That, my friends, is Harry & David’s decadent carrot cake speciality cheesecake.
My mother-in-law always has the most indulgent, delicious desserts at her annual Easter brunch, and when I saw this cheesecake it instantly reminded me of wonderful family get-togethers that always seem to end with something sweet.
Having ordered this cheesecake myself before, I can assure you that one bite will have you wanting more! Sandwiched between two layers of carrot cake made with chopped walnuts and spices is Harry & David’s famous New York style cheesecake. The carrot cake cheesecake is made on site and frosted by hand with cream cheese frosting.

We always go to my in-laws for easter and it would be so nice to bring along, considering my MIL is a great cook but terrible baker.
I would take it to school to share with all of my teacher friends…we need something sweet to get us through the end of the semester!
My mom gave up sugar and gluten for lent, and she’s planning a sugar binge for Easter… This would be perfect!

Carrot cake is my father-in-law “thing.” He always gets it for me for my birthday and whenever they have some for dessert I always steal his frosting (cuz it’s sooooo good!). We will be celebrating Easter with him and I would love to bring this along to share!

I would eat the whole thing myself! I am the only one in my family who has a love affiar with carrot cake, a serious love affair, and I would not feel a pang of guilt!!
This will be sired in the freezer for a month, then enjoyed to the fullest with some friends when we’re off performing in a musical a few towns over! nothing better than some post-performance sugar! 🙂

I would surprise my son with this cheesecake. He loves carrot cake and obsesses over cheesecake. Whenever we go out to eat, cheesecake is the first thing he looks for on the menu.
