This recipe for peanut butter cookie dough overnight oats is packed with peanut butter flavor and tastes fantastic when topped with a dollop of peanut butter, a handful of fresh berries or a sprinkle of your favorite nuts! Prep the oats the night before you’re ready to dive into a delicious and filling peanut buttery breakfast treat.

There are no less than one million overnight oats recipes on the internet these days. Okay, okay, that may be a slight exaggeration, but it sure seems like there’s an overnight oats recipe that will satisfy any flavor combination  or craving. On this blog alone, I’ve shared a bunch, but here are my favorites:

But what about today’s recipe for peanut butter cookie dough overnight oats? Where does this one fall in the mix?

Peanut Butter Oatmeal Cookie Dough Overnight Oats

My peanut butter cookie dough overnight oats recipe is actually a throwback recipe I shared on the blog years ago. We’re talking 2013, my friends! When I went to make a batch of peanut butter cookie dough overnight oats for breakfast a couple of weeks ago, I thought of this post! I’ve been making the recipe for years and have it memorized but when I took a moment to look it up on the blog, I immediately realized the photos needed a little updating. Now that this recipe got a little makeover, I’m bringing it back to the forefront of the blog because it’s one you should add to your must-make list, especially if you’re in the market for a simple, prep-ahead style breakfast that will keep you feeling satisfied for hours.

So what do you need to make this overnight oats recipe? Not too much! Here’s a brief rundown of the ingredients:

  • Old Fashioned Oats
  • Peanut Butter
  • Unsweetened Vanilla Almond Milk (or milk of choice)
  • Honey
  • Chia Seeds

Making the overnight oats could not be any easier. You just stir everything together in a bowl, cover it up and refrigerate it overnight before adding a splash of almond milk and any desired toppings in the morning. This is the kind of breakfast I can get behind on busy weekday mornings with three kids in the mix!

Description

This recipe for peanut butter cookie dough overnight oats is packed with peanut butter flavor and tastes fantastic when topped with a scoop of peanut butter, a handful of fresh berries or a sprinkle of your favorite nuts.


Ingredients

Scale
  • 3/4 cup old fashioned oats
  • 1/2 cup unsweetened vanilla almond milk + another splash in the morning
  • 1 1/2 tablespoons peanut butter
  • 2 teaspoons honey
  • 1 teaspoon chia seeds (do not omit or the oats will not thicken as well)
  • Optional toppings: Honey roasted peanuts, fresh berries, shredded coconut, chocolate chips, etc.

Instructions

  1. Stir all ingredients together in a bowl
  2. Allow the bowl to sit overnight in the refrigerator
  3. In the morning, add a splash of milk and stir everything together again
  4. Top with honey roasted peanuts, additional peanut butter, fresh berries, etc.

Notes

If you love the taste of natural peanut butter and don’t feel like you need any sweetener, you can easily omit the honey.

        Whip it and then let it sit in the fridge for a few hours before eating it. It thickens to the most amazing texture.

    How long ago did you buy that PB coffee from the Fresh Market? I really want to get some & am going to be near a Fresh Market (it’s an hour & a half from me) this weekend finally, but I see it says “limited time” on the package… hope they still have it, I really want some!!

    What kind of coconut milk do you use for cooking with? I’ve always wanted to try it, but I never know what I”m supposed to buy. They have the cartons and the cans and then even more options once you narrow that part down.

    I am not much of an oats fan, but I must say, those peanut butter oatmeal cookie dough overnight oats sound amazing! I am especially loving the addition of honey roasted peanuts on the top! 🙂 I just might have to give them a try! Maybe you will convert me into an overnight oats lover ;).

    I’ve tried overnight oats a few times and liked them but this recipe may make me LOVE them! I thought my dog was the only one that tangles himself (and me) in the leach, glad to know we’re not alone lol 🙂

    I love coconut milk but I always fear I won’t be able to use the whole can when I open one. I think I just need to start using it into more and more of my every day recipes…oatmeal, cereal, smoothies, it’s just so good!

    So, do you put coconut milk in your coffee too? I am trying to get away from the sweet flavored creamer to just black, which I am doing fairly well with but still have to have flavored coffee. Yours doesn’t look black, so curious what you use.

    I pinned a recipe last night (and tried it this morning) that seems right up your alley. Cook you rolled oats in part coconut milk and part water. I cooked 1/2 cup rolled oats in 1/2 cup coconut milk and about 3/4 cup water. While that’s cooking, toast some almonds (sliced, slivered, whole chopped) and some shredded or flaked coconut. Toss that into the cooked oatmeal and top with a few chocolate chips. Almond Joy Oatmeal! It was so good!
