Hold on to your hats my friends, because tonight’s dinner was fantastic!
Not only was it easy, but it required minimal ingredients and came together in less than 15 minutes!
Well, a little preparation was necessary since I placed two chicken breasts in the crock pot, covered them in one can of reduced-sodium chicken broth and let them cook on low all day (about 8 hours). But, if you’re short on time, you could easily substitute rotisserie chicken meat in place of the slow-cooked variety.
Once I pulled the chicken breasts apart using two forks, I poured enough Bone Suckin’ BBQ sauce on top of the meat to make it extra moist and flavorful. This step could easily be done ahead of time and would also make great use out of leftover chicken!
Once the meat was ready, I sprayed two cookie sheets with cooking spray and topped two Joseph’s Lavash breads (one for Ryan, one for me) with a layer of BBQ sauce, sautéed onions, fresh spinach, the pulled BBQ chicken and shredded Mexican blend cheese to make BBQ chicken pizzas!
I then put the pizzas in a 350-degree oven until the cheese melted (about 5 minutes – watch closely so the Lavash doesn’t burn!).
The pizzas were BIG and once Ryan and I saw the ooey gooey cheese, we couldn’t wait to dig in!
Yes, that’s one pizza, and we both practically licked our plates clean.
Such a good dinner!
I’m off to do some prep work on the blog because tomorrow morning the first FASHION-related giveaway will be debuting on PBF! I’m pumped about this one!!!

Yum – looks delicious! I will have to try this recipe sometime soon.
mmm looks so good! it’s just about dinner time here on my end & now i’m even hungrier!
I miss bbq pizzas being a vegetarian!! Maybe I’ll just have to replicate without the meat 🙂
I was going nuts without it, too — and then I remembered a pizza my uncle came home with on Good Friday last year: Barbecue Baked Bean. It sounds so weird, but it was A-MAZ-ING. It had bbq sauce as the base, with a layer of Boston baked beans (without salt pork, aka vegetarian, or there are a million crockpot recipes for them!), thinly sliced red onion and a layer of Mexican cheese. I made it last time I was craving bbq pizza and it was FANTASTIC!
That sounds awesome! I love finding vegetarian options in the comments 🙂
Wow that pizza looks ah-mazing. I love thin crust so looks like it would be right up my alley!
Love this idea! I have some leftover BBQ chicken from tonight’s dinner, so I may have to try something like this tomorrow!
Looking forward to your new video post! You are the cutest! And don’t worry, when you say random things, it makes you that much more relate-able. I can only imagine what would come out of my mouth if I tried to record myself!
That looks so good! I was actually going to use your chicken and broth combo to make BBQ pulled chicken sandwiches for dinner tomorrow – pizza sounds even better! Where do you buy the lavash at?

Can’t wait to see the fashion related giveaway tomorrow. Your fashion sense is great and I love seeing your outfits. They do make me wish I lived in a warmer climate where I could wear cute skirts every day though.
Whoa. Talk about a winner winner chicken (bbq pizza style) dinner…. YUMMM!

That looks delicious. And so quick and easy AND healthy. I just spent more time putting together a salad! hahaha. I like your idea better!
I’m pretty sure I almost just drooled… HAHA That looks absolutely amazing! I’m having oven envy!
Um, YUM. This looks absolutely delectable!
This looks amazing!
Did you tried shreded chicken? It’s similar to your recipe and quite tasty.
My mom used to make us little pizzas on slices of bread. I can wait to try it with whole wheat bread.
RECIPE:
You just soak gently the bread in milk, put it on a backing sheet and then put your fav veggies and cheese.
Let it sitt in the hot oven for 10 min then add a beaten egg over the pizzas. Another 5 min in the over and you get to eat a delicious savory meal.
That looks like something my husband would DEVOUR!! I might have to steal that recipe for him!! I would top mine with tons of tomato, red onions, green peppers and spinach…augh, now I am hungry!!! 🙂
That pizza looks awesome! We do something similar, but with big, pillowy, fresh pita bread that we get from the breadstore up the street!!!
WOW! Thanks for the tip on slow cooked chicken – def be doing that in future! Hungry now.
This pizza looks SO good!!! I definitely want to try making this! I always make shredded chicken in the crockpot. It’s so much easier and it always tastes great! Love it!
Cannot wait to see your giveaway!!
Looks wonderful and I love easy!!!! So you got me hooked on overnight oats! I made my best batch this a.m.—nothing fancy basic recipe except for I used coconut milk!!!–low fat—the oats tasted like a big oatmeal cookie! You must try! Hugs and I love your blog!! We have very opposite lives-with a few exceptions!:)
Even though they are all super cute, if I won, I would pick necklace 3 only because it is different and not something I would typically pick out 🙂
Whoops posted on the wrong post 🙂
I’ve become OBSESSED with pizza in the past few years (no, seriously, I’m like a Ninja Turtle. Dibs on Donatello.), and I honestly think BBQ chicken pizza will be the FIRST thing I eat on Easter after the Lenten vegetarian pledge ends.
I’ve made pizza on FlatOuts and pitas before, but have never tried it on lavash! Did you find it to be limp at all? I have that problem with FlatOuts and have taken to pre-baking them for 5 minutes in a high-heat oven before topping them and then baking at 350 like you did. It ends up making the crust crispier and less likely to have all my toppings slide off.. but I’d love to be able to skip a step!
oooh i love lavash. my grandpa is from iran & we always had lavash at family dinners. delicious!
Hey Julie, I wanted to ask you about protein powders: where’d ya get the packets from? & which protein powder is the best (in your opinion). Do they add flavour to your smoothies?
Sorry about all the Qs hehe. That pizza looks delicious & healthy 🙂
id choose number 1~!!! thanks for the lovely giveaway- woo!
i liked Lori’s Stella & Dot page on facebook!
