Last weekend Ryan’s good friend Ben was in town. We went out to eat a lot during his visit, so by the time Sunday morning rolled around, we were in the mood to eat breakfast at home. I ended up preparing a fiesta frittata that we all greatly enjoyed. It’s packed with vegetables, delicious and quite filling!
A few weeks ago, I agreed to try out a sample of Pete & Gerry’s organic eggs through a campaign with BlogHer and put them to use in this frittata.
The family farms that supply the eggs sold by the Pete & Gerry’s are all Certified Humane® meaning the hens that produce the eggs will always have ample space and shelter in clean, well-ventilated barns, gentle handling (to limit stress), freedom to live like hens do naturally, nutritious high-quality feed free of antibiotics or hormones and continuous access to fresh water.
Without a doubt the eggs elevated the flavor and made the frittata taste incredibly fresh. And we all felt good about eating eggs that are certified organic and come from cage-free hens.
To amp up the flavor of the frittata even more, I added some of my favorite flavorful fresh veggies and incorporated black beans and whole grain rice into the dish to make it taste a little heartier since it was supposed to feed me and two hungry guys!

We topped the frittata with avocado and thought it was fabulous! Next time I’ll also try serving it with pico de gallo and a spoonful of plain Greek yogurt.

I love my eggs poached easy, so the yolk runs everywhere. I live in a small rural town, so on a daily basis I see the love and care small farmers put into their work and their products. Support for these farmers has a real and direct impact on their lives, which is why we always try to buy a “small” as possible.

I purchase local eggs and my kids have grown to be egg ‘snobs’ when they see supermarket eggs. There is just no comparison. I love to scramble my eggs with spinach, feta, and a pesto seasoning. YUM!

i love this giveaway! I have always been one for fresh farm eggs.. they taste so much better. I just found I am pregnant a month ago so I have been stepping up my nutrition, so I have been eating eggs scrambled with spinach and cheddar cheese daily! they are so good for me and baby:)

Omelettes for sure!!! 🙂

I love hard-boiled eggs! Since I saw it on Pinterest, I’ve made mine in the oven and it’s super simple! All you do is set the eggs in a muffin pan, put them in the oven at 325 degrees for 30 minutes, then cool them in a bowl of ice water. They are really easy to peel and are delicious! I’ve found that six eggs per batch is the best way to go because sometimes they are undercooked if you do a full dozen! 🙂

I like my eggs scrambled with zucchini, carrots, peppers, and broccoli.

I eat eggs most every morning and I love them scrambled with veggie and ham with a side of avocado on toast!

I’m a good ole fashioned scrambled eggs gal. But I do love farm fresh eggs – there is definitely a difference in taste! I like to add seasoning and salsa to the top!
Deanna says
I think the closer to home that the food originates, the better it tastes. Might be in my head, but fresh always trumps cost.
Jessica Narlis says
I love plain old fried eggs on a toasted bagel with bacon & of course cheese. But recently have used eggs to make pasta carbonara & it’s really important to use fresh good quality eggs in that dish!!
Neil says
Julie, that looks yummy!!! My wife and I have come up with a great breakfast that includes eggs, but it is always evolving. We just call it the Egg Dish. It includes bacon, whipped eggs, spinach, cheese, and potatoes. We cook all the ingredients except the eggs in a large skillet then we add the eggs to the mixture and bake it at 350 degrees for about 15 minutes. We also use small farm fresh eggs. My fellow PE teacher has chickens and we get eggs from him. No chemicals or growth hormones, just fresh all natural eggs.

Eggs in a basket!! It’s how my dad used to always make them for me growing up. It always makes me think of him when I make them. Although they never taste as good as his did! I think some people call them one-eyes or egg in a hole? So many different names. It’s a fried egg in a circle cut out of the center of a piece of fried bread. mmmmm
