That, my friends, is Harry & David’s decadent carrot cake speciality cheesecake.
My mother-in-law always has the most indulgent, delicious desserts at her annual Easter brunch, and when I saw this cheesecake it instantly reminded me of wonderful family get-togethers that always seem to end with something sweet.
Having ordered this cheesecake myself before, I can assure you that one bite will have you wanting more! Sandwiched between two layers of carrot cake made with chopped walnuts and spices is Harry & David’s famous New York style cheesecake. The carrot cake cheesecake is made on site and frosted by hand with cream cheese frosting.

Okay, I’ll admit the first time I laid eyes on the picture of the cake, I wanted to keep it all myself buttttt 1) I don’t need the calories and 2) I know just the person who would love it if I shared with him – my father. Quick back story – my mom makes an AMAZING carrot cake. We usually have it on Easter Sunday, but this year my mom is going north to take care of her mom (my grandma is have major surgery a few days before Easter). With my two siblings off at school, it’s going to be me and my dad. Although he’s exciting about spending time with me, he’s really bummed we can’t be together as a family (I’m with him on that!) I would love to surprise him with this cake!
This would be perfect to bring to my sister’s home for Easter to celebrate her recent engagement! I am so excited to make her boyfriend an “official” Uncle to my two girls : )

Oh wow! Yeah I think I would share this with my family on Easter Sunday. Bringing it to dinner would help my mom out, she cooks in a tiny kitchen for like 20 ppl! Crazy!
Yep I will be eating that sucker with my family (maybe) of course! One question though … does carrot cake count as a serving of fruit for the day? 🙂

Unfortunately, I will not be making it home for Easter this year, but the Carrot Cake would go over VERY well with my college roommates and friends. We are going to have a potluck-styled dinner and I know this would be a huge hit that reminded everyone of home:)
I would either bring it to work and share it with my coworkers, or have it for Easter with my family (though my daughter might eat the whole thing since she sure does love sugar!)

Carrot Cake is my mother’s favorite and cheesecake is a close second for her. I would serve this at the annual mothers day brunch that I host with my siblings. I’m going to have to try to recreate this at home!
Carrot Cake is a family favorite for sure! I would bring this to my cousin’s house for Easter or to the next family event (which with an Irish family is frequent) I know this would be a huge hit at our sweet tooth family parties!

I typically don’t order dessert BUT if carrot cake is on the menu I will every time. It is hands down mymost favorite dessert in the entire world. I would eat it with some lady friends, I wouldn’t trust myself alone with it
So carrot cake and I have a thing. I’ve had carrot cake at every graduation I’ve had. I had it for my Bachelors and first Masters degrees and now I’m about to graduate for the last time with my second Masters degree which allows me to practice in my chosen field.
