Happy National Pancake Day!
In case you care to celebrate, feel free to check out a previous recipe roundup post I did with a plethora of healthy pancake recipes, including Greek yogurt protein pancakes and banana bread protein pancakes!
I wish I would’ve known it was National Pancake Day this morning because I would’ve made a batch!
Dinner
I seriously considered making pancakes for dinner, but wanted something savory. I contemplated making fritters of some sort but inevitably decided to go with a simple quesadilla since our food is running a bit low at the moment.
I stuffed a whole wheat tortilla with cheese, chicken and zucchini.
Fueled by ‘dillas, Ryan and I headed out back for puppy playtime with a very energetic Sadie.
Her catching skills were on point this evening, as were her ridiculous faces.
I love my little ham.
While outside, Ryan and I entertained ourselves by creating a competition that involved throwing nearby pinecones into the sinkhole in our back yard in between frisbee throws for Sadie.
Small town fun at its finest.
It’s oddly entertaining.
Time to watch Jeopardy!
Ha, gotta love pinecones! Enjoy the rest of your pancake day 🙂 I fully support celebrating year-round.
Is that a real sinkhole?? Did the pinecones disappear?
I love your pancakes! I really can’t wait to make the banana bread protein pancakes… they sound delicious AND good for me. Win-win!
Do you and Ryan shout out the answers to Jeopardy and try to beat each other? My Dad won’t play me any more because I get way too competitive with him… haha 🙂
i wish i would’ve known it were national pancake day this morning too! oh well, my pancakes will taste just as good tomorrow morning. 😉
Goodness…I just can’t decide what’s better, the pancakes or the quesadilla!
I had no clue today was National Pancake Day! Sad. Games like that tend to be the most fun to play!
that quesadilla is unbelievably cheesy… i like your style, girlie!!
Sounds like a fun evening 🙂 My grandparents are staying with my great aunt in Ocala tonight on their way back to Ohio after spending about a month in Florida!
National Pancake Day?? I saw it was Chocolate Souffle Day… conflicting information! 😉
I don’t know how you get those great shots of Sadie! My dog won’t sit still long enough 🙂
Sadie is too cute!!!
I just got back from my first trip to Florida and cant wait to go back! What a beautiful place to live. We were near Boca Grande and had a great time on the beach, swimming (we joked that people could easily spot the pale Canadians over joyed to be in the “frigid” waters) and meeting super friendly Americans from all over. I am hoping next time we can check out Orlando!!
Pancakes didn’t fit into my day but everyone’s talk of them has me wanting some for bfast tomorrow! Protein pancakes made with 2 scoops just-add-water pancake mix and 1 scoop vanilla whey protein!
Mmmm yummy! We just had chicken fajitast–gotta love Mexican food. SO tasty.
Have a good night 🙂
We don’t have cable at our house yet and we do some interesting things with our time! Glad to see we’re not alone, haha
every day is national pancake day for me lately. i cant seem to go a day without eating them. not complaining 🙂
Loving pancakes right now, but didn’t get to celebrate with a stack, but there’s always Saturday morning!
Oops! If I had known it was National Pancake Day I wouldn’t have had waffles for breakfast 😉 Quesadillas are such a great way to turn random bottom-drawer refrigerator-leftovers into a meal, yours looks like it turned out pretty good!
I’ve never actually seen a real sinkhole! Haha I think I’d find that entertaining too!
Sounds like a fantastic game!
I just made a batch of your Greek yogurt pancakes on the weekend – they’re one of my faves!
Ugh! Florida sink holes can be huge! And scary! But Sadie is so darn lovable!!
Your dinner looks incredible! Mmmm! I just ate supper but my mouth is watering at the sight of that!!!
I had zucchini for dinner too! But instead I just had it as a side dish with red peppers. I’ll definitely have to incorporate the zucchini into a wrap in the future! 🙂
haha I love the random pinecone game! Happy Pancake Day!
what is the population of Ocala?
Two Pancake Days in 1 month? Go February!
I found out it was national pancake day this afternoon too so I gave in and made them for dinner. Who am I kidding, it doesn’t take very much convincing for me to have pancakes for dinner!!
I am so bummed I didn’t know about National Pancake Day! Man! Oh well, better luck next time… you and Ryan are absolutely adorable! It makes me happy to see two people (and their pup) so happy and in love 🙂 AND that Quesadilla looks amazing! MUST try with Zucchini!

So you’re on some random Spanish (I think….) blog, thought you’d want to know!!
Found this on Pinterest.
I swear I thought I read that National Pancake day was last week. Maybe it was some other food. I guess I need a food day calendar.
haha! Just noticed I forgot to put the a on the end of my name above.
I missed pancake day again – oops!
Lol, looks like Sadie had a blast as usual!
I get so jealous when I see you and Ryan outside in shorts! Maine will be getting 10 inches tomorrow, i’m ready for summer!
I wanted pancakes so badly yesterday! My fiance and I tried to go to iHop for the free pancakes and apparently so did everyone else. The place was a mob scene. So we left unfortunately.
Looks like a fun evening! 🙂
Y’all are too cute! Like big kids playing in the back yard. 🙂
That dinner looks so good, and its only 10 am! ha 🙂
