Ricotta Cheese Love Affair

Throughout the past month or so, I’ve been a little obsessed with ricotta cheese.

I’ve mostly found myself using it in dishes that would otherwise be sweet…

On top of waffles for breakfast!

In a bowl with fresh fruit, slivered almonds and a sprinkle of cinnamon for a morning snack!

Though I’ve loved using the cheese in new ways, nothing is better than ricotta cheese in lasagna. Nothin’!

Dinner

Tonight I used ricotta cheese the way it was meant to be used and prepared a delicious eggplant lasagna.

We ate our eggplant lasagna with a side of garlic bread and two sliced pears after playing in the backyard with Sadie.

Off to dive into my book and cuddle up in bed. Enjoy your evening!

    Eggplant Lasagna sounds great – I’ve never tried that before but eggplant is always good in italian cooking!

    I keep meaning to try ricotta cheese in breakfast or with sweet things like you do, I think I’ve only ever had it in lasagna!

    I just wanted to stop by and say that I am currently eating that coconut milk cookie dough ice cream that you mentioned the other day – you sold it so well that I HAD to try it! Unfortunately I think I now have a rather expensive new obsession 🙂

    Love me some ricotta too!

    I was wondering – is there a reason you mix it with cottage cheese? I was wondering if this was to dilute the sodium a little? Was going to let you know that Friendly’s makes a no salt added cottage cheese. I mix mine with regular 1% (otherwise it’s a little too bland) to cut down on the salt and still get the protein!

      that’s the cottage cheese i buy! i actually mix the cottage cheese w/ the ricotta b/c it’s too bland on its own since i buy the no salt added! 🙂

    Ricotta is very multi-purpose. It’s good mixed with protein powder on top of a sweet potato. It’s also super good in meatballs!!

    i love ricotta cheese. trader joe’s has an AMAZING fat free version. i usually despite fat free cheeses, but there’s is super creamy and delish!!!

    One of my favorite ways to use ricotta cheese is in a summery pasta dish: pasta (1 lb), ricotta (15 oz container), parm cheese (1 cup), juice and zest of one lemon and some basil. Seriously so so delicious!

    I’m not going to lie, I’m a little intimidated to use ricotta cheese. Primarily due to the texture and mild taste. I haven’t tried it on it’s own, only in pastas, so I’m picturing it to taste like cottage cheese. Bleck! I should really give it a fair trial one of these days, however. Who knows…maybe I’ll love it?!

    I’ve never had ricotta..but I’m sure I’d love it as I’ve heard it’s similar to cottage cheese..either way, cheese is cheese i.e. delicious :)!

    I love ricotta cheese as well, but is it not the same as cottage cheese, no?I think it is over here in Austria!

    you know what you should do… try ricotta cheese with multiple spoonfuls of almond butter mixed in. it might sound weird at first but trust me, it’s a heavenly mixture!!

    You and I both! I love the creaminess and the texture. I love big dollops of it on a pizza with spinach. I agree there is something about the marinara plus ricotto combo that get me too. Just wanted to let you know I share your love affair.

    I love eggplant lasanga & eggplant parm, but my husband isn’t a fan! 🙁 Maybe I’ll make it “secretly” next week & just feed it to him without giving him a chance to protest!

    I bought a tub of it last night at the store! I plan to use it as a binding agent (WITH egg) in meatball sliders for tonights dinner!

    Eggplant lasagna sounds delicious! I’m not a huge fan of ricotta cheese but it does taste good in stuffed shells. Yum 🙂

    I have a love affair with cottage cheese! Sweet or savory, yummy 🙂 I always think of ricotta as something with lasagna, not sweet… Is it more of a spreadable cheese or could you eat it like cottage cheese/ yogurt? Are there different varieties?

    Your love affair has turned into an obsession for me too – having ricotta on waffles is a daily thing now! Which is good because before you posted that, I’d make lasagna, and then the other half of the container of ricotta would go unused until it went bad and I had to throw it out! Now I’m going through it like water!
