As someone who works full-time, the crock pot is something I depend on year-round.
I have a hard time relegating the slow cooker to the winter months when it allows me to come home to a no-fuss, already cooked dinner.
This evening dinner came together in a flash since I covered some chicken breasts in chicken broth and let them cook in the crock pot all day.
After forking the breast meat apart, Ryan and I covered the chicken in BBQ sauce and assembled our BBQ pulled chicken sandwiches to enjoy alongside roasted zucchini.
Yet another slow cooker success!
I think an evening walk with the pup is in order tonight. Off to take Sadie for a stroll around the neighborhood.

I’m such a fan of cooking chicken in the crock pot! I get really grossed out handling the raw meat, so I love that I can just put it in there and then not think about it for a couple hours.

I need to get out of the mindset that a slowcooker wouldn’t get used much with me bc I’m veg…I’m sure I could find ton of veg recipes, and who doesn’t love extra time in the evening after work?!?

The crock pot is a lifesaver! Plus, BBQ is definitely a summer meal and only tastes best in the slow cooker form! 😉

Your recipes always make me want to invest in a slow cooker. They take up a lot of room, but it definitely seems worth it! So simple. Love the roasted zucchini, too!

I agree! I made an awesome Thai chicken curry in my Crock Pot today. I had my bridesmaids over to help me assemble my wedding invites and we all enjoyed the tasty, slow cooked meal 🙂

nope! i also think they make crock pots that automatically switch off if they get too hot if you’re concerned. 🙂

I only use the crockpot for short recipes where I plan to be home for awhile. I never leave my house with any appliance still on! Too many bad things to go wrong…
But it does look like something my husband would love! I could probably make it overnight and then he could reheat for dinner.

What a brilliant idea to pull out the ol wintertime crockpot… I’ll bet the house doesn’t heat up nearly as much as it does with the oven, right?

I love my crockpot. I have a great chicken recipe called Garlic Chicken.
4-6 chicken breasts
10 cloves of unpeeled garlic
1 tbsp paprika
1 tbsp lemon pepper
1 onion sliced
Place the onion on the bottom of the crock pot. Place chicken breasts on top of the onion. Sprinkle with lemon pepper and paprika. Place garlic cloves (UNPEELED) on top and cook on low for 6-8 hours.

Amen! It is never too hot (not even in FL) for the crockpot! It might just be the one small appliance I would take on a deserted island with me. 🙂 So many less dishes….

I couldn’t agree more! In fact it inspired me to cook mexican chicken in the crock-pot! similar to your taco but not ground chicken just chicken breast!
I do have a question, how is ground chicken? what does it taste like?

Do you ever try cooking the chicken in BBQ sauce and not just broth? I bet the bbq flavor would be absorbed so deliciously in the chicken.

Another quick easy recipe is to take a pound or two of boneless, skinless chicken breasts and put them in the crockpot with 2 cans of cream of chicken soup (no water) on low. I shred the chicken when I get home and put it back in the crockpot and serve on buns, over rice, or over noodles…YUM!
