Lunch today snuck up on me!
Before I knew it, my stomach was grumbling and I needed food!
Fact: This meal looks horrendous.
But lots of shredded cheese has a way of making me overlook an unattractive dish!
I began by sautéing a chopped chicken sausage in a skillet while I steamed some cauliflower in the microwave. I then added leftover roasted Brussels sprouts to the skillet, followed by the mashed steamed cauliflower and a boatload of shredded cheese.
Easy, satisfying, ugly and delicious!

Ryan, my sister, my sister’s boyfriend and I will be running in a 10K on St. Patrick’s Day and ever since we signed up to participate, we’ve been sending each other costume ideas. You know we like to dress up for races together!

More St. Patrick’s Day gear that caught my eye…
I saw a bunch of women wearing fun sparkly skirts over their leggings or compression shorts at the Women’s Half Marathon a few years ago and thought they looked awesome! (Bachelor fans, I think we know Tierra would be all about this one. Sparkle.)
You guys know how obsessed I am with these headbands by now. When I saw the shamrock headband on their website, I just had to have it. A headband that doesn’t slip that’s also peppered with lots of little shamrocks!? Oh yes! (Get psyched because YOU have a chance to win a $40 BICBands gift card that you can use toward one at the end of this post!)
- Target $1 Bin Finds
Surely I’m not the only one out there who gets suckered into the Target $1 bins? I found a bunch of goodies in the $1 bins last weekend that I picked up for our upcoming race, including blinking bracelets, wigs, light-up rings and more. I was especially pumped about the neck ties!
Just in case your running shorts are a little too big.
I’m not gonna lie, these PRO Compression shamrock socks shamROCK my socks off. (Sorry, I just can’t help myself.) I saw Monica and SkinnyRunner blog about them last week and was so excited when they sent me a pair to try! (You can use the promo code MARCH for 40% off any of their marathon socks or calf sleeves right now!) I can’t wait to wear them during next Sunday’s 10K!
- More Fun Knee-High St. Patrick’s Day Socks
Target comes through in the clutch again with a bunch of knee-high St. Patrick’s Day socks for only $5!
I found this little gem in the Race Junkie’s Etsy shop and thought it was adorable!

St. Patrick’s day is one of my favorite holidays. My dad was 100% Irish and it ws definitely one of his favorite days as well. My favorite St. Patrick’s day memory was when I was a senior in high school. I had the day off and was planning on going to the parade in Cleveland, OH with some friends. On the way to the parade my friends and I stopped at a bakery near my dad’s school (he was a teacher) and surprised him with a visit and some shamrock shaped cookies. He was so surprised. Every year on St. Patrick’s day I dress in grean, have irish soda bread, a shamrock shake and a corned beef sandwich 🙂

St. Patrick’s Day has ALWAYS been my favorite holiday!! With my birthday being on March 7, just 10 days prior, I think the holiday has been my favorite since the start!! I make sure everyone wears their green and love making lots of St. Patty’s treats for family/friends. It’s now a tradition to always get something St. Patty’s themed for my birthday – this year was party napkins!! 🙂 I’d love to win some bic bands and would of course choose the one with shamrocks! After a few running injuries and taking some time off, I’m looking forward to running my first color run in May and would love to sport a bic band!!! Hopefully I have the LUCK OF THE IRISH to win!! 🙂

I don’t usually do much for st paddy’s. My favorite was a low-key celebration at a friend’s a few years ago.
Kate says
My dad always makes corned beef and cabbage for St. Patty’s Day. I absolutely love the stuff but never make it at home because it sure does smell up the kitchen.
Jem says
Every year my family would make corned beef and cabbage from scratch and we would enjoy it on St. Patrick’s Day. I also remember if I was not wearing a “correct” shade of green, say teal for instance my dad and brothers would chase me around and pinch me! We are not Irish but my mom would always decorate the house with shamrocks, leprechauns and pots of gold, I really miss that!
Carrie L says
I really miss my mom’s corned beef and cabbage! Nothing better on St Patty’s Day!
Caren says
Lucky you that there are St. Pattys day races in Ocala! I just moved to the prairies so I don’t think I’ll be able to find a race on this area this year. However that means I can make my delicious Irish soda bread and vegan (green) cupcakes!:)

Tradition – Every St. Patrick’s Day weekend our town has something called a Pub Crawl where all the bars downtown participate. You buy a plastic cup for $5 and you get refills of beer for $1. My friend and I enjoys this event.
Kristine says
When I was a child, my dad participated in the St. Patrick’s Day race in St. Louis each year. The runners started downtown and finished by running into the old Busch Stadium. It was great to get all dressed up and cheer on my dad each year. Now, it’s pretty cool because I’m in the runner’s seat and my parents come to cheer me on. And…..there’s lots of food!
Emily says
A favorite St. Patrick’s Day memory was running a nearby Shamrock Shuffle with my sister and her company. Even though I didn’t work for her company, they took me in and were very supportive of my effort to run the race. (My sister and I were also training for a half marathon that year, and talking running with her boss, who was also training for a half, was very encouraging.)
Emily says
Green milk for the kids, green beer for the parents!

For the last 5 years, we’ve attended a St. Patty’s day party at a friends home. Homemade kilts, bonfires, full costumes, Guinness cupcakes, etc! Hard to pick a favorite when this is an annual event of Irish festivities! Look forward to it every year! 🙂
Margaret says
Don’t know if this is totally appropriate to put online… but I’d say my family’s favorite St Partick’s Day memory was when… I was conceived (on green beer!) like a true Irish baby!
Alicia says

Mmmm corned beef and cabbage!! I’d never had either until visiting my best friend’s family in CA a few years back when they made this for us around St. Patty’s day. I’ll admit I thought it was an odd dish to serve company their first night, but it was delicious and I’ve loved it since!
