Lunch today snuck up on me!
Before I knew it, my stomach was grumbling and I needed food!
Fact: This meal looks horrendous.
But lots of shredded cheese has a way of making me overlook an unattractive dish!
I began by sautéing a chopped chicken sausage in a skillet while I steamed some cauliflower in the microwave. I then added leftover roasted Brussels sprouts to the skillet, followed by the mashed steamed cauliflower and a boatload of shredded cheese.
Easy, satisfying, ugly and delicious!

More St. Patrick’s Day gear that caught my eye…
I saw a bunch of women wearing fun sparkly skirts over their leggings or compression shorts at the Women’s Half Marathon a few years ago and thought they looked awesome! (Bachelor fans, I think we know Tierra would be all about this one. Sparkle.)
You guys know how obsessed I am with these headbands by now. When I saw the shamrock headband on their website, I just had to have it. A headband that doesn’t slip that’s also peppered with lots of little shamrocks!? Oh yes! I really don’t have any St. Patrick’s Day traditions – it’s just never been a holiday I’ve thought about very much. This year my friends and I want to plan something to do, though, so I’m excited about that. Cleveland always has a big parade but I’ve never been. I do remember when I was in elementary school that leprechauns would come during the night and mess up our desks 🙂 I also really love this weird old movie about leprechauns called Darby O’Gill and the Little People. One of my favorite memories of St. Patty’s Day was when we were in Kindergarten and we went to our classroom in the morning and the “leprechauns” had completely turned our classroom upside down, chairs were on top of the desks or knocked completely over. There were gold chocolate coins everywhere on the floor and we were sent on a “mission” around the school to go and find the pot of gold so that we could see a real “leprechaun.” I remember having so much fun trying to really find that pot of gold but apparently we were not fast enough and the leprechaun had escaped before we saw him. My friends and I were so determined to find a real leprechaun we went home and dug up almost my entire front yard because we had heard that they lived underground. We were so convinced that if we were just a little bit faster that we would actually find one! We got in a quite a bit of trouble that day for destroying the yard with our toy shovels looking for the leprechaun like the one on the front of the Lucky Charms box.

When I lived in Portland, the official race season always started with the Shamrock Run – a 5K, 8K and 15K road race. It’s my favorite and I’ve done it the past 2 years in a row… now that I’ve moved away (and really, since your post just reminded me), it’s time to find a new local St. Patrick’s Day inspired race!! 🙂

My uncle passed away on St. Patrick’s day a few years ago so we started the tradition of going to the beach as a family. He loved the beach so it is nice to get away as a family and remember him. 🙂

My favorite memory was two years ago for St. Patty’s day, we had everyone over and made Corned beef and cabbage, colcannon, guiness cupcakes, and of course green beer and hard shamrock shakes 🙂 worst memory of that night: being the guinea pig when they tried to make Irish Car Bombs. {They mixed it wrong and it curdled right before I drank it… blegh}

Last year was a lot of fun because it ended up being a girl’s weekend. It was probably that much better also because the weather was so amazing that we could be outside all weekend celebrating and playing cornhole!

I used to go to the St. Patricks day parade in New Orleans when I lived there with my family. It was so much fun! Almost as much fun as mardi gras!

I lived in Savannah from when I was 4 – 7 years old, and my parents would take me to the parade because everyone dresses up, and they dye the river green. People even dye their dogs green, which I think is maybe taking it too far. Anyway, I have heard that St. Patrick’s Day in Savannah is also pretty fun as an adult, so now that I’m 30, I’d like to go back!

I am running the “Get Lucky Half Marathon” in the Twin Cities next weekend. I ran this race last year, and it was a HOT day (~70 F) for March, and it was a bit painful as I was acclimated to 40 F running weather. This year, I don’t think the same temperature problem will exist.

My favorite St. Patrick’s Day memory was March 17th, 2011 when my husband asked me to marry him. We lived in NE Ohio then and it was an uncharacteristically warm day, so we hiked around Brandywine Falls before he nervously got down on one knee and popped the “lucky” question.
This was (2) weeks before I was relocating to Maryland and we would be separated (except for occasional quick weekend trips back home for wedding prep) until we were married 5 months later in August. Everything went off without a hitch! Talk about “Luck O’ the Irish”. 😉

My favorite St. Patty’s memory is by far being in Chicago celebrating with one of my favorite cousins. We didn’t do anything too extreme, but the long walks and catching up with each other was absolutely incredible. There’s nothing quite like being with family while being surrounded by some of the craziest St. Patty’s celebrators ever!

A memory I have from st. patty’s day was from my Freshman year in college. It was during our spring break and since I was going to school out of state I was unable to come home for it. To my surprise, my mom sent me a package with all st. patrick day themed items, including shamrock shaped lights! 🙂

When I was a kid, we used to wake up to two little green footprints on the toilet seat and the toilet bowl filled with green liquid where the leprechaun had left us evidence of his visit to our house. Then we would run downstairs to find more clues and our pot of gold (baskets of candy). I can’t wait to do this with my own kids!

Last year’s St. Patrick’s Day was the best. I was getting a second Masters at Trinity in Dublin. A true Irish St. Patrick’s Day! Had drinks with friends, saw the insane parade, and had to jostle through more tourists than I’ve ever seen in NYC. Hands down the best!
