(Side note: I loved looking back at the post where I made this recipe for the first time last year, on the night when we put our Christmas tree up! Hooray for the holidays!)
This meatloaf is really easy to make and the BBQ sauce makes it extra moist and flavorful.
Along with the meatloaf, we enjoyed broccoli and grape tomatoes for some added nutrition.
Ryan was quite the happy camper when he arrived home and smelled this cookin’ away in the oven!
We both gobbled down our meals rather quickly. 😀
Protein Oatmeal Cookie Bites
While the meatloaf was cooking, I did some experimenting in the kitchen. I was in the mood to bake, but didn’t want bake goods chillin’ around out house since I’ve been known to polish off batch of cookies on my own in a week one day.
I decided to try my hands at creating a protein cookie and the result was pretty darn good!
Disclaimer: I would never say that these cookies are as good as full-fat, sugar-laden cookies, but for what they are (chock full of protein and whole grains), they’re pretty tasty!
To quote Ryan, “I’d eat ‘em again.” 😉
Ingredients
- 1 c. oats
- 1/2 c. flavored protein powder (I used All the Whey chocolate peanut butter cup)
- 1/2 c. fat-free cottage cheese
- 1 tsp. vanilla extract
- 1 tsp. baking soda
- 1 tbsp. ground flax seeds
- 1/4 c. water
(Note: You may substitute one egg for the ground flax seeds and water)
Directions
Preheat oven to 350 degrees. Mix all ingredients together using a mixer. Place round spoonfuls of dough on a cookie sheet sprayed with non-stick cooking spray. Bake for approximately 10 minutes.
Enjoy!
Seems like a great recipe to me! I’m all about having healthy treats on hand…especially during the week where I want to “indulge” while remaining on the healthier side.
I like Ryan’s seal of approval – “I’d eat ’em again”! Too funny!
You know, I have never understood meatloaf nor could I ever really get into it. Even when I did eat meat, my mom would make this all the time growing up and I detested it. I think she just had a really bad recipe. Super dry and all that Lipton Onion flavor! 😉
My husband judges food the same way… if he’d eat it again or not!
i make a bbq cheddar meatloaf that’s delish! love it 🙂
Haha, your protein cookies make me feel guilty for baking full-fat, sugar-laden cookies! I’d be willing to give ’em a try though. My brother and I once made ‘fitness donuts’ with protein powder. 🙂
Im saving this recipe for hte boy–thanks!
Very interesting recipe…never would think to use cottage cheese!
loving these protein cookie bites! yum!!!! dip those babies in PB!
I love meatloaf, and have two great recipes. Heaven and Christian are always asking for more, but it’s to hot these days to have the oven on. As soon as fall rolls around, I will be making meatloaf again. 🙂
I will have to try that recipe once I get some protein powder stocked up again…looks delicious!
Hey! Its carlee! please please check out my new blog!! spread the word! http://foodfriendsandsunshine.blogspot.com/
I love meatloaf! I’m really going to have to try your recipe. The cookies sound yummy! I love that there is protein powder in them.
What a great weeknight meal overall with an amazing dessert as well! I wish I was as good as you, making amazing dinners for Ryan and dessert. I can barely think about planning meals, but nothing ever comes together good or my husband ends up eating nachos/pizza every night!
Mmm, I’ll have to try that meatloaf recipe! I was also just experimenting with some oatmeal cookies last night! I think the coming of fall weather puts me in more of a warm hearty cookie sort of mood.
Those look AMAZING! So does the meatloaf – what an awesome dinner + dessert combo you’ve got there girl! Love it 🙂 Enjoy your night!
My hubby also loves meat loaf! Well, turkey loaf!
Those cookies look great, Julie!
Cottage cheese? In cookies? You blowin’ my mind, girl!
That meatloaf looks delicious! I am definitely a fan of BBQ sauce so will have to try it.
I had to do a double take…I was half-reading/half-skimming your post this morning and got to the picture of the meatloaf…and proceeded to scroll back up to make sure I wasn’t looking at a picture of pb & j meatloaf! The picture did kind of look like it could have been and in the interest of your blog’s title it wouldn’t have shocked me.
PS I love waking up in the morning knowing that someone in the blogging world has already posted fresh content that wasn’t there when I went to bed. Thanks!
That meatloaf looks amazing! I want some right now.
Yup, this would cure my sweets craving. I’m not quite sure how cottage cheese works in there but they look great, so I’d give ’em a try. I imagine them having a hint of cheescake-ish-ness. (Yeah, totally a word.)
Yup, I’m definetly going to try making those cookies… Thanks for the recipe 🙂
I always know how much my husband likes something by how quickly he eats it 😀
I like the recipe I may have to try them. Although I would probably finish all of those in one day too. sweets and I don’t get along or maybe we get along too much
I may have to buy more protein powder – those cookies look good!
You are always so creative with how you add protein to recipes- I always love all of your ideas- especially the protein pancakes 😀
How much does 1/2 cup of All The Whey protein powder weigh?
