Last weekend Ryan’s good friend Ben was in town. We went out to eat a lot during his visit, so by the time Sunday morning rolled around, we were in the mood to eat breakfast at home. I ended up preparing a fiesta frittata that we all greatly enjoyed. It’s packed with vegetables, delicious and quite filling!
A few weeks ago, I agreed to try out a sample of Pete & Gerry’s organic eggs through a campaign with BlogHer and put them to use in this frittata.
The family farms that supply the eggs sold by the Pete & Gerry’s are all Certified Humane® meaning the hens that produce the eggs will always have ample space and shelter in clean, well-ventilated barns, gentle handling (to limit stress), freedom to live like hens do naturally, nutritious high-quality feed free of antibiotics or hormones and continuous access to fresh water.
Without a doubt the eggs elevated the flavor and made the frittata taste incredibly fresh. And we all felt good about eating eggs that are certified organic and come from cage-free hens.
To amp up the flavor of the frittata even more, I added some of my favorite flavorful fresh veggies and incorporated black beans and whole grain rice into the dish to make it taste a little heartier since it was supposed to feed me and two hungry guys!

Description
This Frittata is packed with vegetables, delicious and quite filling!
Ingredients
- 6 Pete & Gerry’s organic eggs
- 1/2 can black beans (rinsed and drained)
- 1/2 cup brown rice
- 1/2 cup shredded cheese
- 1/2 small yellow onion, diced
- 1/2 tomato, diced
- 1/2 large bell pepper, diced
- 1/4 teaspoon garlic salt
- 1 teaspoon butter or olive oil
- Optional toppings: Avocado slices, pico de gallo, salsa, plain Greek yogurt
Instructions
- Whisk eggs together in a large bowl. Add black beans through garlic salt.
- In a large skillet, heat butter (or olive oil) on low to medium heat. Pour in egg mixture.
- Cook on low to medium heat until eggs begin to set (approximately 15 minutes.)
- Reduce heat to low and cover with a lid until the top of the frittata fully sets.
- Slice immediately and serve with desired toppings. Enjoy!
We topped the frittata with avocado and thought it was fabulous! Next time I’ll also try serving it with pico de gallo and a spoonful of plain Greek yogurt.

I love Pete & Gerry’s eggs! I also enjoy eggs in every way, but especially the classic way: scrambled with a side of grilled potatoes, a couple slices of bacon, toast, and coffee.
I live on a road that you could definitely call country bumpkin; my back yard is a farm and the air is full of sounds from chickens and roosters, cows, and goats. With that said, there are a couple of families who sell eggs in little coolers at the end of their driveway- not only is it nice to be supporting the business of local community members, but I know the eggs I am paying for are high quality and the chickens laying them are being treated and cared for appropriately. It’s a win-win! I then take those eggs and use them in your famous oatmeal eggwhite scramble! 🙂
On Saturday mornings, my husband makes omelets with whatever grilled leftover meat we had the night before, peppers, onions, and cheese; with homemade salsa on the side. It is a family favorite!
we buy our eggs from a local man who has free range chickens they are 100% better than store bought eggs, we will not go back. i love spinach omlettes or sunny side up.
Currently I’ve been loving scrambled eggs with salsa but a favorite way is with onion and sauteed spinach. Mushrooms would be a bonus! I love supporting locals cause you know they treat the animals right, they are fresh and not messed with. My aunt has a farm and my cousin’s husband does produce, although both from Florida so I don’t get to enjoy it as much as I would like) but I feel kinda connected when I help support the farmers here

I think just simple over easy eggs are the best! I grew up with free range chickens at my parents house, and you can definitely taste a difference!!

We LOVE eggs in our house! Our favorites are omelets, scrambled, and dippy eggs! Mmmmm! We are getting chickens in the spring! My kids cannot wait! They have already started picking out names! We love to buy from local farms that treat their animals well and don’t try to “plump” them up!

I love organic eggs!! There is SUCH a difference! I love to eat one poached or fried egg on a piece of really fresh french bread in the morning, yum! Sopping up the yolk is to die for 🙂 I currently get my eggs from a local farm up near my parents house in Wisconsin, but it is a really small, family owned operation with really just a small coop and a cute wooden sign hanging in the road. Makes me feel good to buy from them, I also donate clothes to their daughters any time I can.

i make a mean breakfast casserole with eggs and a box of STUFFING in it (plus spinach, red pepper, sausage, cheese, milk)—-its so easy and always gets great reviews! 🙂 i love eggs and love stuffing, but would never think to combine them!

We go through so many eggs in this house! I love them the most either scrambled with feta or in a breakfast casserole of some sort… usually with bacon. 😉
Fried eggs with runny yolks and some buttermilk biscuits to sop it up with and some boudin on the side.

My husband makes the best migas! I usually go for regular scrambled eggs when I’m in the kitchen though – you can never go wrong with simple and classic.

Cage Free, Organic Eggs tatse SO MUCH BETTER!!!! Undoubtedly so, they are not pumped with hormones and fed crap that chickens would never munch on in nature.
Could quinoa be substituted for the brown rice?
I buy Pete and Gerry’s eggs at my grocery store! I love that they’re organic and cage-free. I really like to buy all dairy and meat products organic/cage-free/grass fed (for beef). I can’t always find it depending on what store I’m at but that’s what I prefer.
