Today’s workout: 50 Rep Workout
But let’s skip ahead to the green stuff!
Green Protein Pancakes
At my sister’s bridal shower this weekend, I spent some time chatting with one of her friends who is really into green smoothies. We obviously share this love since I make myself a green smoothie of some sort multiple times a week. When she asked me whether or not I’ve ever made green protein pancakes, my interest was immediately piqued.
She told me that she will add a handful of spinach to her protein pancakes before she blends everything together and I was intrigued enough to give green pancakes a try this morning.
While the green pancake I made looks like something the Grinch or Shrek would love, it was surprisingly delicious!
I’m sure you could play around in the kitchen and add a handful of spinach to a number of protein pancake recipes, but I combined the ingredients listed below with an immersion blender this morning and loved the end result.
- 1 cup egg whites (I use the kind from the carton)
- 1 handful fresh spinach
- 1 tablespoon almond butter
- 1/2 cup old fashioned oatmeal
- 2 packets stevia
- Cinnamon to taste
Yes, it looks rather scary, but the pancake was really tasty! It’s worth a try if you can get past the vibrant green color.
A quick note: I made my pancake in a small skillet and I think the batter might be a little too runny to make on a griddle. I first tried pouring the batter on the griddle and the pancakes looked like they would’ve been really thin. Cooking a single pancake in a small skillet resulted in a single thick, fluffy pancake.
Not a bad way to start a Monday!

Yum! I make a similar pancake to these with some cottage cheese and protein powder in it. They’re so good and, aside from the color, you’d never know that there was spinach in it. It’s a great way to sneak in some veggies in the a.m.

These look like they will be perfect for St. Patty’s day! But I don’t think I can wait until then to try them. 🙂 How fun!
Camille @ Challenge Mantra says
I’ve never seen pancakes like that before. Do they taste “green”?

Nope! I think the almond butter and cinnamon help mask the flavor of the spinach.

Interesting! I’ve heard of people doing that, but I don’t think I can get past the color. I can handle a green smoothie, but a green pancake?! That’s a mental challenge 😉 Haha!
Jenny says
Love the idea! By the way – what do you usually top your pancake with before you eat it?
Marissa @ Barefoot Colorado says
I literally JUST found out about green pancakes this weekend. How funny! Are there little spinach chunks in the batter or does it blend up pretty smoothly?

I believe you when you say your green smoothies are delicious. I think a green pancake is probably not too bad. But if you even try to convince us that green coffee is the bomb, I will fall off my chair! Hey, maybe that would be a good April Fool’s prank!
Taylee @ twist me fit says
How have I never thought of this before considering my love for pancakes?! Trying this ASAP.
Megan @ The Skinny-Life says

Julie says
Definitely!
Celina @ mycajuntinity.com says
I bet this could be a creative way to sneak greens into a child’s diet. I know my little niece would want to eat this just because it was green and cool looking. Have a great week!
Abi@AbsofSteel says
I could see the green pancake working really well with those 2 ingredient, banana and egg, pancake recipes. Bananas are usually really great at covering up any spinach flavor.

The green just makes them that much prettier!
Brittney @ Sweets 'N' Greens says
Thanks for the small skillet tip! Sometimes I accidentally make my batter too thin, so one big pancake is probably a better option to try!
Michelle @ A Healthy Mrs says

Dawn @OfficeGymRepeat says
Yum, these look so fun! When I see them it makes me think of green eggs and ham lol.
Ruth says
I love that idea, I add spinach to smoothies so why not pancakes! I wonder if frothing the egg whites seperatly into peaks and adding them after would help make the pancakes puffer.
Hayley@healthyregardshayley says
This would be so great for st. patricks day!
Ally @ The Zebra Runner says
I’m new to blogging, I’d love if you could check mine out!!

Jan @ Sprouts n Squats says
Love this idea! It seems like a great way to get in extra greens! I don’t have a good blender only a stick blender but I really need to invest in one so I can make recipes like this.

Also perfect for the entire month of March (ie: celebrate the luck of the Irish with all things green)!
sara says
I have seen a of your protein pancake recipes and am so curious if you top them with maple syrup? I am tempted to try them but I feel like the syrup cancels out the healthy-ness a bit? Do you have something else you top them with or just eat dry?
Livi says
that is some bright green color! I’ll have to try it!
