Last night during dinner Ryan asked me whether I cooked the asparagus differently than usual.
Nope! I roasted it the same way that I always do.
Apparently someone’s taste buds are coming around and beginning to like asparagus. My taste buds had a similar revelation a couple years ago and now I thoroughly enjoy the vegetable that would once cause me to shudder if my mom made it for dinner. Growing up, the simple thought of asparagus and broccoli made gag. I guess our tastes change!
After enjoying last night’s asparagus, I told myself I would roast a big ol’ plate of veggies to eat with lunch today.
Well, lunchtime rolled around and I wasn’t in a vegetable-eatin’ mood, nor did I feel like taking the time to cook something.
Plus, I wanted something cold and chocolaty.
I made myself a big bowl of overnight oats, but added a ton of chia seeds and cocoa powder to the mix before topping them off with banana puffs cereal so the oats were extra thick and satisfying.
Served with a cold, crisp apple and a stick of string cheese.
I made the overnight oats about 20 minutes before eating them and let them soak in the fridge while I worked away. I guess overnight oats don’t really have to sit overnight.
Question of the Afternoon
- Was there a certain vegetable that you hated growing up that you now really enjoy? What is your favorite way to eat it?
Like I said, I hated asparagus and broccoli and now I love them both simply roasted… or with hollandaise sauce.

Truth…I have always made my overnight oats that way. Usually because if I prep them the night before I invariably don’t want them the next morning.
As for vegetables…I hated yellow summer squash when I was a kid and now I love it!

Not so much vegetables…but I was completely ANTI seafood growing up. I said I “wouldn’t eat anything that swims.” Now I loooove it!

I have always like most veggies but my husband hated onions when we met but 9 years later and he requests them in dishes now! He likes them carmelized the best!

I wasn’t really that big on veggies as a kid – I’d eat them, but I didn’t love them. Now I can honestly say I LOVE them!! I know a lot of people – even adults – hate Brussels sprouts, but they’re definitely one of my faves!

I guess tomatoes are technically a fruit, but I always hated tomatoes growing up. My stepmom would always put them in our dinner salads and would make me eat at least three bites of them. Now I LOVE them and eat them on salads, by themselves, in eggs, and on sandwiches all the time.

Hey girl! Dumb question, but what kind of cocoa powder do you use? I’m assuming you don’t use unsweetened, but is cocoa the only ingredient? I tried making those oats and found out my cocoa was unsweetened….. and… holy bitterness batman! 🙂 Woops!

I actually can’t think of anything! I’ve always like asparagus, brussel sprouts, broccoli and most other veggies others hate. And I still hate kale, spinach (unless its in a green monster) and other leafy greens.

I looove faux-vernight oats: I find adding a little less liquid than normal does the trick!
Man I used to hate any veg that didn’t cone with cheese, butter or puff pastry…now I can’t get enough of them, especially raw!

strangely enough, most of my foods I have “learned” to like have come from restaurants where I’ve worked as a server. Lone Star made me like sweet potatoes. A local seafood restaurant made me like salmon! 🙂

wow how have I never looked at the workout page before? It’s great! So many good ideas in there. I’m especially intruiged by your treadmill workouts, since I tend to get super bored doing cardio.
But I notice that you seem to go at way higher speeds on the treadmill than I can (bravo to you for that!). What would be super helpful to me, would be if you could tell me approximately what pace is a sprint for you, what’s a fast jog, what’s a slow pace, etc so then I could adjust those to my paces.
Also I’m currently trying to expand my boyfriend’s veggie repertoire by roasting. Because really, don’t all veggies taste good roasted?

I hated peppers and beet as a kid, but now I can’t get enough of them. They are both a staple in salads for me. I bought the cutest baby beets in TJ’s today and I can’t wait to dig into them.

I would have to say brussels sprouts. I never had them until last year because I automatically though they were gross. I’m glad that I finally decided to try them because I love them! I really like roasting them with some cooking spray and garlic salt and pepper. Delicious! 🙂

I hated lima beans…and I still don’t like them, lol. But I pretty much like every other vegetable. Another strange change of events for me: I used to hate scallops. My mom would make them and say I couldn’t leave the table until I finished them. Now I love them. Like I crave them 🙂

I’m 50/50 on tomatoes. I hate the mushy inside but I don’t mind the rind if it’s pretty crisp. And diced. And in something. Ok, maybe I’m 20/80 on tomatoes.

I used to hate hate hate brussel sprouts.
Now, steam them lightly, cut them in half, and mix them with sour cream and bacon, and I’m in heaven. SOOOO delicious!

Definitely brussel sprouts. My mom always boiled them and the whole house would smell for days. Now that I discovered roasting them… they are a whole new veggie! I can’t get enough. My mom is in shock that I eat them now:)

When I was little I was a ridiculously fussy eater, it drove my mother crazy! I didn’t used to like broccoli, cabbage, asparagus, brussel sprouts, peas or carrots! I now love all of them though 🙂

When you said overnight oats don’t have to be made overnight, it reminded me of one of my friends that thought the only was that sponge rollers (remember those pink foam rollers) would work was if you slept in them overnight!!! haha

Brussels sprouts. I hated them as a kid and love them now. I actually wasn’t big into any vegetables with the exception of squash and potatoes, but now I LOVE just about all of them. My favorite way to eat Brussels sprouts is roasted with olive oil, sea salt ,and pepper.

To be REALLY honest, I never hated annnyyy vegetables!! I’ve always loved them in any way shape or form of cooking, and I still do. 🙂 I think my fiance is sloowwly coming around his asparagus fear too! yay haha.

I hated all vegetables except for potatoes, and they had to be cooked a certain way… but now I’m a vegetarian! Taste buds really do change 🙂 Now, if only I could convince my boyfriend, the “meat-only” eater, that veggies are your friends…

It all started when I worked as a waitress and was strapped for cash… I would munch on crutons and cherry tomatoes off the salad bar I told myself “you should love tomatoes bc they’re healthy and FREE” hahaha

brussel sprouts!!! and almost every single other veggie besides broccoli and white corn.
finally, at 22, i decided it was time to do something about this. i loved the look of vegetables – they always looked like they would taste good – but the second i got to eating them, ugh. it was awful. the master plan? give up meat for Lent. though i’m not religious, i enjoy participating in Lent each year just to teach myself that i am capable of self control! haha. so, going veggie for a while forced me to eat…and like veggies. now, brussel sprouts are one of my favorites!!! with a little butter or evoo and a dash of salt…DELISH!
