandwagon; wear boots, drink warm beverages, hangout by a fire, even wear a jacket and of course, eat soup! But all of that means sweating my booty off when it’s in the mid-80s. At least the suns out 🙂
Paula @ Eat: Watch: Run says
I am also a hater of soup so I can sympathize with Ryan. They say it’s supposed to help fill you up, but it never does. Why don’t you do what you say you’re going to, Soup?
Soup haters unite!
Suzanne @ Fit Minded Mom says
My husband would be in BIG trouble if he didn’t like soup because I make ALOT of it in the Fall/Winter time. My favorites are potato soup and chicken and dumplings which are both really hearty and filling.
Brittany @ Proteinandpumps.com says
oh definitely team soup! That looks yummy!
Jen says
Where are the seasonings? Sauteing the vegetables first will bring out much more flavor too!
peanutbutterfingers says
i feel like it had plenty of flavor from the veggies, salty broth and pepper, but you can absolutely sautee the veggies first!
Bek @ Crave says
I like soup but I always worry that it won’t be filling enough, so I love it when the soup has beans, wholegrain pasta or plenty of vegies! Oh or lentils, quinoa and couscous etc
Jennifer says
I completely understand w/ the hubby. I find my hubby will usually eat a select amount of “soups” if they are 1) hearty and 2) mostly thick like a stew.
Here’s a really filling, really healthy “cozy” dish—>
LENTIL CHILI….tastes just like chili, but SUPER healthy!. Just try it!

Lauren says
The chunkier soup the better!! I always need some texture in my soups so this sounds ideal!
Anne says
I have to admit I am in the minority with Ryan on this one. Soup is good, but I get more saftisfaction out of biting and chewing my food. (wierd I know)
Mel says
I love soup. It’s so comforting and warm!
Nicole says
I live with a soup hater. Well, he doesn’t hate. But he definitely doesn’t think soup is a meal the way I do. And I get in the same soup mood in the fall.

I’m glad I wasn’t the only one skeptical about cooking the chicken IN the broth. I was just researching this the other day, and all these years, I’ve been cooking my chicken before adding it to soup. I make this same recipe, only I add egg noodles to mine so there is nothing left to long for. Very comforting food. LOVE soup weather!
Lena says
I sometimes find that soup doesn’t fill me up in the same way as a ‘proper’ meal – but this one looks yummy and filling! I’ll have to try this recipe for dinner one night next week, hopefully I can get my husband to try it too 🙂 He is very fussy with food, which makes trying new recipes..interesting!
Katie @ Peace Love & Oats says
Haha I bought similar ingredients to make chicken soup as well! I’m so excited to make it, although I’m using my crockpot!
Sam @ Better With Sprinkles says
My boyfriend’s in the same camp – not a big soup fan! I love it, either as an appetizer or a chunky soup as a main meal.
Mo says
My hubby is the same as Ryan and is NOT a soup fan, but if I add extra meat to the soup, he loves it!
Marissa says
Oh i’m definately a soup LOVER 🙂 as soon as fall hits I’m in soup mode … they can be thick and creamy or broth-based and I do not care.
However, when I tell my guy I making soup for supper he’ll ask if we have any leftovers ….
Laura @ Laura Lite says
I love soup, but I do sometimes feel like broth-based soups aren’t very nice. This one looks lovely though! Easy and full of hearty vegetables and fresh chicken. Think I might cook this for dinner today.
Ashley @ Sweat for Sweets says
Looks awesome! I love love love homemade soups 🙂
