After a little more than an hour in a 375-degree oven, I had some delicious chicken thighs to dig into at lunchtime today! (I am letting our friends’ chicken marinate and will cook their chicken closer to dinnertime.)
I didn’t measure the ingredients in this dish, but I combined olive oil, lemon juice, garlic, garlic salt, pepper and rosemary and stirred everything together before pouring it on top of the chicken and vegetables. It was very easy to make and tasted great!

The Chicken dinner looks so good. I’m going to try that tomorrow night. I love it with lemon juice, lemon pepper anything to give it that Jazz. Tonight for us, is “Taco Tuesday”. I have a coworker comming from Naples and I always peak in her lunchbox and ask her about details. I know, I am a nasty coworker, but I love Italian food, and there is no better way of getting the info than from Italians themselves. She does it very similarly, but she adds some parmesane to the crust after marinating. I tried it 5-6 times, tastest amazing and the parmesane makes it extra crunchy.

I have also read The Gargoyle and it is an amazing story. I actually “listened” to it on CD while I was commuting to work 1 1/2hrs away each way and when I pulled in the driveway at the end of the day, I couldn’t bear to turn the car off and couldn’t wait to get on the road the next day just to hear more. With that being said, I would vote for If I Stay.

Oh my gosh, if I may: You guys, you MUST pick If I Stay. Truly one of the most moving books I’ve ever read. I picked it up on a whim at the library over the summer and it quickly became one of my favorite books. I NEVER cry reading books–I’m a huge reader, majored in English in college, so I’ve been around the reading block a billion and a half times, and out of the thousands of books I’ve read, only three have brought me to tears, and If I Stay was one of them. Even if it doesn’t win, read it read it read it!!
