First things first, my intense love for all of you out there was reaffirmed this morning when I learned that a BUNCH of you own the awesome “no nonsense” socks. Seriously, where did we get them? I love how no one seems to remember where they got the socks, yet we all sport them with pride. Awesome.
Lunch
My morning absolutely flew by and before I knew it, I was rushing out the door to meet up with my friend and awesome fashion blogger J, for a lunch date at Greens & Grille, a fast-casual restaurant that serves fresh salads and sandwiches.
Upon arrival, I scoped out the menu and found myself wanting various combinations of their specialty salads which eventually led me to decide to select the “create your own salad” option.
I chose a mix of romaine lettuce and spring mix greens, topped with edamame, beets, mushrooms, caramelized onions (the best!!!) and broccoli, all tossed together in a balsamic vinaigrette dressing.
It was a big salad but I practically inhaled it. I loved all of the flavors and couldn’t get enough of the caramelized onions. They were so sweet and flavorful.
J and I ate our salads while catching up and chatting about everything from dogs to fashion to blogging and social media.
We actually ended up chatting for almost two hours. I swear anytime I get together with a blogger I can sit there and talk forever.
Now I feel a little behind on today’s to-do list, so I gotta get crackin’. It’s currently pouring outside which doesn’t help my motivation to work. Curling up on the couch with Sadie sounds awfully appealing!
I’m thinking I’ll work with no breaks until 4:30 and then give myself 15 minutes to browse the internet in search of a yummy recipe for dinner tonight before wrapping up for the day around 5:30 p.m. We have lots of veggies on hand (cauliflower, sweet corn, zucchini, green beans) and I’d like to so something creative with all this fresh produce! Any ideas?

I love No Nonsense socks and buy them at Wal-Mart! I don’t ever wear them for running as I prefer running socks, but they’re my go-to sock for everything else. Most of my friends wear them as well! Move over, Champion!

Mmm, those all sounds like yummy fresh veggies. Maybe blanch or roast them and make some sort of pasta salad (either pesto/vinegar/mayo based).
P.S. so impressed you have the motivation when u work from home to not take a million breaks or a nap! I end up taking a break every 5 min to check my email…and I work from an office! I wonder if people notice…

I know it’s hard to not feel behind after having a long lunch with someone you adore – but if you ask me, your time with J was UBER Productive.
I know that everytime I have a great time with a blend, I not only leave feeling exceptionally refreshed but all the social media and blogging talk sparked new creativity and motivation with in me! I have a feeling your the same way! (which makes me even MORE excited for Philly 😉 )

Ohh that place looks great! I love places where you can create your own salads! I feel like I’m always doing that at places anyway, but they usually don’t like the substitutions!! Steam cauliflower, sweet corn, beans, and zucchini and toss with salt, pepper, a little bit of olive oil, and lemon juice and any fresh herbs you have on hand and let it cool until it turns into a chilled summer veggie salad 🙂

Yum, I love Greens & Grille and their massive portions! For dinner, you could toss the veggies in balsamic vinegar then bake them and toss with some pasta, parmesan cheese and a little pasta water for pasta primavera!

You can make a super fast crust by combining butter, milk and flour and pouring over the top before baking.

Hmmm…I always roast veggies in the oven with a little olive oil. Then you can do whatever you want with them- if you’re craving something different, maybe veggie quesadillas? 🙂

i would say chop it all up and drizzle some olive oil on, then wrap it up in foil and throw it on the grill. spread it over lettuce for a great summer grilled salad!

This is so random for a summer dinner, but when you listed those veggies I totally thout of a vegetable or chicken potpie haha. Although if it’s raining, maybe that would be good despite the season?

EVERYTHING, but green beans on pizza crusts! Sautee it in evoo, garlic, salt & pepper. Then put toppings on pizza crust with fresh mozarella. oh and tomatoes if you have any… I don’t put any sauce, but if you want put pesto. roast the green beans for a nutty & yummy side!
