Last weekend Ryan’s good friend Ben was in town. We went out to eat a lot during his visit, so by the time Sunday morning rolled around, we were in the mood to eat breakfast at home. I ended up preparing a fiesta frittata that we all greatly enjoyed. It’s packed with vegetables, delicious and quite filling!
A few weeks ago, I agreed to try out a sample of Pete & Gerry’s organic eggs through a campaign with BlogHer and put them to use in this frittata.
The family farms that supply the eggs sold by the Pete & Gerry’s are all Certified Humane® meaning the hens that produce the eggs will always have ample space and shelter in clean, well-ventilated barns, gentle handling (to limit stress), freedom to live like hens do naturally, nutritious high-quality feed free of antibiotics or hormones and continuous access to fresh water.
Without a doubt the eggs elevated the flavor and made the frittata taste incredibly fresh. And we all felt good about eating eggs that are certified organic and come from cage-free hens.
To amp up the flavor of the frittata even more, I added some of my favorite flavorful fresh veggies and incorporated black beans and whole grain rice into the dish to make it taste a little heartier since it was supposed to feed me and two hungry guys!

Description
This Frittata is packed with vegetables, delicious and quite filling!
Ingredients
- 6 Pete & Gerry’s organic eggs
- 1/2 can black beans (rinsed and drained)
- 1/2 cup brown rice
- 1/2 cup shredded cheese
- 1/2 small yellow onion, diced
- 1/2 tomato, diced
- 1/2 large bell pepper, diced
- 1/4 teaspoon garlic salt
- 1 teaspoon butter or olive oil
- Optional toppings: Avocado slices, pico de gallo, salsa, plain Greek yogurt
Instructions
- Whisk eggs together in a large bowl. Add black beans through garlic salt.
- In a large skillet, heat butter (or olive oil) on low to medium heat. Pour in egg mixture.
- Cook on low to medium heat until eggs begin to set (approximately 15 minutes.)
- Reduce heat to low and cover with a lid until the top of the frittata fully sets.
- Slice immediately and serve with desired toppings. Enjoy!
We topped the frittata with avocado and thought it was fabulous! Next time I’ll also try serving it with pico de gallo and a spoonful of plain Greek yogurt.

Thanks for hosting this incredible giveaway! I enjoy eggs over medium. I am extremely passionate about supporting small, family farms no matter what the food – eggs, milk, produce, etc!! I think it is great that these smaller, family farms still focus on the importance of providing a clean, safe and natural environment to their hens. We are what we eat, and I think the quality of food we eat plays such a huge role in how we feel and behave. I think all of this added, synthetic and fake business has a huge role in how often we get sick and visit the hospital. Thanks for featuring such an incredible product.

This sounds delicious! I would have never thought to add black beans and rice to this but it sounds delicious and would definitely make it more filling!

First, the frittata looks delicious – I love the Southwestern flavors! Second, my absolute favorite way to enjoy eggs is fried up with a slightly runny yolk and paired with a slice of seared ham or turkey on one of my dad’s egg sandwiches (for some reason, his always turn out best 😉 ). Perfection!

I love eggs pretty much any way but my favorite is fried with tons of hot sauce.

I love scrambling it with veggies and cheese and putting it in a tortilla. I then place it on my panini maker to make the tortilla a little crispy!
My favorite egg treat is a hashbrown crust quiche (Paula Deen’s recipe). It is really delicious! I always make it around this time of year. It also re-heats really nicely in the toaster oven.

I eat eggs almost every morning as they are a great source of protein! My favorite way to eat them is actually from your egg white and oatmeal pancake recipe! I like to change up the flavors and add fresh apples or a little bit of pumpkin in the fall. Lately I’ve started being more conscious of eating local/organic and what blew me away was how different eggs that have been raised on a local farm, free range can actually taste. I love supporting local famers as they are the source for great nutrition in our lives. And when it comes to raising their chickens, it is incredibly important to the livelihood of the animal to be raised in a clean, comfortable setting (plus it makes for a tasty breakfast)!
