Leftovers made lunch assembly awfully easy.
I made myself a buffalo chicken sandwich using the leftover meat from Tuesday night’s dinner.
On the side I enjoyed fresh strawberries and sliced radishes marinated in Italian dressing.
The Italian dressing helped take some of the spiciness away from the radishes, but they’re still a little too intense for me. I like them better in salads than on their own fo’ sho’.
Good news: The buffalo chicken was just as tasty a couple of days later.
Thanks to the three of you who read my food mumbo-jumbo. Now onto the honeymoon fun! 😀
Honeymoon Destination Revealed
After months and months of research, planning and talking to everyone we know about travel recommendations, Ryan and I finally selected our honeymoon destination.
We considered a lot of different options ranging from the Dominican Republic to Costa Rica to Hawaii. (Well, maybe I just considered Hawaii. 😉 )
In the end, we decided to go to St. Lucia!
Thank you so, so much to all of you for your comments, recommendations and emails. Both Ryan and I read every single one and, for a while there, felt like we were on a wild goose chase, visiting all the places you mentioned and weighing our options.
We selected St. Lucia because it met our requirements:
- Caribbean location
- Beautiful beach
- Adventurous activities
While in St. Lucia, Ryan and I hope to relax on the gorgeous beaches, but also enjoy some fun activities. On our possible to-do list:
- Scuba diving
- Jungle biking
- Zip lining
- Rainforest hike
One thing we will not be doing? Deep sea fishing… We definitely do not want to revisit our sea sick ways on our honeymoon.
Question of the Afternoon
- In your opinion, what is the perfect length of time for a honeymoon?
Ryan and I plan to stay in St. Lucia for a week (six nights).
Jessica @ How Sweet says
We went for 7 days and I wanted to stay longer! I love being away. 🙂
Kelly says
It depends where you are going and how long it takes to get there. My friend is going to Hawaii for two weeks, which is good I think because you’re really there for only 12 days if you account for travel. A close place like St. Lucia I think a week is good.
Carla @ I Run, You Run says
Our honeymoon is for 7 nights (but we get there super late on Sunday night). I really wish we had booked it longer though, but it’ll be fun going away for a week, then spending another week in Rio, and though it won’t be the honeymoon anymore, we at least won’t be back yet in boring cold DC!
Kattrina says
Wow – looks beautiful! I’m sure you’ll have an amazing time! I took two weeks in all for my wedding and honeymoon and I felt like it wasn’t enough time – I was NOT ready to go back to work at all.
Six days is probably good, but if I could do it again (especially in a place as fun as St. Lucia) I’d go for at least 10 days with a few days after to re-cooperate at home (so two weeks total). With so many activities to do I’d want to do it all plus have a few days of nothing but book reading, plenty of *kanookie*, and beach laying. Sometimes when I go on vacation I have so much planned that I need another vacation to recover…
Congrats on your selection – looks fabulous!!!
peanutbutterfingers says
lol – *kanookie*

Ahhh! 🙂 I am SO excited for you and Ryan!! I can’t wait to see pictures from all your amazing views and fun activities! So excited for y’all!
Need a Sadie sitter for a week?? 😉
Babs says
St. Lucia sounds lovely! We’re doing 6 days too on a tiny island off of the coast of Tonga 🙂 Honeymoons are the best part of the wedding stuff, aside from marrying the love, of course 😉
Kate says
You should roast the radishes! They carmelize and are really mild, the consistency of a beet with the flavor of a sweet potatoe, almost. I bet you’d love them prepared that way.

Katie says
St. Lucia looks amazing! It’s next on our list of Caribbean islands we want to visit 🙂
We did three weeks. We had a DW in Puerto Vallarta, Mexico, so we were there for a week, then we split two weeks between Anguilla, St. Martin, and St. Kitt’s. It was perfect, but, of course, any honeymoon is! And I think if we’d stayed in one place, a week would have been plenty of time! I would get antsy even in paradise 🙂
Kortney says
Looks like it will be tons of fun! I am getting super jealous sitting here looking at it all!!! 6 days seems like it will be good, though you will want to stay forever!.. There is something about being in a beautiful place and not having to worry about work or anything else. =)
erica says
oooh. that place looks amazing! a week sounds good 🙂 any longer and you may never want to come home! hahaha.
Dani says
you’d better prepared to do a lot of blogging…..I’m serious…lol

i think a week is great for a honeymoon! that’s what we’re doing .. although we’re getting married righ in the middle of our ‘weddingmoon’.
lisaou11 says
Absolutely beautiful!! 🙂
Kristen says
Two weeks is the best amount of time in my option–one week just isn’t long enough! Aaaand, this is going to be the only time in your life where you’ll get to do this. Go all out! Also, how can your office say no when you ask to take off for your wedding/honeymoon?? 🙂
Jean@RoastedRootsandPumpkinSpice says
Seems like you made a great choice! The photos are beautiful.
I’m sure you guys will have a great time. The perfect time to be on a honeymoon in my opinion is 1-2 weeks, but longer the better. 😉
Jenna says
Amazing, you are going to have the best time! 🙂
lowandbhold says
I love radishes, but not by themselves either.
That resort looks gorgeous! I think I’d want a month-long honeymoon 😉
Chicago Cuisine Critique says
Yay! I’m glad you picked St. Lucia! That’s what I was pulling for. You will have a great time and i’ve heard nothing but wonderful things from those who have been. A week sounds like a perfect amount of time for me. 🙂
themohdiaries says
Ahh, so exciting! You guys must be pumped!!! I’d say a week or two on your honeymoon would be perfect. Anything other than that and my work at home would get out of control!! Sad..but true
janetha g. says
woohoo! congrats on making a decision. you will have a blast 🙂
Amber K says
Our honeymoon was supposed to be three days/two nights, but I got sick on the first day and we ended up only staying for two days/one night. When we go for our five year anniversary next year I’d love to go for about four days/three nights. Then have a couple of days at home to recoup before going back to work.
Amber K says
Oh and I did look at the pictures of the food before reading the decision, does that count? 😉
Heather says
FOREVER 🙂
really though, i would say a week to 2 weeks if you can afford it!
mkr says
Ahh you’re going to have such a fantastic trip! Your sandwich looked great too 🙂
Tracey @ I'm Not Superhuman says
I’ve heard only great things about St. Lucia. It’s supposed to be gorgeous. Oh, I’m jealous. My honeymoon was 7 days and it was just perfect. I think longer would be nice, too, but we cut it off because of lack of funds and lack of vacation days.
Caitlin says
How fun! That resort looks beauuuutiful. I am nowhere near planning a honeymoon, but 7 days is usually my limit as I tend to miss home after that amount of time.
mm says
Good choice!! We went to St. Lucia for our honeymoon for a week, and it was wonderful, and I feel like the perfect length of time. We also went horseback riding out to the volcano, which was cool (but stinky!) 🙂 The resort you’re staying at looks beautiful, and I think you’ll like St. Lucia better than you would have liked the Dominican!
Linda says
Looks lovely! I can’t wait to hear how it goes! Hope you take a lot of pictures.
Anna says
Amazing!!!!! You’re going to love it!!!
You could write Jake and Vienna and ask for advice on what to see while you’re there 🙂
Ariffa says
fact. ive never heard of st. Lucia =(
but it looks beautiful and your potential to do list looks like soooo much fun!
and im with you on the radishes, spicy spicy.
Kate says
That’s where my parents went for their honeymoon in 1980! Haha. I’ve never been myself but I looooove the Caribbean and that would be at the top of my list for honeymoon destinations too.
blueeyedheart says
I was just in St. Lucia a few months ago — if you do dive, I highly recommend Eastern Caribbean. They were awesome. 😀

Lindsay says
My friend Kelly and her husband honeymooned in St. Lucia last year and I have heard nothing but GREAT things! Enjoy!!! 🙂
40apples says
Yay!! Awesome choice! I’ve heard fantastic things about St. Lucia.
I think I’d want my honeymoon to last around 7 or 8 days, work permitting. Don’t want to get too sick of my new husband…. KIDDING!! 😉
Mellissa says
We did a 2 1/2 week destination wedding and honeymoon in Italy and I actually wished it has been longer. I cried when we had to go home!
Sara says
How exciting! That resort looks awesome and the pictures are beautiful. Our honeymoon was 7 days!
Hillary [Nutrition Nut on the Run] says
I can’t wait to hear ALL about your trip!!
Liz @ Tip Top Shape says
St. Lucia sounds like a wonderful honeymoon destination! And I think you are right on the money with six days. It is just enough time without feeling that you’ve been gone too long. Can’t wait to hear about all of your adventures there!
MJ says
I’ve never been on a honeymoon, but went on vacation to the Dominican twice. Both times I went for a week and for me that wasn’t long enough. I’d say at LEAST 10 days if not 2 weeks. Sometimes what we “want” isn’t really an option for us due to work and such.
Looks lovely and I’m sure you both will have a terrific time!
Christina says
my cousin and his wife went there for their honeymoon and absolutely loved it you two will have a blast!
Chelsea @ Strawberry Sweat says
Looks beautiful!! I haven’t been on a honeymoon yet, but I feel like a week and a half would be perfect for me.
Bess says
Honeymoons should never end! 🙂 St. Lucia looks beautiful you will have an amazing time! I’d like to go there one day…I may need some recommendations from you since you will be experienced from the honeymoon!
Lauren says
Ooooohhh good choice!!! I hear St. Lucia is amazing!
healthifiedhaven says
The resort looks glorious! That is definitely on my list of places to experience. I would go for at least a week. No matter how long you’re there, it will be a wonderful trip to remember. 🙂
Sarah says
looks great! we went for a week- 7 nights (arrived on sun) and then left on the following sun. it was a good amount of time, and while it would have been NICE to stay an extra week, it was also great to get home and begin our married life together for real. 🙂
Shelby Stidham says
10 Days is the perfect time, I think.
You have to go zip lining. It is an amazing experience! Do it!
Christina @ Food.Fun.Fabulous says
a week sounds perfect- have fun!
What Kate Ate says
At least two weeks! I hear St. Lucia is beautiful!
Erika says
What a beautiful destination for your honeymoon! Great choice!
Chelsea at Striking Balance says
Great choice. It looks so beautiful!
I think a 10 days would be perfect. A week is a tad too short, 2 weeks is a tad too long!
