Lunch today snuck up on me!
Before I knew it, my stomach was grumbling and I needed food!
Fact: This meal looks horrendous.
But lots of shredded cheese has a way of making me overlook an unattractive dish!
I began by sautéing a chopped chicken sausage in a skillet while I steamed some cauliflower in the microwave. I then added leftover roasted Brussels sprouts to the skillet, followed by the mashed steamed cauliflower and a boatload of shredded cheese.
Easy, satisfying, ugly and delicious!

St. Patrick’s Day Running Gear
Are any of you out there planning to run in a St. Patrick’s Day race?
Ryan, my sister, my sister’s boyfriend and I will be running in a 10K on St. Patrick’s Day and ever since we signed up to participate, we’ve been sending each other costume ideas. You know we like to dress up for races together!

More St. Patrick’s Day gear that caught my eye…
I saw a bunch of women wearing fun sparkly skirts over their leggings or compression shorts at the Women’s Half Marathon a few years ago and thought they looked awesome! (Bachelor fans, I think we know Tierra would be all about this one. Sparkle.)
You guys know how obsessed I am with these headbands by now. When I saw the shamrock headband on their website, I just had to have it. A headband that doesn’t slip that’s also peppered with lots of little shamrocks!? Oh yes! (Get psyched because YOU have a chance to win a $40 BICBands gift card that you can use toward one at the end of this post!)
- Target $1 Bin Finds
Surely I’m not the only one out there who gets suckered into the Target $1 bins? I found a bunch of goodies in the $1 bins last weekend that I picked up for our upcoming race, including blinking bracelets, wigs, light-up rings and more. I was especially pumped about the neck ties!
Just in case your running shorts are a little too big.
I’m not gonna lie, these PRO Compression shamrock socks shamROCK my socks off. (Sorry, I just can’t help myself.) I saw Monica and SkinnyRunner blog about them last week and was so excited when they sent me a pair to try! (You can use the promo code MARCH for 40% off any of their marathon socks or calf sleeves right now!) I can’t wait to wear them during next Sunday’s 10K!
- More Fun Knee-High St. Patrick’s Day Socks
Target comes through in the clutch again with a bunch of knee-high St. Patrick’s Day socks for only $5!
I found this little gem in the Race Junkie’s Etsy shop and thought it was adorable!

I’m running the NYC Half-Marathon on St. Patrick’s Day! And I’m obsessed with BIC Bands — I bought three last month, and I still want more!

My favorite memory of St. Patrick’s Day is from grade school. The teacher had a rubber stamp of “leprechaun feet” that she put all over the desks and chairs to make it look like we had a “visitor” overnight. She’d then have the chocolate gold coins hidden somewhere for us to find.
Kara says
Hopefully this St. Patrick’s day will stick with me as one of the greatest memories yet..I’m going to Savannah with 8 of my closest sorority sisters and cannot wait for the craziness to begin!
Erinn S says
Corned beef and cabbage (in the form of sourkraut)!!! Mmm, mmm, mmmm!
P.S. I love bic bands…they are the only headband that stays on my abnomally large head!
Michele says
My friends and I always chewed green gum in middle school so we were safe from wannabe pinchers, even in PE when we couldn’t wear our own green clothing!
Megan says
My favorite st pattys day food is anything mint and chocolate! NOM NOM!
April V. says
My grandmother’s favorite holiday was St Patty’s, and she would always have a Bailey’s over ice or with coffee and would let me have a tiny sip!

St. Patrick’s Day has always been a tradition my father and I celebrate together. Regardless of how busy I am or the fact I lived 4 hours away in college, both my dad and I cancel work and our plans for the day and head to downtown Cleveland to watch the parade. Even though I am older now, it might seem “weird” that I hang out with my dad instead of participating in green beer day like most of my college friends do. But, it is something my dad and I have done together since I was eight years old and I cannot pass up these memories! I still recall the first time he picked me up from middle school and we played hookie the whole day and ate wayyyyyyyy to many hotdogs! Anyways, I would LOVE to rock those headbands this year while spending time with my dad. It would make the day even more perfect! Thanks Julie!

In college I went out with bunch of my sorority sisters and we ended getting brought back to campus in the drunk van. The local police department was giving free rides home and that was the only vehicle big enough for our group!
LeAnng says
My son used to spend DAYS making a leprechaun trap. He’d use false bottoms, mirrors and sticky surfaces in an effort to capture the leprechaun. Unfortunately he outgrew that early but it was fun while it lasted.
Lea Ann says
My little brother was born on St. Patrick’s Day my favorite memories from that day always include him.
Dana says
I’m totally guilty of loving the McDonald’s Shamrock Shake. It’s a great excuse to have a milkshake right?
Sarah says
This will be the 3rd year that my friends and I have walked the 5 mile run in St. Louis. Good times!
Millie Jones says
There is a local shamrock 5k in my community that I have done the past several years… I will be out of town this year camping over the St. Pattys day weekend so I will miss out. I am very sad 🙁
Lisa says
I like to enjoy a good corned beef reuben along with a beer…bonus if it’s green!
Christina says
I always start the day with an attempt at green pancakes….they rarely turn out just right. I always try to end the day with a green beer and an Irish Car Bomb. The list was longer in years past, but when I realized the car bomb took care of the Jameson shot and the Guinness all in one drink, I backed off on the others in favor of the more delicious combo.
Allison K says
Some of my favorite St. Patrick’s Day memories is from childhood when my mom would make home made bread and dye it green for lunches at school that day!
Jessica Demasi says
My mom always used to make these amazing green mint and chocolate cookies shaped like shamrocks for st patty’s day. They’re my favorite!

I’m pretty boring on St. Patrick’s Day. I usually do the same thing every year. Party with friends and LOTS of green beer! 🙂
Cortni says
My favorite memory has to be, while studying abroad is Australia, skipping all of our classes to go to the Irish pub by noon. I guess that makes my favorite St. Patty’s day tradition the green beer, drinking nasty beer is so much better when there is green food coloring dropped in!
Mrs. Yancey says
My husband’s birthday is St. Patrick’s Day so we go all out with the green! It’s so fun!
Lara says
My favorite tradition growing up was dressing for school every St. Patrick’s Day in green and my old school mom would give me a hard time because we are Italian. I would explain every year that everyone is Irish on St. Patty’s Day! We laugh about it to this day.
Abby says
My favorite St. Patrick’s day memory has to be from when I was in Elementary school. One of my teachers had the class make leprechaun homes as a take home project. The leprechaun homes were lavishly constructed with various hues of green and on St. Patrick’s day the leprechauns left the thinnest gold foot prints in the houses along with wonderful chocolate gold coins. I enjoyed the creativity of my teacher and that memory still makes me smile.
Becca says
I’m running a 5 mile St. Patrick’s Day race!
Brittany says
One of my favorite St. Patricks day memories was my sophomore year in college. Me and a bunch of my friends had a party and of course everyone wore green and had silly St. Pattys day accessories, like weird shamrock headbands. We had a blast. Sometimes its the simple things in life 🙂
Paige Cunningham says
Holy cripes that green running tutu from Etsy is adorable. Unfortunately, I have to work all day St. Patty’s day, but I’m pretty sure I should buy it to rock while I waitress!

Breaking out the green clothing in general! It doesn’t happen too often but it just has to come out for St. Patty’s Day!
Theodora says
My favorite food on St. Patrick’s Day is Guinness!
Amy J says
St. Patrick’s day is also my grandpa’s birthday, although this will be the first year he won’t be with us to celebrate. My family and I will likely celebrate his memory by making all of his favorite dishes and telling stories!
Kristen says
I want those BIC Bands!!
My mom always makes Irish Soda Bread for my super-Irish dad, but this year I’m healthifying it and making a bulgur/whole-wheat version I saw on the New York Times Recipes for health.
Michelle says
My favorite St. Patrick’s Day memory is from college when it was the first year I was “legal” and could go to our college bar. They had green beer and I stole a friend’s sparkly green hat for the evening. I’ve been looking for a sparkly hat like that since that day and they never seem to look the same.
Samantha says
Easily my best St. Pattys day memory was sophomore year of high school when my marching band was invited to march in the St. Patrick’s Day Parade in Dublin! True we weren’t allowed out on the town afterwards, but just being in Dublin on St. Patrick’s day was amazing and I want to go back and experience it all again!
Kelly Paquet says
So, I know you are supposed to eat corned beef and cabbage, but I don’t really like the corned beef so I usually have it another way, but always cabbage!!!!
Bailey Borman says
I’m walking a 4k this year with friends. It’s sad that I’m injured so I can’t run but we made matching shirts and I think it’s going to be a super fun. I love races where you dress up!
Erica D says
There are no races in my area on St.pattys day but I will be running a 10-mile long run on my marathon training plan & there will probably be a green smoothie or shake after.
Danielle says
1. I love the Tierra reference. Between her “not being able to control her eyebrows” and her “sparkle” it was just too much!
2. I love this giveaway! My favorite St. Patrick’s Day memory was definitely two years ago, when my birthday fell on the same day as the St. Patrick’s Day parade in my town! We have a big festival, some day drinking was involved, and lots of music/food and good times out and about with ALL my favorite friends 🙂 I was such a happy birthday/St Patty’s Day camper!
3. I hope you keep your tissues nearby for “A Fault in Our Stars…” GREAT read!!
