Most classic comfort foods can be revamped in a way to make them healthier – but still tasty! Here are a couple pictures of my recent creations:
French Toast: One Arnold whole-wheat sandwich thin, two egg whites, lots o’ cinnamon & a pinch of Splenda
Eggplant Lasagna/Parmesan: Sliced eggplant, light marinara sauce, low fat ricotta cheese, light mozzarella cheese, oregano, Parmesan cheese
Roasted Veggie Salad: Roasted zucchini, broccoli, red onion, plum tomato, Morningstar Farms chik’n strips, light mozzarella cheese
Pizza with Cauliflower & Light Mozzarella Cheese Crust: Cauliflower, egg, light mozzarella cheese, light marinara sauce, oregano, parsley, light cheddar cheese, green pepper
Chocolate and Vanilla Meringues: Egg whites, Splenda, cream of tartar, cocoa powder
