Lunch today snuck up on me!
Before I knew it, my stomach was grumbling and I needed food!
Fact: This meal looks horrendous.
But lots of shredded cheese has a way of making me overlook an unattractive dish!
I began by sautéing a chopped chicken sausage in a skillet while I steamed some cauliflower in the microwave. I then added leftover roasted Brussels sprouts to the skillet, followed by the mashed steamed cauliflower and a boatload of shredded cheese.
Easy, satisfying, ugly and delicious!

More St. Patrick’s Day gear that caught my eye…
I saw a bunch of women wearing fun sparkly skirts over their leggings or compression shorts at the Women’s Half Marathon a few years ago and thought they looked awesome! (Bachelor fans, I think we know Tierra would be all about this one. Sparkle.)

A St. Patrick’s Day tradition of mine is to run our local 5k roadrace called Mary’s Walk. All proceeds go to the Maine Cancer Research Foundation, and I always feel extra happy running having both supported a fantastic cause and got my sweat on!

Favorite Memory: When I was in 1st grade at an elementary school in NC we had an assignment to make homemade leprechaun traps out of shoe boxes and such. While we went to lunch, parents came in and set-off some of the traps, scribbled all over the chalkboard, knocked furniture over and basically just made a big mess. I remember coming back from lunch and all of us kids were freaking out because leprechauns had been there! It was a really fun day I’ve never forgotten 🙂

I spent St. Patrick’s Day in Chicago 2 years ago with my best friend from college. Being able to run along the river once it had been colored green was spectacular. Plus, being with my best friend was awesome, too.

Every year, our grade school would host a St. Patrick’s Day parade in our small town. All the students and teachers would get gussied up from head-to-toe in green and shamrocks and go out and walk the streets waiving to spectators. I remember always looking for my mom in the crowd and when we spotted each other, we would always blow kisses 🙂

One of my favorite memories is from elementary school. You know how schools always go all out for holidays well mine was no exception! Parents would come in everyone would do crafts. One year I believe 4th grade my grandmother came! I didn’t even know she was coming into town and she was at my school to surprise me and my brothers, her trip just happened to coincide with St. Patricks day but it was awesome! We made green colored ice cream, cut out shammrocks, and played games. It was so fun! I think that was the year I also learned how to correctly spell leprechaun quite a tricky word for a kid!

My favorite memory is actually from last year when I spent St. Patty’s day in San Francisco with one of my best friends (who had recently moved here from Ireland). We were at a bar called the Irish Bank and she got called up on stage to sing “Back Home in Derry” since she’s from County Derry. It was definitely memorable!

My favorite St. Patty’s day memory, is going to Chicago to visit my grandma, and she would wake me up early to go dye my uncles hair green, and we’d tell him the leprechauns dyed his hair, she has Alzheimers now, and her doesnt know what any holiday is.

Actually, I have never really celebrated St Patrick’s Day…maybe this year should be the time to start. I think I’ll use some of these posts for ideas and allow my sons to have a memorable day.

I am originally from Boston and always felt left out because EVERYONE in boston seems to be some part irish and I’m not in the slightest. So my friends bought me a “Kiss me I’m NOT Irish” tshirt to wear 🙂 Now I get to wear that shirt every year for the holiday 🙂

Each year in the small college town outside my hometown, a Fake Patty’s Day party is thrown the weekend before St. Patrick’s Day. It’s an all day event where everyone celebrates the upcoming holiday. Three years ago on that day, my now three year boyfriend professed his love to me on that night at the party! I will always hold this holiday dear in my heart!! 🙂

When we were in elementary school, we would each take off one of our shoes and line them up outside and a few hours later come back and they would be filled with candy. I think the idea was that the “leprechauns” filled them up. It was so fun when we were kids!

My favorite St. Patty’s day memory happened just last year. For my mom’s 60th birthday party, I organized a surprise party with a bunch of her friends and co-workers. As an added bonus, I flew my dad in (he lives out of state for work, though they’re still married) and surprised her with a dinner the night before the party. It is a wonderful memory!

A family tradition on Saint Patrick’s day is to have everyone come over to my mom’s for some homemade corned beef and cabbage and dad’s green beer. We always have a blast, eat a ton of good food, and enjoy a few cold ones until our mouths are green!

My favorite St. Patrick’s Day memory was from grade school. We came back from lunch to a ransacked room due to leprechauns and the whole class went on a hunt following clues to find the culprit. It was such a fun time and so creative on our teachers’ part. 🙂

Hmmm…I don’t do too much celebrating on this holiday. Lucky if I remember to wear green. I guess that’s about the only tradition I observe for it. Maybe this year I’ll make a special meal around it to get into the spirit of things.

My family is very proud of our Irish heritage and I enjoy going to the St. Patrick’s Day parade in Binghamton, NY every year with members of my family. My sister and I took our toddlers for the first year last weekend and look forward to taking them every year! Love me some bagpipers!

For St Patrick’s day we only ever eat green foods! Green milk, green vegetables, green cake, my family has started to get very creative.
Just a funny, gross thing to share, I hear lots of people talk about having Lucky Charmes for breakfast with Irish beer instead of milk! It sounds absolutely repulsive to me and I won’t dare to try it, but it’s just crazy what people think of!
