I love it when I play around in the kitchen and a good recipe actually comes out of my experimentation!
I was craving some kind of a soup this evening and when I opened the pantry and saw clam juice staring back at me, I figured I would try my hand at a homemade vegetable soup with a bit of a seafood flare.
In the end, I had a hot bowl of shrimp and vegetable soup that both Ryan and I gobbled up!
Shrimp and Vegetable Soup
Serves: Two very hungry people
- Prep time: 15 minutes
- Cook time: 40 minutes
Ingredients:
- 1 tablespoon canola oil
- 1 medium onion, chopped
- 2 large carrots, chopped
- 3 celery stalks, chopped
- 2 teaspoons chopped garlic
- 1 (14.5 ounce) can diced tomatoes
- 1 (8 ounce) bottle clam juice
- 1 teaspoon thyme
- 1 1/2 teaspoons Old Bay
- 1 1/2 teaspoons red pepper flakes
- 1 dozen shrimp, peeled
- 3/4 cup corn
Directions:
- Heat canola oil in a large pot over medium heat. Add onion, carrots, celery and garlic. Stir regularly and cook until onion is clear and carrots are slightly tender, approximately 8 – 10 minutes.
- Add diced tomatoes, clam juice, thyme, Old Bay and red pepper flakes and let simmer on medium-low heat for approximately 20 minutes.
- Add shrimp and corn and cook until shrimp are pink or until shrimp are warm if using frozen shrimp.
There is something so satisfying about dipping into a bowl of soup and coming up with a spoonful of healthy veggies!
When Ryan asked me what I used to season the broth of the soup, I said, “Old Spice.”
Huh?
Err, I mean Old Bay.
At least they both smell fantastic in their own special way.
After dinner, we took Sadie on a nice walk around the neighborhood.
Ryan ordered a pair of Injini running toe socks after reading your rave reviews (thank you!) and they arrived today, so he slipped them on for a “test walk” this evening.
When he first looked at the toes in the socks, he said, “How are my alien feet supposed to fit into those little toe holes?”
After a little wiggling, they slid right in. (<—TWSS… I’m horrible, I know.)
Since the weather dipped into the 60s tonight, I put on my new Five Bamboo hoodie that the company gave to me a couple of months ago.
I has been too hot in Florida to wear until now, so I was pumped to finally have a chance to wear it.
The hoodie is nice and long and so, so soft. Plus it has little thumb holes that I think are so neat. Apparently Sadie thought it was awfully comfy too and wanted in for a pre-walk hug. That dog loves soft fabrics!
On our walk we saw an interesting sight.
I tweeted about this before, but there is a man who walks his dog by driving a golf cart around the neighborhood. It totally cracks me up and I’m so glad I was able to snap a picture.
Ryan said we should get a golf cart to walk Sadie, but put it in neutral and make her pull us. Maybe then she’d actually get tired for once!
Off to do some stuff around the house before Modern Family starts!

Your creation of vegetable soup with shrimp looks AMAZING!!! I am a huge fan of minestrone or pretty much any type of vegetable soup and when I’m really hungry I’ll add some grilled chicken to it, but NEVER thought of adding shrimp!

I’ve seen someone walk a dog on a segway before, and it was hilarious. I have yet to see the golf car in person!

HAHA maybe he’s from my hometown…I live outside Atlanta in the “golfcart city”. EVERYONE has a golf cart, and 9 out of 10 people “walk” their dogs on their golf carts on the golf cart paths. It’s hysterical!!

My parents weekend home is on a golf course, and the neighborhood is mostly comprised of older couples whose kids are adults now. So I’ve seen the golf cart dog walking before there!
It’s actually great entertainment in their ‘hood. At the gym you see some funny moves, at the pools you see some funny ‘aerobics’ classes, and on the golf course you see some awesome outfits. I hope to be one of those funny active people one day!

Just a thought. For everyone calling this man lazy, you have no clue what he might have been through. He could be recovering from major surgery, like a hip replacement or a triple bypass. If so, he’s still letting his dog get some exercise so kudos to him for at least that!

LOVE that picture of you & Sadie- she looks like such a little cuddler- makes me want a dog SO bad. Just curious- how allergic are you to dogs?? Because Craig is SUPER allergic- if he is around a dog for about 30 minutes his eyes start to water & he gets really sneezy. Unless of course it’s a hypoallergenic dog- but I know you mentioned that Sadie is almost hypoallergenic..? I can’t recall exactly. But I’m just wondering out of curiosity- I miss having a dog around SO very much!

This is one of my favorite recipes- we eat it every few months and love it. Just one recommendation, and I wonder if you had a typo in your recipe— if you use the amount of red pepper flakes you recommended, it is way too hot. My husband and I both love spicy foods but even for us it’s too hot. I use 1/8 of a tsp of red pepper flakes.
