Last weekend Ryan’s good friend Ben was in town. We went out to eat a lot during his visit, so by the time Sunday morning rolled around, we were in the mood to eat breakfast at home. I ended up preparing a fiesta frittata that we all greatly enjoyed. It’s packed with vegetables, delicious and quite filling!
A few weeks ago, I agreed to try out a sample of Pete & Gerry’s organic eggs through a campaign with BlogHer and put them to use in this frittata.
The family farms that supply the eggs sold by the Pete & Gerry’s are all Certified Humane® meaning the hens that produce the eggs will always have ample space and shelter in clean, well-ventilated barns, gentle handling (to limit stress), freedom to live like hens do naturally, nutritious high-quality feed free of antibiotics or hormones and continuous access to fresh water.
Without a doubt the eggs elevated the flavor and made the frittata taste incredibly fresh. And we all felt good about eating eggs that are certified organic and come from cage-free hens.
To amp up the flavor of the frittata even more, I added some of my favorite flavorful fresh veggies and incorporated black beans and whole grain rice into the dish to make it taste a little heartier since it was supposed to feed me and two hungry guys!

We topped the frittata with avocado and thought it was fabulous! Next time I’ll also try serving it with pico de gallo and a spoonful of plain Greek yogurt.

I just love a good old soft boiled egg!!
I love to make healthy omelets with lots of veggies and some low fat cheese on the weekends!
It may be a little boring, but I loveeeee a good veggie omelet, no cheese, absolutely has to have mushrooms and spinach amongst other veggies, and liberally topped with a flavorful hot sauce (Franks or Sriracha are my faves!), a little salt, and tons of pepper. Sometimes I like to make “sweet” omelets by mixing some cocoa powder, stevia, and cinnamon into egg whites and topping with peanut butter, but those creations mean I have to waste a yolk lol.
I absolutely love egg salad, especially made with Greek yogurt. And I enjoy scrambled eggs almost every morning!

I love scrambled eggs topped with avocado and goat cheese!
I think I like eggs best over easy soaked up with some healthy bread. I haven’t eaten organic, cage free eggs often, but when I do, I have definitely noticed a difference in the flavor. They really are better!
I like my eggs just scrambled, with a piece of toast.
I currently love scrambled eggs with fresh hummus when cooking for myself. When I have a group, egg bakes with cheese and veggies are perfect. I will be trying the frittata!
I love scrambled eggs with tons of veggies: spinach, mushrooms, peppers. Really anything I have on hand!
My favorite are probably fried eggs, but honestly I don’t really discriminate 🙂
I eat at LEAST one hardboiled egg per day, if not more! Eggs are great in every form though 🙂
I have been making egg and veggie “scrambles” like crazy and eating them with hummus! So good! Also, I come from “farm country” and a lot of people I went to HS with live or own farms so I appreciate them as part of the economy and providing deliciousssss local produce! 🙂
I try to buy pastured eggs as often as possible and I can truly tell a difference! I love poached eggs!
scrambled with hot sauce & cheeeeese!!!
I love them over easy or soft boiled!
The perfect egg for me is soft boiled eaten right out of the shell.
I love making egg drop soup! So easy and delicious. 🙂
I love a fried egg on a tomato, egg, and cheese breakfast sandwich. The best!!
Eggs and toast perfect combo!
I love eggs! But my favorite way to prepare is definitely scrambled.
Scrambled eggs…every. single. morning.
Alternatively, over easy eggs on a salad are delicious.
I love eggs any way but recently have really enjoyed poached eggs…also love supporting small, family businesses!
Red beet eggs are my favorite! They might be exclusive to the area I live, but all you do it combine red beets, hard boiled eggs, vinegar and a little sugar and let sit over night!
Farm fresh eggs really make a difference. We buy 2 dozen each week from a neighbor. My favorite is slightly runny or scrambled with cheese!
I’ve been loving eggs in egg sandwiches lately!
I eat eggs multiple times a week and love a good old fashioned omelette.
I like that small family farms nurture the soil and pioneer sustainable growing methods.
I love eggs! There are a few people in my area that raise chickens, so there are always fresh, cage-free eggs here!
I’m a big supporter of small, sustainable farms. That’s why my husband and I chose to have our wedding on a small organic farm in WA!
Hard-boiled eggs are my favorite, I love using them as toppings on salads!

I just love scrambled eggs mixed with lots of veggies (and cheese, of course!)
My husband actually took a poultry class in college where they tested different diets on different chicks. I saw the chicks, and it’s amazing what different diets actually do the growth and development of the birds! It’s good they have all-natural feed 🙂
Love just plain simple scrambled eggs for a filling breakfast
Love making a big scramble with eggs, potatoes, and veggies!
Love my eggs over medium with rye toast and jelly!

Its important to me, because we need more farms like this. The only way for that to happen is for everyone to start supporting them, and buying from them!
