Last weekend Ryan’s good friend Ben was in town. We went out to eat a lot during his visit, so by the time Sunday morning rolled around, we were in the mood to eat breakfast at home. I ended up preparing a fiesta frittata that we all greatly enjoyed. It’s packed with vegetables, delicious and quite filling!
A few weeks ago, I agreed to try out a sample of Pete & Gerry’s organic eggs through a campaign with BlogHer and put them to use in this frittata.
The family farms that supply the eggs sold by the Pete & Gerry’s are all Certified Humane® meaning the hens that produce the eggs will always have ample space and shelter in clean, well-ventilated barns, gentle handling (to limit stress), freedom to live like hens do naturally, nutritious high-quality feed free of antibiotics or hormones and continuous access to fresh water.
Without a doubt the eggs elevated the flavor and made the frittata taste incredibly fresh. And we all felt good about eating eggs that are certified organic and come from cage-free hens.
To amp up the flavor of the frittata even more, I added some of my favorite flavorful fresh veggies and incorporated black beans and whole grain rice into the dish to make it taste a little heartier since it was supposed to feed me and two hungry guys!

Description
This Frittata is packed with vegetables, delicious and quite filling!
Ingredients
- 6 Pete & Gerry’s organic eggs
- 1/2 can black beans (rinsed and drained)
- 1/2 cup brown rice
- 1/2 cup shredded cheese
- 1/2 small yellow onion, diced
- 1/2 tomato, diced
- 1/2 large bell pepper, diced
- 1/4 teaspoon garlic salt
- 1 teaspoon butter or olive oil
- Optional toppings: Avocado slices, pico de gallo, salsa, plain Greek yogurt
Instructions
- Whisk eggs together in a large bowl. Add black beans through garlic salt.
- In a large skillet, heat butter (or olive oil) on low to medium heat. Pour in egg mixture.
- Cook on low to medium heat until eggs begin to set (approximately 15 minutes.)
- Reduce heat to low and cover with a lid until the top of the frittata fully sets.
- Slice immediately and serve with desired toppings. Enjoy!
We topped the frittata with avocado and thought it was fabulous! Next time I’ll also try serving it with pico de gallo and a spoonful of plain Greek yogurt.

Lately my favorite way to eat eggs is soft boiled over toast with coconut oil. Simple and yummy!

Eggs are a staple in our house. Me and my kids eat them about 5x a week. They eat scrambled and I usually make my own healthy version of an egg mcmuffin, usually with turkey bacon 🙂

I love to use frozen stir fry veg with scrambled eggs. That way I get in some veggies in the morning and start my day off right. There is such a difference between cage free eggs and non cage free. It’s amazing!
I recently started making mini frittatas in the oven with a cupcake tray! SOOO GOOD!

I love small farms that take care of their food and animals. I actually get my beef and pork from a local farm that grass-feeds their livestock.

My favorite way to enjoy eggs is a egg white and turkey bacon scramble! I then toast an English muffing and make a breakfast sandwich! so yummy and filling, and full of protein after a hardy morning workout!
I think it is SO important to support small family farms, as this leads way for the best quality products. I much rather purchase produce, products (really anything for that matter!) locally, or from a family farm, as I know love and passion is entered with each and every item sold.
Love the recipe! I make a Frittata almost everyday. Current favorite is spinach and goat cheese. We love that there is a local farm within 20 minutes from us. You can truly tell the difference in the taste of farm fresh eggs.

I love supporting small family farms because I grew up on one! There is nothing like the reward of fresh eggs daily, fruits and vegetables from the garden, and knowing exactly where everything on your plate came from.
A favorite in our house is to scramble eggs with onion and green pepper and cheese!
Love hardboiled eggs for snacks or a frittata. My currently favorite is red pepper and feta, but yours looks delicious !

I love egg sandwiches on toasted english muffins
This looks delicious!! I’m going to have to try making frittatas since I am awful at omelettes! I always over stuff them so I can’t flip them! They may not look pretty but at least they still taste good!

My favorite way to enjoy eggs is fried/sunny side up alongside an organic veggie patty, 1/2 an avocado, and salsa or ketchup, all on top of a big bed of greens 🙂 But more importantly, it is so important to me that the hens who provide eggs are treated really well. I’ve seen a few documentaries (and cried through most of them), and when I learned that even the disclaimer “Free Range!” doesn’t necessarily mean that the hens in that particular facility had a lot of room to be comfortable. And no farms that I know of boast about gentle handling, which I’m sure is a huge factor to the overall happiness of the hens! I am writing down the name of this family farm for all my future purchases – thank you so so much for sharing Julie!

Amazing! Huge fan of ethically sourced food. I was a long-time vegan before I began eating eggs again, and although I now eat eggs and dairy, I am committed to ensuring that the animals are treated like living beings, and not as industrial objects. Thanks to all companies and organizations that make it possible for those who really care about this issue to feel like eating dairy and eggs can be an ethical choice!
As a veterinary student I’m very aware of the unfortunate reality of so many production animals – including chickens. While there is some legislation out there to protect them, it never seems to be enough, which is why supporting farms that are dedicated to humane treatment of their animals is of the utmost importance to me! We’re all sharing this planet, and I think we ought to give proper care and respect to the animals who provide for us every day!

Anytime small farms and farmers can be supported I do it! Factory farming is so bad in our country and so inhumane!

Overeasy egg on a piece of toasted bread with hot sauce. Simple and delish! My husband and I used to have chickens and the fresh eggs were always the BEST! Doesn’t get better than natural and local.
I grew in Lancaster County, PA (also known as Amish Country!) and I am used to fresh eggs and produce that come from farms that I can see the animals roaming freely and no pesticides are used. I enjoy supporting small, family farms that use sustainable and humane methods because it is kinder to the animals, and you can’t beat the freshness of their food!

I love making egg scrambles with pineapple & ham- so delicious! I think it’s important to buy eggs and other food products to support small, family farms because I like knowing where my food comes from, especially when it is coming from a safe, clean environment.
Omelettes all the way!! Ham or turkey with cheese, spinach, avocado and a little bit of hot sauce! I always loved the omelettes my mom would make; I called them “mom-lettes”! 🙂
