Description

A high protein version of broccoli cheese soup, this high protein broccoli cheddar soup is rich and creamy but nutrient-dense and boasts 25 grams of protein in a single bowl.


Ingredients

Scale
  • 1 pound mini golden/yellow potatoes (or regular golden potatoes, diced)
  • 1 tablespoon salted butter
  • 1 small onion, diced
  • 5 cloves garlic
  • 2 cups chicken bone broth
  • 2 cups milk (skim, 2% and whole milk all work well)
  • 1/2 cup cottage cheese
  • 10 ounces frozen broccoli, steamed
  • 10 ounces frozen cauliflower, steamed
  • 1/2 cup plain Greek yogurt
  • 6 ounces sharp cheddar cheese
  • 1 teaspoon salt (plus more to taste, if preferred)
  • 1/2 teaspoon pepper
  • 8 slices bacon, precooked and diced
  • Optional toppings: Additional shredded cheese, crumbled bacon, green onion

Instructions

  1. In a large pot on the stove, boil golden potatoes in water until softened. Add in the broccoli and cauliflower at the end (2-3 minutes) to soften them a bit. Drain the potatoes, broccoli and cauliflower and set aside.
  2. In a large pot, melt the butter. Add in garlic and onions and saute until onions are translucent and tender.
  3. In a high-powered blender, blend bone broth, milk, softened potatoes, steamed broccoli, steamed cauliflower and cottage cheese until smooth. Pour into the large pot with the butter, garlic and onion.
  4. Carefully stir in the Greek yogurt, cheddar cheese, salt and pepper. Continue stirring until cheese is fully melted. Add in the bacon and stir to combine.
  5. Ladle the soup into bowls, top with desired toppings (I love additional crumbled bacon, a sprinkle of cheddar cheese and finely diced green onion) and enjoy!
