This Monday has been full of catch up as most Mondays seem to be for people everywhere. My morning whizzed by and lunchtime popped up before I knew it.
I made myself some pesto chicken salad with about half of an avocado, a shredded chicken breast, carrots, celery and my sunflower seed and walnut pesto.
I cooked a few chicken breasts in the crock pot yesterday (using this incredibly easy method) so I could have them on hand to assemble super-fast meals like this one throughout the week. That tiny bit of prep work saved me lots of time this afternoon.
I was afraid the avocado that I used in my chicken salad would be too bruised to eat after gently squeezing it, but when I cut into it, I saw beautiful green and no brown. Hooray!
I ate my chicken salad with a cold, crisp Jazz apple on the side.
Healthy Living Blogs for Men
Lately I’ve received a handful of emails from you guys and a couple from your boyfriends and husbands asking me about healthy living blogs by men. I felt bad that I only had about two “man blogs” to recommend!
As someone who absolutely loves blogging and reading blogs, I think it’s so much fun to discover new blogs. Though the majority of bloggers out there are apparently male (according to a Technorati study about blogger statistics), the vast majority of blogs I read are maintained by females.
I found myself at a loss for a bunch of blogs to recommend to those who were reaching out to me hoping to find some great blogs by guys. I put a call out on Twitter this morning and the following food, fitness and/or healthy living blogs maintained by men were recommended to me:
