Last weekend Ryan’s good friend Ben was in town. We went out to eat a lot during his visit, so by the time Sunday morning rolled around, we were in the mood to eat breakfast at home. I ended up preparing a fiesta frittata that we all greatly enjoyed. It’s packed with vegetables, delicious and quite filling!
A few weeks ago, I agreed to try out a sample of Pete & Gerry’s organic eggs through a campaign with BlogHer and put them to use in this frittata.
The family farms that supply the eggs sold by the Pete & Gerry’s are all Certified Humane® meaning the hens that produce the eggs will always have ample space and shelter in clean, well-ventilated barns, gentle handling (to limit stress), freedom to live like hens do naturally, nutritious high-quality feed free of antibiotics or hormones and continuous access to fresh water.
Without a doubt the eggs elevated the flavor and made the frittata taste incredibly fresh. And we all felt good about eating eggs that are certified organic and come from cage-free hens.
To amp up the flavor of the frittata even more, I added some of my favorite flavorful fresh veggies and incorporated black beans and whole grain rice into the dish to make it taste a little heartier since it was supposed to feed me and two hungry guys!

Description
This Frittata is packed with vegetables, delicious and quite filling!
Ingredients
- 6 Pete & Gerry’s organic eggs
- 1/2 can black beans (rinsed and drained)
- 1/2 cup brown rice
- 1/2 cup shredded cheese
- 1/2 small yellow onion, diced
- 1/2 tomato, diced
- 1/2 large bell pepper, diced
- 1/4 teaspoon garlic salt
- 1 teaspoon butter or olive oil
- Optional toppings: Avocado slices, pico de gallo, salsa, plain Greek yogurt
Instructions
- Whisk eggs together in a large bowl. Add black beans through garlic salt.
- In a large skillet, heat butter (or olive oil) on low to medium heat. Pour in egg mixture.
- Cook on low to medium heat until eggs begin to set (approximately 15 minutes.)
- Reduce heat to low and cover with a lid until the top of the frittata fully sets.
- Slice immediately and serve with desired toppings. Enjoy!
We topped the frittata with avocado and thought it was fabulous! Next time I’ll also try serving it with pico de gallo and a spoonful of plain Greek yogurt.

Mmm… love eggs so many ways. Egg Sandwiches and Deviled Eggs are 2 of my favorite ways. But my most favorite way is to make Stuffed Peppers with Eggs, Cheese, Salsa and Ground Sausage/ Turkey Sausage 🙂
My favorite way to eat eggs is fried with a dippy yolk on toast! My kids love what call “French toast eggs”. However we eat them, organic is important to us-especially when it comes to nourishing our kids well!

normally we will scramble eggs and put them in tortillas with bacon or sausage, cheddar cheese, and salsa for a texan breakfast taco. Or I will make toast and top it with a fried egg which is always yummy!

We raise our own chickens so of course I’m all about supporting small farms. We don’t sell our chickens or eggs though. Farm fresh eggs are the best and I love a good dippin’ egg on toast with salsa and cheese or with avocado or my most recent discovery is with spinach and cornbread.
I love to eating egg sandwiches! I think it’s important to use locally sourced farmers to keep local economies alive and thriving.

My favorite way to eat eggs in scrambled, then make a toast sandwich with the eggs and mustard. I know, weird!
I grew up on a farm with crops as well as livestock. I learned a LOT at a young age about why caring for animals is important. As a farmer, we grew our own crops to feed our animals so we knew exactly what was going in for nutritional value. Of course at age 9, I didn’t realize how important that truly was. Now, as an adult that no longer lives as a farmer, I go to a local grocery store and cringe at the meat counter! When I hear of companies and farmers that genuinely care about the quality of their product, I appreciate where they are coming from. Glad to know this organization is out there – thanks for sharing!

My favorite way to eat eggs is a toad-in-the-hole, where you tear out the center of a piece of bread and cook the egg in the hole. So good! I’m the biggest animal lover so it is great that this company treats their hens right. I wish more companies would jump on board!

I seriously LOVE eggs in so many ways! Here are my go-to’s: scrambled, hard boiled, egg-avocado salad sammies, hashes, and frittatas! I only buy eggs from the farmers market because I like “knowing” my farmer, that my money is going back into the local community and that the hens are living a good life. They are definitely prices ($4.50-$5) but worth it in my opinion. I’m also lucky to have a co-worker who has a coup in his backyard who gives me eggs once a month or so. When he was on vacation I was the chicken care giver and got to keep any eggs from his chickens that week! I netted about 40 eggs in less than one week and since they were so fresh they kept for over a month without going bad. I’d love to do this one day but need a bigger yard for it to be feasible.

I love scrambled eggs with cheese and peppers! It’s very important to me to support local farms that treat their hens well because I am an animal lover, and I would not want to be supporting any business that is mistreating animals in any way.
I love my eggs fried and with avocado on top. Truffle salt is delish on them too! I do try to buy organic, cage free eggs. I’ve seen way too many documentaries about the cruelty to chickens at chicken farms.

I’m a very new ‘egg’ eater and have only eaten hard boiled up until this point. I am a HUGE fan of cage free chickens but with 5 hungy family members it can get expensive to buy eggs this way. I would love to try a sample!
