I’m sad to say that the “out of sight, out of mind,” mentality has caused me to overlook some of the veggies I purchased at the grocery store last week. When I opened the crisper drawer and spotted cauliflower on the verge of death this evening, I knew it was time to use it or lose it.
Though I knew I needed to use the cauliflower, I wanted comfort food for dinner…. Something hot, satisfying and delicious.
Enter, cauliflower pizza crust. 🙂
Ryan and I both love this recipe. The first time we made it we didn’t have much faith, but it turned out oh-so-cheesy and oh-so-tasty.
The two main ingredients in the crust are cauliflower and cheese. The cauliflower really takes on the cheese flavor, so you end up with quite the cheesetastic crust.
Ryan and I topped our respective halves with lots of veggies and goat cheese. Ryan also added MorningStar Farms Grillers Crumbles to his half.
I think I overdid it on the amount of cauliflower I used in the recipe this time (I didn’t measure it exactly), so my pizza slices didn’t hold up like they previously have.
Luckily it still tasted great!
Taxes
I still have to do my taxes. 🙁 Boo.
Luckily, my financial savvy fiance has agreed to help me and I’m off to start filin’.

i did my taxes like 2months ago cause my dad has OCD and helped me set up turbo tax etc. i loved getting a nice tax return check in the mail 🙂 spent most of it at whole foods haha

OMG! I made cauliflower crust too, except I made it vegan and it wasn’t very crusty. Do you think it’s the cheese that holds it together b/c I only used a 1/4 cup of vegan cheese? Love your blogs, by the way 🙂

yeah i definitely think the cheese is really important. i think i added too much cauliflower to the pizza last night & i believe that’s why it didn’t stay together like it normally does.

You know, I actually stumbled upon your blog yesterday because of this recipe. I tried it with my bf, but it’s a bit soggy, and then re-tried today to see if I could get it right. I didn’t think it possible to have hit my pizza max! Anyway, first of all, love your site! And I will be following:) Second, any ideas on a crispier crust, or what I may have done wrong.

i think it’s all about the cheese! i’d try adding a bit more cheese if it didn’t stay together. i think that was my problem last night!

yes, it definitely is – especially if you have a food processor to use to “rice” the cauliflower.
