There are no less than one million overnight oats recipes on the internet these days. Okay, okay, that may be a slight exaggeration, but it sure seems like there’s an overnight oats recipe that will satisfy any flavor combination or craving. On this blog alone, I’ve shared a bunch, but here are my favorites:
And then there’s the basic how-to post for those who want to create their own batch of overnight oats: How to Make Overnight Oats.
But what about today’s recipe for peanut butter cookie dough overnight oats? Where does this one fall in the mix?
My peanut butter cookie dough overnight oats recipe is actually a throwback recipe I shared on the blog years ago. We’re talking 2013, my friends! When I went to make a batch of peanut butter cookie dough overnight oats for breakfast a couple of weeks ago, I thought of this post! I’ve been making the recipe for years and have it memorized but when I took a moment to look it up on the blog, I immediately realized the photos needed a little updating. Now that this recipe got a little makeover, I’m bringing it back to the forefront of the blog because it’s one you should add to your must-make list, especially if you’re in the market for a simple, prep-ahead style breakfast that will keep you feeling satisfied for hours.
So what do you need to make this overnight oats recipe? Not too much! Here’s a brief rundown of the ingredients:
- Old Fashioned Oats
- Peanut Butter
- Unsweetened Vanilla Almond Milk (or milk of choice)
- Honey
- Chia Seeds
Making the overnight oats could not be any easier. You just stir everything together in a bowl, cover it up and refrigerate it overnight before adding a splash of almond milk and any desired toppings in the morning. This is the kind of breakfast I can get behind on busy weekday mornings with three kids in the mix!
I hope you love it, too!

Whipped coconut milk. Do it, just trust me on this one.
peanutbutterfingers says
i did this back in january and i couldn’t get enough! as a big-time coconut AND whipped cream lover, it was heaven.
Victoria says
Whip it and then let it sit in the fridge for a few hours before eating it. It thickens to the most amazing texture.
peanutbutterfingers says
i definitely didn’t have the patience to let it sit. thanks for the tip! i’m pumped to try this again.

I am new to oatmeal, if you don’t like them cold, how long would you recomend heating them up for in the morning?
Julie @ Peanut Butter Fingers says
i’d heat them in 30 second intervals, stirring regularly, until they’re warm enough for you!
Alexis says
About to get off work and now I will be heading straight to the store to buy some chia seeds (hopefully I can find them). I could use a mix up for breakfast besides my usual oatmeal and egg whites.
Julie @ Peanut Butter Fingers says
check the bulk bins!

Do you have a simple recipe for how you prepare pork chops? I’ve seen them pop up a few times now and a craving has hit.
Julie @ Peanut Butter Fingers says
hi sharan! i almost always just heat a bit of olive oil in a pan and then just saute them in whatever spices i’m feeling. here’s one of my favorite recipes: https://www.pbfingers.com/2011/01/11/sugar-n-spice-pork/ <– nice and easy, too!!

I love coconut milk but I always fear I won’t be able to use the whole can when I open one. I think I just need to start using it into more and more of my every day recipes…oatmeal, cereal, smoothies, it’s just so good!
Sharan says
The Earth’s Choice brand has mini cans!
Cindy says
So, do you put coconut milk in your coffee too? I am trying to get away from the sweet flavored creamer to just black, which I am doing fairly well with but still have to have flavored coffee. Yours doesn’t look black, so curious what you use.
Becky says
Yum! I will definitely be trying this! But, do you know a good substitute for chia seeds? I don’t have any, and I have had trouble finding them at my local grocery store.
Sarah Z says
This will definitely be my breakfast before boot camp on Sunday morning – thanks much for sharing! PS – LOVE the scarf!
Tara | Treble in the Kitchen says
Yum! I can’t wait to try these oats once lent is over…I gave up PB and all nut butters for lent!! EEK!!
Sara says
I pinned a recipe last night (and tried it this morning) that seems right up your alley. Cook you rolled oats in part coconut milk and part water. I cooked 1/2 cup rolled oats in 1/2 cup coconut milk and about 3/4 cup water. While that’s cooking, toast some almonds (sliced, slivered, whole chopped) and some shredded or flaked coconut. Toss that into the cooked oatmeal and top with a few chocolate chips. Almond Joy Oatmeal! It was so good!
Erica @ Love the Leap says
Those overnight oats are KILLING me!!! I’m going to have to wait til Lent is over to try that delicious looking bowl 🙁 I miss PB!!
Ashlee says

Tracey@ Talkative*TLC says
Those oats look fantastic! Since I follow your overnight oats recipe as it is (and have passed it on to many family members), I’m excited to give this variety a try!
