Just knowing I had this beastly salad waiting for me to enjoy around noon today made me anxious for lunchtime to arrive.
I made my tuna salad with:
- 1 can tuna
- 1 tbsp. Miracle Whip (light)
- 1/2 tbsp. Dijon mustard
- 2 tbsp. Sweet relish
- 1 large stalk of celery, chopped
I combined everything and served it on top of a bed of fresh spinach along with a sprinkling of broccoli and grape tomatoes.
This was the perfect summer salad. Cold, veggie-packed and colorful.

Tonight
Tonight Ryan and I have plans to attend a special dinner in honor of the graduates from his work’s leadership development program. We’ve attended this event for a couple of years now, and this year Ryan will be honored as one of the graduates!
The dinner is being held at quite a cool location this year so I’m pumped!

I’m a big fan of tuna salad too! In salad or on bread. I like adding craisins to mine – gives it just a little hint of sweetness 🙂

You know, I am vegetarian except for fish / seafood, mostly because I LOVE tuna as well! It’s so nutritious and as long as I buy the low-mercury and dolphin-safe kind, I consider it a superfood. Your tuna salad looks awesome!

I can’t stand fish of any kind. Then again, I can’t stand meat in general, of any kind! So yeah, it sounds digusting to me, but I have to agree. It is easier to get through a workout when you know an awesome meal is on the way!

I also love tuna salad. However, I’ve been vegetarian for a year and a half now and it was one of my meal staples I had to give up… until Wednesday!!! I found a mock tuna salad recipe that was pretty face rocking! I also made a really great salmon salad for my husband. Check it out!
