Workout
This morning my workout began with 20 minutes of cardio split between the stair master and the elliptical.
Then it was time for weights! I completed an upper body workout similar to the one I did last Tuesday.
I altered it a bit by taking out the one of the shoulder exercises and all of the ab exercises and adding chest and back exercises. They bore the heck out of me (especially back exercises) and I usually default to working them out in group exercise classes since the strength and TRX classes at my gym are really great about targeting the chest and back, but I incorporated low rows, push ups, chest presses and lat pulldowns into today’s workout. Small victory.
Breakfast
I’m sure many of you have discovered the wonders of banana soft serve thanks to Gena’s blog. It’s simple and the perfect way to satisfy your sweet tooth in a healthy way. (All you do is place frozen bananas in a food processor and blend them until they turn into creamy soft serve.)
This morning I wanted something cold and creamy for breakfast but wasn’t feeling a smoothie. I remembered banana soft serve and figured I could morph it into a more satisfying breakfast by adding more protein.
I then remembered the banana custard I made a while ago and tweaked it a tiny bit to get today’s breakfast.

Description
This morning I wanted something cold and creamy for breakfast but wasn’t feeling a smoothie. I remembered banana soft serve and figured I could morph it into a more satisfying breakfast by adding more protein.
Ingredients
- 2 frozen bananas, broken into chunks
- 1 cup Greek yogurt (I used vanilla, though any flavor will work)
- 1/2 scoop vanilla protein powder, optional
- 1/4 teaspoon cinnamon, optional (recommended with plain, honey or vanilla flavored Greek yogurt)
- Splash of almond milk or milk of choice
- Chia seeds, nuts, nut butter or fresh berries for garnish
Instructions
- Place bananas, Greek yogurt, protein powder and cinnamon into food processor and allow to process for a couple of minutes until a smooth, creamy custard begins to form
- Scrape sides of food processor, add a small amount of almond milk to get everything moving and pulse several more times
- Scoop soft serve into a bowl and top with desired toppings
This breakfast is crazy good and absolutely perfect for a hot, summer morning. I think it would also make a great nighttime snack if you’re in the mood for something sweet, but want a sweet treat with a little punch of protein.
You can also completely customize this recipe and add other frozen fruits, spices or flavors to the mix like frozen strawberries, cocoa powder, peanut butter and more. Next up on my list is peanut butter high protein banana soft serve. Watch out!

Looks delish! This may be a dumb question, but is it possible to just make in a blender? Would it come out the same consistency? Also, do you have any recommendations on food processors? I’m looking to get one but feel like I dont really know what im doing!

hi corinne! you can definitely make it in a blender (especially a VERY efficient blender), but it may be harder to achieve the thick, creamy consistency, as i’d imagine you’d have to add a little more almond milk to get everything moving. it might be more smoothie-like, but i think the taste would still be yummy.
as for food processors, i have a big cuisinart one that i really, really like. it’s very, very powerful. (it’s just a pain in the butt to clean, but i think you get that with all food processors.)

Yep! All you need to do is put about 1/2 cup of water and 2-3 cups of chopped rhubarb in a saucepan on the stove, then let it sit over medium/low heat. The rhubarb starts to soften and the little bit of water helps it to become more like a stew… let it cool in the fridge and it thickens up a lot… super duper refreshing (it’s tart and slightly sweet, but you can add a couple of stevia packets to it if you want), and ridiculously low in calories but high in lovely vitamins!

hi joelle! you can use a blender, but you may need more milk, so it might not come out as thick and custard-like. i think it would probably be more like a smoothie.

Also, it’s interesting that you do your cardio before your weights! I know you’ve said the 20min elliptical helps to get you in the mood, but I find it makes me too tired to put full effort into weights, so I do mine in the opposite order!

I tried this idea out two nights ago with peanut butter and cocoa! It was amazing! Ice cream is my weakness but this hit the spot just like soft serve would! And without any guilt!
I don’t have a food processor so I had to make it in my magic bullet. I had to stop several times to scrape the sides but it worked! So yummy…..

I HAD to make this for breakfast this morning as soon as I saw your post. I wasn’t feeling the “egg” thing, and I’ve never made banana soft serve. I added almond butter and cocoa powder. It was delicious!!!!!! I even sprinkled chia seeds on it for a little crunch. Some pieces of frozen avocado chunks were stuck to the banana pieces, but you couldn’t even taste them – added healthy fats. Next time I will try it with cocoa powder and coconut oil. Can’t wait.
