Lunch today snuck up on me!
Before I knew it, my stomach was grumbling and I needed food!
Fact: This meal looks horrendous.
But lots of shredded cheese has a way of making me overlook an unattractive dish!
I began by sautéing a chopped chicken sausage in a skillet while I steamed some cauliflower in the microwave. I then added leftover roasted Brussels sprouts to the skillet, followed by the mashed steamed cauliflower and a boatload of shredded cheese.
Easy, satisfying, ugly and delicious!

The Fault In Our Stars by John Green. We’ll be discussing this book on the blog on Friday, April 5. I can’t wait to start reading!
Now let’s talk about St. Patrick’s Day running gear…
St. Patrick’s Day Running Gear
Are any of you out there planning to run in a St. Patrick’s Day race?
Ryan, my sister, my sister’s boyfriend and I will be running in a 10K on St. Patrick’s Day and ever since we signed up to participate, we’ve been sending each other costume ideas. You know we like to dress up for races together!

More St. Patrick’s Day gear that caught my eye…
I saw a bunch of women wearing fun sparkly skirts over their leggings or compression shorts at the Women’s Half Marathon a few years ago and thought they looked awesome! (Bachelor fans, I think we know Tierra would be all about this one. Sparkle.)
You guys know how obsessed I am with these headbands by now. When I saw the shamrock headband on their website, I just had to have it. A headband that doesn’t slip that’s also peppered with lots of little shamrocks!? Oh yes! (Get psyched because YOU have a chance to win a $40 BICBands gift card that you can use toward one at the end of this post!)
- Target $1 Bin Finds
Surely I’m not the only one out there who gets suckered into the Target $1 bins? I found a bunch of goodies in the $1 bins last weekend that I picked up for our upcoming race, including blinking bracelets, wigs, light-up rings and more. I was especially pumped about the neck ties!
Just in case your running shorts are a little too big.
I’m not gonna lie, these PRO Compression shamrock socks shamROCK my socks off. (Sorry, I just can’t help myself.) I saw Monica and SkinnyRunner blog about them last week and was so excited when they sent me a pair to try! (You can use the promo code MARCH for 40% off any of their marathon socks or calf sleeves right now!) I can’t wait to wear them during next Sunday’s 10K!
- More Fun Knee-High St. Patrick’s Day Socks
Target comes through in the clutch again with a bunch of knee-high St. Patrick’s Day socks for only $5!
I found this little gem in the Race Junkie’s Etsy shop and thought it was adorable!

My birthday is St. Patrick’s day, so every year that I can remember my family has done something special to celebrate. My favorite St. Patrick’s Day tradition is bringing green bagels to school for my class to share. (I’m now in college, but my mom still tries to get them to me to share with my friends.) My mom didn’t like buying cookies or cupcakes for my birthday to share because they are pure sugar, so she bought green bagels from the bagel shop in town. It’s been a tradition since I was two years old!

I’m running the Shamrock 15k in Portland, Or on the 17th. This will be my first St. Paddy’s Day run and I’m excited… got myself a green sparkle skirt! The finishers medal is a beer opener … ha! My hubbie is going to love that one!

Green pancakes!!!!

Last year I had just gotten back from a week long service trip in Nashville, TN on St. Patty’s Day. We had just driven 18 hours to get home, and you better believe we were tired. nevertheless, with St. Patty’s day gear, snacks, and drinks, we celebrated in true Irish fashion, and ended up watching Tangled (one of my all time favorite movies)
I’m 80% Irish and LOVE St. Patty’s Day–it’s so much fun!
Amy says
I remember in preschool on St. Patrick’s Day we ate a meal of entirely green food–including green eggs and ham!
Megan says
Love to eat Cottage pie on St Patricks Day and maybe some soda bread too!
GretchenP says

Alyssa says
I love St. Patty’s day, and my favorite thing to eat is all things green…and things that aren’t usually green! This year, I plan on consuming one (or seven) GREEN chocolate chip cookies! 🙂
PluvK says
I do the simple “wear something green” on St. Patty’s, but my hubby HAS to have his corned beef and cabbage!
Lindsey says
My most memorable St. Patrick’s Day was three years ago, I went out for St. Patrick’s day with friends. At one point my girl friends and I went together to go to the bathroom. A college kid walked by at the same time and he clearly had too many green beers because he tossed his cookies in my hair! While it was a sore subject for awhile I now look back and laugh, I’m sure he had a much worse night than me! Exactly one year later I started dating my current boyfriend, so while the karma was belated…it came around.
dee says
I like drinking GREEN BEER! …and then be disappointed by it not living up to the wow-factor that I imagined it to have…every year! It’s just too tempting not to order. I feel it necessary to partake in the festivities by holding a green drink.
Krysta says
Growing up my mom would put green food coloring in my milk on St. Paddy’s day!
Nicole P says
When I was growing up, my mom would put green food coloring in my food! She also always decked me out in a lot of St. Patricks day gear…from shamrock earrings to bright green frilly socks. 🙂
Kai says
Its a tradition for my family to have corned beef and cabbage on St Patrick’s Day. It’s always so good!

A few years ago I spent St. Patty’s Day in Dublin, Ireland! It was so fun to be in Ireland for St. Patty’s day and get a taste of true Irish culture.
Steph @ The Event Crashers says
I absolutely love Irish Soda Bread and make it every year in mini muffin form. Last year I traveled to Ireland and can admit that no soda bread comes close to that of the authentic green rolling hills across the pond! [I’d love to add that clover headband to my growing St. Patty’s wardrobe every year!]
Brianna @ BlessingsFlowDown says
I’ve never really celebrated St. Patrick’s Day, but a race would be fun! Those BIC bands are adorable!
Devon says
When I was younger, my best friend and I would dig tunnels for leprechauns in my sandbox…we figured they needed a place to camp out and prepare for St. Patrick’s Day!
Avery @ Southern Belle Living Well says
Oh how fun! I want to find a themed race to run soon, it looks so exciting! My favorite food, well I guess drink, to have on St. Pattie’s day was always Country Time Lemonade with green food coloring added in to make it green. My mom always really did up holidays when we were younger, so our St. P’s dinner would consist of dyed green mashed potatoes, green lemonade, green beans, etc. Such a festive holiday!
jenny says
My husband makes corned beef, potatoes, cabbage, and carrots every year for St.Patrick’s day. My tradition is to mix and mash all of the veggies together with some salt and pepper and dig in! I also plan of making some special green treats for my twins this year. Green milkshakes? Lucky charms. Green wraps. etc 🙂 Starting new tradition, and making memories.
Abby says
I have to have Irish soda bread from a bakery back home in New York-my mom always sends me some if I can’t make it home. This year she is personally delivering a loaf to Sydney, Australia! (I love my mom!) I love BIC band too-I got one after the last contest and I am in love-they really do stay in place!
Lauren says
Every year growing up my Grandma would always make corned beef & cabbage on St. Patrick’s Day. It is also my dad’s birthday & he happens to be Irish 🙂
Heather says
Every year without fail (well since I turned 21 of course!) I drink a Guinness. It’s the only day I drink it but something about a good Guinness just screams St. Patty’s day!
Kimberly @ The Simplicity of Being Curious says
Growing up half Filipino and half Irish, it was surprising that I had not tried Irish Soda Bread until I was in high school. While working at a local grocery store’s bakery, I made a ton of it and it is one of my favorite breads. Love the headbands and I hope I win 🙂
Gina says
St. Patrick’s Day happens to be my mom’s birthday so my favorite food to enjoy that date is–and always will be–my mom’s birthday cake. Green beer runs a close second, though. 🙂
Jaime @ raspberrierush says
Something I love about St.Patrick’s Day is the Irish soda bread! I just picked up a loaf and devoured half in two days!!
Ivy says
My favorite food to enjoy on St Paddy’s day is Corned beef & cabbage! Yum! last year on St Paddy’s day my husband & I planned on going out for the Irish meal. After a 10 mile run we were hungry and ready to eat, we drove to a place nearby and they said they ran out at noon! We were so disappointed! In HI I don’t think they take St Paddy’s day too serious. We have to go back to the mainland to get some Irish food.
Mary says
corn beef and cabbage is my favorite St. Patty’s day meal! yum 🙂 Go Irish!
Michele says
When I was in the 5th grade, my teacher came to school in a head-to-toe green spandex suit (the kind that covers your face) and wore it all day (he lose a bet with the guidance counselor). It was the funniest thing EVER!!!
Christine says
Irish soda bread can’t be beat.
Ella says
We actually don’t celebrate St.Patrick’s Day, but those green headbands look awesome! 🙂
Rachael says
Green is my favorite color so I love a holiday where everyone is wearing it! Also, I LOVE corned beef and cabbage. I am weird because I actually REALLY love cabbage (cooked, kraut, raw…). Weird, I know. 🙂
Kelly says
My favorite food on St.Patricks day would have to be spinach protein pancakes! I make pancakes for breakfast whenever I have the spare time (: the green color makes them that much more amusing to eat as a post workout meal.
Court Star @ StarSystemz says
St Patricks day is special to me as I am an Irish citizen as well as a US citizen so I always send my grandma something funny in the mail 🙂 this year I am unable to do my normal green beer drinking at a local pub due to just going through surgery but will be sure to participate when I am able! Enjoy your st pattys day 🙂 Love + Shine CourtStar

When I was younger my mom use to leave a trail of golden coins to a pot of goodies for my brother and I. I use to go to school so excited and telling everyone a leprechaun came to my house.
Arlene @ Adventures in Weight Loss says
Those headbands are adorable!
I don’t really have any St. Patrick’s Day traditions — odd because there’s at least a bit o’ the Irish in my family somewhere. I have been known to devour colcannon (buttery mashed potatoes and cabbage, though.
Tara | Treble in the Kitchen says
A favorite St. Patrick’s Day tradition for me is making everything green 🙂 Last year, I tried to make green pancakes, but I only had gel food coloring rather than the liquid and they did NOT turn out…oh well! We still had fun 🙂 Hope I win!! I love BIC Bands too! Especially the sparkly ones!

Green cookies!

I smiled seeing this post as I have been contemplating what to water this Sun. I am running my first marathon so I want to go easy on the accessories. I am also running for 65roses with Miles for Cystic Fibrosis so The shirt is blue wih their logo. The BIC band is an awesome way to be festive without worrying about something bothering me half way through. Thanks Julie!
Courtney says
My mom would always put tiny green footprints all over the kitchen, then dye the milk jug in the fridge green! It was always such a surprise!
Nikki says
Last year my friends and I went on a trolley bar crawl all around Chicago. It was the most fun I have ever had on St. Patrick’s Day! We threw massive amounts of beads out the window to people, everyone was dressed up in crazy outfits, and the weather was unseasonably warm which made the day/night even better! My favorite St. Patty’s Day food would have to be my mom’s corned beef and cabbage. She makes it every year for me. Love her!
Tess says
Corned beef and cabbage!!! My Dad is Irish and we had to have it EVERY St. Patrick’s day.It really isn’t my favorite but now as a Mom and wife I feel the need to carry on the tradition of culture and share it with my family. I’ve grown to love corned beef and cabbage;)
Bek @ Crave says
Love this! Unfortunately St Patty’s day isn’t really big here. Most people just go out and drink haha, I’ve never really dressed up, but if I win I’d make the effort to pick a green headband 😉 I really need some for classes! Ohh 10% off!
Taylor says
Every year my best friend and I run in a St. Patty’s Day 5K! She is actually the one who introduced me to BIC bands which she discovered during her marathon training. As for St. Patty’s day treats, Irish soda bread is always a winner in my book!!

Most St. Patty’s Days I’ve managed to do something fun involving green beer and debauchery! This year I’m running in the Charlottesville 10 Miler which I don’t think is SUPPOSED to be st. patrick’s day themed but you better believe we’ll be decked out!! I would DIE for a sharmrock bic band for the big day! 🙂
Kristen says
A tradition we have is to celebrate my son’s birthday!
