On Wednesday night I baked a spaghetti squash to have ready for eatin’ for lunch or dinner throughout the rest of the week.
I used a bunch of the forked-out squash in a “pasta” bowl for lunch today.
I topped the squash with portobello mushrooms, marinara sauce and Parmesan cheese before adding a large dollop of the remaining ricotta cheese. (Maybe the amount of ricotta was too big to be considered a dollop?)
This meal was really tasty! The ricotta cheese really took it to another level.
I can’t believe I still have almost an entire tub of ricotta remaining. What to make… what to make… ???
Is Junk Food Making You Depressed?
A registered dietitian with the MayoClinic recently addressed the relationship between junk food and depression on the MayoClinic’s web site, which I found pretty interesting:
“Some preliminary research suggests that having a poor diet can make you more vulnerable to depression. Researchers in Britain looked at depression and diet in over 3,000 middle-aged office workers over the course of five years. They found that people who ate a junk food diet — one that was high in processed meat, chocolates, sweet desserts, fried food, refined cereals and high-fat dairy products — were more likely to report symptoms of depression.”
I can honestly say that the process of eating junk food makes me happy, but I rarely feel elated or energetic afterward. I usually enter into a food coma, and find that indulging in sweets triggers my sweet tooth and I keep wanting more and more sweet treats!

I agree about the junk food…it always feels good going down but I usually feel gross afterward. Everything in moderation I guess!

I don’t like a lot of processed food, but I have the BIGGEST sweet tooth, which I guess qualifies me as a junk food lover. I usually feel better after eating a salad instead of a pie, yes, haha.
I made this quick dish inspired by a recipe in Real Simple: gnocchi topped with a cup of store-bought pesto mixed with a little ricotta. Creamy and comforting!

I just had an appetizer last week that was baguette slices, pesto, ricotta and some chopped sun-dried tomato pieces. SO good.

Junk food for me is typically pretzels or chips.. if I eat only two or three servings Im totally fine.. its just if I overdo I feel tired and crap-ola later on.. I try to eat A LOT of “good” foods every 2-3 hrs so I dont feel the need to down an entire bag in one day! lol

It tastes great going down, and then I feel icky after. Like a ball of fat. I have learned that even a burger and fries from a semi-nice (not fast food) restaurant makes me feel the same way, or maybe I just eat too much of it.

I’m the exact same way– I love eating junk food while I’m doing it, but afterwards I feel really down in the dumps.

Junk food is the same for me – I’m almost euphoric as dorky as that sounds while eating it, but after I feel bloated, gross, and guilty.

Junk food is good at the time but if I over-indulge I always feel sluggish and blah the next day! I always feel better and happier when I consistenly maintain a healthy diet.

I think that for people who generally eat whole foods and live a healthful lifestyle can enjoy junk food everyone once in a while, whether or not it makes them feel great afterward. Unfortunately, so many people eat junk food on a constant, daily basis, and are not getting the nutrients or energy they need. I can definitely see how it can make people depressed — nutrients effect your brain chemistry too, it just makes sense!
