Last weekend Ryan’s good friend Ben was in town. We went out to eat a lot during his visit, so by the time Sunday morning rolled around, we were in the mood to eat breakfast at home. I ended up preparing a fiesta frittata that we all greatly enjoyed. It’s packed with vegetables, delicious and quite filling!
A few weeks ago, I agreed to try out a sample of Pete & Gerry’s organic eggs through a campaign with BlogHer and put them to use in this frittata.
The family farms that supply the eggs sold by the Pete & Gerry’s are all Certified Humane® meaning the hens that produce the eggs will always have ample space and shelter in clean, well-ventilated barns, gentle handling (to limit stress), freedom to live like hens do naturally, nutritious high-quality feed free of antibiotics or hormones and continuous access to fresh water.
Without a doubt the eggs elevated the flavor and made the frittata taste incredibly fresh. And we all felt good about eating eggs that are certified organic and come from cage-free hens.
To amp up the flavor of the frittata even more, I added some of my favorite flavorful fresh veggies and incorporated black beans and whole grain rice into the dish to make it taste a little heartier since it was supposed to feed me and two hungry guys!

Description
This Frittata is packed with vegetables, delicious and quite filling!
Ingredients
- 6 Pete & Gerry’s organic eggs
- 1/2 can black beans (rinsed and drained)
- 1/2 cup brown rice
- 1/2 cup shredded cheese
- 1/2 small yellow onion, diced
- 1/2 tomato, diced
- 1/2 large bell pepper, diced
- 1/4 teaspoon garlic salt
- 1 teaspoon butter or olive oil
- Optional toppings: Avocado slices, pico de gallo, salsa, plain Greek yogurt
Instructions
- Whisk eggs together in a large bowl. Add black beans through garlic salt.
- In a large skillet, heat butter (or olive oil) on low to medium heat. Pour in egg mixture.
- Cook on low to medium heat until eggs begin to set (approximately 15 minutes.)
- Reduce heat to low and cover with a lid until the top of the frittata fully sets.
- Slice immediately and serve with desired toppings. Enjoy!
We topped the frittata with avocado and thought it was fabulous! Next time I’ll also try serving it with pico de gallo and a spoonful of plain Greek yogurt.

As a vegetarian passionate about the ethical treatment of animals, it’s super important to me that the dairy and eggs I eat comes from organic and/or humane sources. I love to eat scrambled eggs or make frittatas as well!
Eggs are a staple in our household, and I am a huge supporter or buying organic free range eggs. The more you buy of the good stuff hopefully the more your supermarkets will provide. 🙂 I love eggs soo many ways. I would have to say my absolute favorite is over medium with turkey, avocado and sourdough toast (open faced sandwich) but I eat them every which way! 🙂

Runny eggs with toast is by far my favorite way to eat them! Add some bacon and I’m a happy camper.
I love eggs! I like to a put a fried egg on a salad or dip just about anything into an over-easy egg with a runny yoke!

Our family loves eggs, and eats them about a million different ways. We only buy organic, a switch we made about 6 years ago. I remember how hard it was to pay $4+ for a dozen eggs when you could get regular eggs for $1, but we knew it was the right decision for our health and for the humane treatment of the animals.
I switched to buying locally sourced eggs because I watched a video about how hens are treated by the bigger corporations and it just killed my heart. After seeing that I couldn’t consciously buy eggs from them and feel ok about it so I started going to a local market who only sells farm raised, organic, antibiotic free products and produce. This not only helps out the people in my community but it also makes me feel like I’m being more responsible about my food choices.

I’m always a fried egg lover! It’s very simple but my favorite for an anytime meal served with any combination of complements like veggies or a bagel!

Eggs are huge part of my diet. I always look for organic, cage-free and certified humane eggs since happy hens make delicious eggs! Even though these eggs are a little more expensive, they are still a cheap source of good protein. Yum!

I eat eggs for breakfast almost every day so it’s hard to pick a favorite style, but an egg over easy with an apple maple chicken sausage and a slice of toast is heaven – Dippy eggs are a close second 🙂
Supporting small farms that provide excellent care for their animals in absolutely important to me. I feel fortunate that I am able to buy all of my eggs from a nearby farm. The farm is open to the public, so you can see where the animals are living, and it’s clear that their animals are well cared for.
Eggs are a staple in my fridge because they are critical to so many of my favorite baking and savory dishes. My favorite eggy recipes are muffin cup frittatas (perfect for breakfast on the go- I microwave them at work), or fried rice to use up leftover rice and veggies. So glad that you are bringing awareness to the benefits of organic, cage-free eggs.
I eat dippy eggs for breakfast every single day. I never get sick of them, and I get mine from a local farm as well. The flavor is so much better, and I truly appreciate the passion that small farms have for their animals, their products, and their customers. I always try to spend my money supporting them first before the grocery store!!
I love my eggs over easy w/ a side of bacon – I used buy from a known local farm in California, but now that I’m car-free in DC I buy local and cage free from a grocery store.

I always like to make scrambled eggs with diced tomatoes and cayenne pepper. I’ll eat this any time of day, it is so quick and easy!
First, I eat eggs almost daily for breakfast. Second, organic foods free of hormones are important to me due to my belief all of the chemicals and preservatives in our foods cause cancer. I come from a family with 3 cases of female cancers on the maternal side. So, avoiding these chemicals is important to me.
