Lunch today included lots of pretty colors.
I topped a big bowl of spring mix with celery, carrots, two MorningStar Farms spicy black bean burgers and pomegranate dressing. I absolutely love using black bean burgers as a salad topper. They add so much flavor and the punch of protein helps fill me up!
The dressing I used on my salad was Marzetti’s simply dressed pomegranate vinaigrette that I bought on sale at Publix on Sunday.
I love this stuff and always stock up whenever I see a deal!
If you scrunched your nose up at the thought of black bean burgers and pomegranate salad dressing, I don’t blame you. It sounds like a totally bizarre combination, but oddly enough, it worked. I was craving black bean burgers but wanted a little sweetness in my salad, so I decided to combine the two and was pleasantly surprised.

My husband are huge fans of the “beef” crumbles and use them regularly to make vegetarian beef strognonff, cheese steaks, sloppy joes, “meat” lasagna, etc.
I’ve never tried anything from Morningstar but the black bean burgers sound good.
As a college student, literally half of my diet is made up of morningstar products! It’s so easy to just heat them up. I love the garden veggie patties, but the back bean burgers are a close second!

I love both the crumbles and the black bean burgers. For our housewarming party a few months ago we bought the black bean burgers at Costco and they were different, almost like a commercial grade product. We recieved so many compliments on the bigger burgers and we plesantly surprised by the differences between those and the ones in the regular grocery store. As a vegetarian I really appreciate Morningstart Farms delicious products for my added daily protein!
